SPICY PEACH SALAD

Spicy Peach Salad image

This unexpected combination of ingredients is very refreshing on a hot summer day. Since you don't have to peel the peaches, it's a snap to put together! And fat-free! This was originally from a magazine (don't remember which one) but i have modified it a bit to suit.

Ingredients

2 lbs fresh peaches
1/4 cup cilantro, loosely packed (or more to taste)
3 tablespoons sugar
1 teaspoon ground cumin
1 tablespoon lemon juice
1/8-1/4 teaspoon cayenne pepper (depending how spicy you like things)

Steps:

Pit and slice the peaches.
Coarsely chop the cilantro.
Combine all ingredients and toss to mix.
Chill for at least 2-3 hours to blend flavors.

Peaches are so sweet, juicy, and delicious, and they make a fantastic coleslaw.

Ingredients

¼ cup mayonnaise
1 ½ teaspoons Dijon mustard
1 tablespoon Asian chile pepper sauce (such as sambal oelek)
½ lemon, juiced
2 tablespoons rice vinegar
1 tablespoon vegetable oil
½ teaspoon white sugar
salt to taste
1 pinch cayenne pepper, or to taste
½ (2 pound) cabbage - quartered and thinly sliced
2 fresh peaches, pitted and chopped
1 tablespoon thinly sliced fresh chives
1 teaspoon thinly sliced fresh chives for garnish

Steps:

Whisk mayonnaise, Dijon mustard, Asian chile sauce, lemon juice, rice vinegar, vegetable oil, and sugar in a bowl until dressing is smooth. Season with salt and cayenne pepper.
Place cabbage into a large bowl; add peaches and 1 tablespoon chives. Lightly toss until combined. Pour dressing over coleslaw and stir until coated.
Cover coleslaw with plastic wrap and chill until flavors have developed and cabbage is slightly softened, about 30 minutes. Adjust seasoning, mix again, and sprinkle with 1 teaspoon chives before serving.

MOM'S SPICY PEACH SALAD

This recipe is good, and easy. Of course, it was one of Mom's (Madeleine's), so what else could I expect?

Ingredients

1 cup(s) canned sliced cling peaches
1/4 cup(s) sugar
1 package(s) royal peach jello
1/4 teaspoon(s) cinnamon
1/8 teaspoon(s) cloves
1 cup(s) boiling water
2 tablespoon(s) vinegar
3/4 cup(s) peach syrup

Steps:

Drain peaches, reserving syrup. Dissolve jello, sugar and spices in boiling water. Stir in peach syrup and vinegar. Chill until thickened. Add peaches. Pour into a 3 cup mold. Chill firm. For different taste mix cream cheese with powdered sugar, form soft balls, roll in chopped nuts and float into salad before chilling.
