EASY EGG WHITE OMELET
This is my go-to breakfast every morning. Fast, easy, foolproof, customizable, and packed with protein, all for fewer calories than your average fast-food breakfast sandwich.

Steps:
- Spray a 9x5-inch glass or microwave-safe loaf pan with cooking spray; sprinkle the onion, green bell pepper, and mushrooms into the pan, and toss lightly with a fork just to mix. Season with salt and black pepper, and pour in the egg whites.
- Cook in a microwave oven on High setting for 3 minutes. Remove and stir the cooked egg white from the side of the pan into the rest of the ingredients; cook for 3 more minutes on High. If the omelet is still a little runny on top, slice it into chunks and turn them over in the loaf pan; microwave for 30 more seconds on High. Adjust salt and pepper, and serve.

GOLDEN EGG WHITE OMELETS WITH SPINACH AND CHEESE

- Make pepper purée:
- Preheat broiler.
- Broil bell peppers on a broiler pan about 5 inches from heat, turning occasionally with tongs, until skins are blackened, about 15 minutes. Transfer to a bowl and let stand, covered, until cool enough to handle, about 20 minutes. Peel peppers, discarding stems and seeds, and coarsely chop, then purée in a blender with 2 tablespoons water, scraping down sides of blender, until smooth.
- Prepare spinach:
- Cook onion in 1 teaspoon oil in a 12-inch nonstick skillet over moderate heat, stirring frequently, until golden, about 5 minutes. Stir in spinach, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and remaining 1/4 cup water and cook, stirring, until spinach is wilted, about 3 minutes. Transfer to a colander set over a bowl and drain off excess liquid, gently pressing on spinach.
- Make omelets:
- Whisk together pepper purée and flour in a large bowl, then whisk in egg whites and remaining teaspoon salt and 1/4 teaspoon pepper until combined.
- Heat 1/2 teaspoon oil in an 8-inch nonstick skillet over moderate heat until hot but not smoking. Pour 1/2 cup egg mixture into skillet and cook, lifting up cooked egg around edge occasionally to let raw egg flow underneath, until omelet is set but top is still slightly moist, about 2 minutes. Spoon one fourth of spinach over half of omelet and sprinkle with 1 tablespoon cheese. Fold remaining half of omelet over filling using a heatproof plastic spatula and transfer to a plate. Keep warm, covered with foil.
- Make 3 more omelets with remaining egg mixture, oil, spinach, and cheese in same manner.

Steps:
- Heat oven to 400°F.
- Line 15x10x1-inch pan with parchment, with ends of parchment extending over shortest sides of pan; spray with cooking spray.
- Beat eggs in large bowl with whisk until blended. Stir in shredded cheese, ham and spinach.
- Pour into prepared pan.
- Bake 15 to 18 min. or just until center is set; cool slightly.
- Spread omelet with cream cheese spread. Starting at one short end of omelet, roll up omelet, peeling off paper as omelet is rolled.
- Place omelet on platter; cut into slices to serve.

- Beat cream cheese spread and eggs in medium bowl with whisk until blended. Gradually stir in milk; pour over ham mixture in pan.
- Bake 45 min. or until center is set and top is lightly browned.

SPINACH EGG WHITE OMELET
After looking up online for many recipes and going through their ingredients I came up with this recipe. Sadly I can't remember which recipe inspired me more. But there are lots of recipes that are so similar to this. Hope you enjoy my healthy take on it.

Steps:
- Spray a skillet with some olive oil, add the spinach and chives and stir on medium heat for 2 minutes.
- Add the cheese, mix well and stir for 2 minutes. Then remove from skillet and set aside.
- Whisk the egg white with milk, pepper, salt and parsley flakes.
- Cook the omelet with a skillet and just when its about done spread the spinach, chives and cheese mix on half of it.
- Put the chapped tomato on top of that half and fold the omelet in half then let it sit for a minute.
- Slide omelet from skillet onto a plate and you may garnish with some fresh parsley then serve it.

- Place the egg yolks in a bowl with the milk and combine. In a separate bowl, whisk the egg whites to medium soft peaks. Gently fold into the egg yolk mixture. Set aside (do not allow to sit for too long).
- Spray a small non-stick frying pan with oil spray and place over medium heat. Add the baby spinach and cook for 1-2 minutes or until wilted. Remove from pan and wipe pan clean. Spray pan again and return to the heat.
- Pour in the egg mixture and cook for 2-3 minutes or until surface is nearly firm. Place the ham, spinach and cheese over half the omelette, then fold over the other side to enclose the filling. Serve immediately. Repeat ingredients and method for additional omelettes.

SPICY SPINACH AND HAM EGG WHITE OMELET

- Whisk 1/2 cup plus 1 tablespoon egg whites together in a bowl until frothy.
- Heat an omelet pan over high heat; spray with cooking spray. Pour in egg whites and swirl pan until eggs run to the edge. Reduce heat to medium-high; cook until edges are mostly solid, about 2 minutes. Tease edges from pan using a spatula. Let liquid egg whites run under the cooked edges. Use the spatula to keep the omelet sliding freely around the pan.
- Place ham and spinach onto the omelet and sprinkle Monterey Jack cheese on top. Sprinkle red pepper flakes, tarragon, oregano, and sage over the cheese. Cook until egg whites are set on the surface and the omelet slides freely in the pan, about 3 minutes more.
- Tilt the pan over a plate and fold the omelet in half as it slides onto the plate.
