CLASSIC SPICY MEATLOAF
This is my family's favorite meatloaf recipe. Onion may be substituted for green onions (scallions).

- Preheat oven to 350 degrees F (175 degrees C).
- Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. Cover skillet with a lid and cook, stirring occasionally, until carrot is tender, about 5 more minutes. Stir 1/3 cup ketchup, Worcestershire sauce, salt, and pepper into vegetable mixture; cook until warmed through, about 1 minute.
- Mix ground beef, sausage, vegetable mixture, bread crumbs, parsley, and eggs in a large bowl; form into a loaf and place in a rectangular baking pan with 2-inch high sides. Cover loaf with remaining 1/3 cup ketchup.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

SWEET AND SPICY MEATLOAF
Steps:
- Heat the olive oil in a large skillet over medium-high heat. Saute the green peppers, red peppers and onions until very soft and browned, 10 to 12 minutes. Transfer to a plate or baking sheet and refrigerate until cold. (This can be done a day ahead.)
- Preheat the oven to 350 degrees F.
- Mix the breadcrumbs, milk and roasted garlic in a bowl; it should have an oatmeal-like consistency. Set aside.
- In another bowl, mix the ketchup, steak sauce, sriracha, maple syrup and steak seasoning. If the sauce is too spicy for you, add a little more ketchup to mellow the heat. Set aside.
- In a bowl, combine the ground beef, sausage, parsley, eggs, pepper-onion mixture and two-thirds of the meatloaf sauce. Mix well, but don't overwork. Take a small ball of the mixture and make a bite-size patty. Saute the patty in a pan until cooked through, then taste. Add salt and pepper to the meatloaf mix as needed.
- When you are happy with the flavor, place the meatloaf mixture in a greased loaf pan, or form it into a log and place it on a parchment-lined baking sheet. Bake until the internal temperature reaches 155 degrees F, 1 to 1 1/2 hours. Remove from the oven; adjust the oven to a low broil. Brush the top of the loaf with half of the remaining sauce, then return to the oven to caramelize the sauce, 2 to 3 minutes. Let rest for 20 minutes before slicing. Serve with mashed potatoes and a drizzle of the remaining sauce.
SMOKED MEATLOAF
Meatloaf is good, smoked meatloaf is better. If you've never had smoked meatloaf, this ultimate comfort food should be at the top of your must cook list.

- Place the ground beef in a large bowl, along with two cloves of minced garlic, the bbq rub, Worcestershire, breadcrumbs and egg. Mix the half and half with the lemon juice, and then pour that in, followed by the 8 ounces of shredded cheese.
- Keep the cheese grater out, and after removing the outer layers of the onion, grate the onion into the mixture too. Sure you can just dice the onion, but grating it adds moisture and eliminates the need to cook the onion prior.
- With your hands, gently work the ingredients together until everything is combined. It's gonna be messy and you're going to feel like the mixture is too wet. It's not.
- Dump the mixture out onto a large sheet of parchment paper, and then form a loaf with your hands. Use the parchment paper to help. Once the loaf is made, carefully roll the loaf onto a grill rack that is set on top of a cookie sheet lined with foil. Place in the refrigerator to chill.
- After the meatloaf has chilled for 30 minutes turn your smoker on and get it ready to cook at 225 degrees.
- Remove the meatloaf from the refrigerator and sprinkle the outside with more of your favorite bbq rub. I used Blackened Saskatchewan for the inside, and Beef Rub for the outside.
- When the smoker gets up to temp place the meatloaf inside. Let it smoke for 4-5 hours. The meatloaf is done when the internal temp hits 160 degrees
- About 15 minutes before the meatloaf is ready, brush on some bbq sauce to the exterior of the loaf. This will add to the flavor profile of the loaf, and bring home a winning end result.
SMOKED MEATLOAF
Steps:
- Preheat smoker to 225°F.
- Mix all ingredients together in a large bowl. I do this by hand with food safe gloves because it's easier but you can mix with a large spoon or rubber scraper.
- Shape into loaf and place on a parchment lined cookie sheet.
- Place in smoker. Insert oven safe probe thermometer into middle of meatloaf, if desired. You can also just take the temp by hand. Smoke for 1 hour at 225°F.
- How to make Meatloaf Glaze
- Combine all three ingredients into a small sauce pan. Slowly warm up your ingredients on medium low heat, stirring often. Make sure the brown sugar dissolves completely. Once it is liquefied and warmed through it is finished and ready for glazing.
- Brush on glaze and increase temperature of smoker to 375°F.
- Cook until an internal temperature of 155°, remove and let rest for 10 minutes. Temperature will continue to 160° during this resting time. Slice and enjoy!

- Preheat smoker to 225 degrees F (110 degrees C) according to manufacturer's instructions. Grease a loaf pan with cooking spray.
- Combine ground beef, diced tomatoes, eggs, onion, panko bread crumbs, seasoned salt, 2 teaspoons pepper, hot banana peppers, pink salt, onion salt, garlic salt, paprika, and liquid smoke flavoring in a large bowl. Mix well with your hands. Pack it into the prepared loaf pan, doming the top.
- Smoke meatloaf for 2 hours, adding wood chips to the drip tray according to manufacturer's instructions.
- Whisk ketchup, chile sauce, sugar, 1 tablespoon pepper, hot sauce, Worcestershire sauce, salt, red chile pepper, and red pepper flakes together to make sauce.
- Drain excess grease from meatloaf; spread sauce on top. Return to smoker for 30 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Preheat your smoker to 225 degrees F, using a blend of hickory and apple wood chips.
- In a large mixing bowl add the beef, bread crumbs, onion, garlic, eggs, Worcestershire, whiskey, steak seasoning, and milk.
- Using your hands, mix all of the ingredients just until evenly combined.
- In the bottom of a small, shallow metal pan- spread out half of the meat mixture. Use your fingers to create a shallow well in the center. Add the pepper jack cheese to the well, leaving about an inch of meat on all sides.
- Top with the remaining meatloaf mixture. Gently squish everything together to form a loaf, and use your fingers to securely seal up any holes so that the cheese doesn't leak out during cooking.
- Stir together the sauce ingredients. Spoon the sauce evenly out over the meatloaf. Letting it drip down the sides a bit is a plus.
- Transfer the meatloaf to the smoker, close and seal it and smoke for 4 hours- or until the internal temp reads 165 degrees F.
- Remove the meatloaf from the smoker. Let it rest for five minutes. Slice and serve with your desired sides.

- Line a rimmed baking sheet with foil. Spray a wire cooling rack with cooking spray and set on top of the baking sheet. Ingredients. As Needed cooking spray.
- In a large frying pan, sauté the onion, celery, bell pepper, green onion, garlic and jalapeños in the oil until the vegetables soften, about 5 minutes.
