2 large sweet potatoes, peeled, diced
1/2 white potato, peeled, diced
6 tablespoons pure maple syrup
1 teaspoon cayenne powder
1 tablespoon pure chile powder
2 teaspoons salt
1/2 cup sweet butter, 1 stick, room temperature

Steps:

  • In a saucepan, bring the potatoes to a boil, reduce heat and simmer for 15 minutes, until soft.
  • Drain and transfer the potatoes to a food processor.
  • Add maple syrup, cayenne, chili powder, and salt. Process for 1 minute while adding the butter 1 tablespoons at a time.
  • Warm in a pan and serve.

2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
3 tablespoons honey
2 1/2 pounds sweet potatoes, cut into 1-inch chunks (about 6 cups)
1/4 cup Thai sweet chili sauce
1 teaspoon crushed red pepper flakes
2 dashes hot sauce
1/4 cup toasted pecans, chopped
3 scallions, chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the olive oil in a large mixing bowl. Add the salt, pepper, cinnamon, ginger and 1 tablespoon of the honey and whisk to combine. Add the potatoes and toss to coat. Spread the potatoes on a baking sheet. Roast, stirring halfway though, until the potatoes are tender and the edges are crisp, 45 minutes to 1 hour.
  • Meanwhile, make the glaze: Put the chili sauce, red pepper flakes, hot sauce and remaining 2 tablespoons honey in a small saucepot. Set the pot over medium-high heat and cook, stirring, until the ingredients come together, about 2 minutes.
  • Pour the warm glaze over the potatoes on the baking sheet and toss to coat. Pour the glazed potatoes into a serving dish and sprinkle with the pecans and scallions. Serve warm.

2 lbs sweet potatoes
salt
6 tablespoons butter
pepper
1/2 teaspoon ginger
1 teaspoon cinnamon
1/4 teaspoon cayenne (optional)
1 -2 tablespoon brown sugar (optional)
2 tablespoons raisins, soaked in water for 15 min

Steps:

  • peel the sweet potatoes and cut them into pieces.
  • Boil in salted for about 15-20 minutes, until soft.
  • Drain and mash with a fork.
  • Add butter, salt and pepper, ginger and cinnamon, (and cayenne and/or brown sugar if desired) and beat well.
  • Add the drained raisins.

2 large sweet potatoes, peeled and cubed
3 tablespoons olive oil
2 teaspoons packed brown sugar
1 ½ tablespoons paprika
½ teaspoon ground black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon poultry seasoning
½ teaspoon chili powder
1 pinch cayenne pepper

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the sweet potato chunks into a large mixing bowl. Drizzle with the olive oil, then sprinkle the brown sugar, paprika, black pepper, onion powder, garlic powder, poultry seasoning, chili powder, and cayenne pepper overtop. Toss until the potatoes are evenly coated with the seasoning. Spread onto a baking sheet.
  • Bake in the preheated oven for 15 minutes, then turn the potatoes over with a spatula, and continue baking until the sweet potatoes are golden and tender, 10 to 15 minutes more.

6 8-ounce red-skinned sweet potatoes (yams)
1/2 cup (packed) golden brown sugar
1/4 cup (1/2 stick) butter, room temperature
1 tablespoon fresh lemon juice
2 teaspoons grated orange peel
3/4 teaspoon ground cinnamon
3/4 teaspoon ground allspice
3/4 teaspoon ground nutmeg
Cinnamon sticks (optional)
Orange peel strips (optional)

Steps:

  • Position rack in center of oven; preheat to 400°F. Pierce sweet potatoes in several places with fork; place on rimmed baking sheet. Bake until tender when pierced with fork, about 55 minutes. Cool slightly.
  • Cut potatoes in half. Scoop out pulp into large bowl; discard peel. Add brown sugar, butter, lemon juice, grated orange peel, ground cinnamon, allspice, and nutmeg to sweet potato pulp. Using electric mixer, beat until mixture is smooth; season with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate. Rewarm over medium-low heat, stirring frequently, or cover with plastic wrap and rewarm in microwave oven on high until heated through.)
  • Mound sweet potatoes in serving bowl. Garnish with cinnamon sticks and orange peel strips, if desired.
