- In a bowl, combine all of the ingredients; mix well. Shape into six patties. Fry in a skillet until meat is browned and cooked through.

SPICY PORK PATTIES
These are so easy to put together. Make them as spicy as you like, we used a very hot chili, and hot curry paste, but you could tone it down if you wanted. Make them into 12 little patties for appetizers, or 4 large for dinner (cook longer). Serve with a thai dipping sauce, or a cucumber raita.

Steps:
- Mix all ingredients, except the oil, in a large bowl and chill for 30 minutes.
- Divide the mixture evenly into 12 portions and shape each one into a flat round pattie.
- Heat the oil (enough to cover the bottom of the non-stick frying pan) over moderate heat for 3-4 minutes on each side, or until cooked through.
- Remove and drain on a paper towel if you wish. Serve hot with dipping sauce or raita.

SPICY PORK RIBS
These are the best ribs ever. The trick is to buy belly of pork and cook it fairly slowly. The spices and juices cook out to a great thick sauce, which should be brushed over the ribs as they cook.

- Preheat the oven to 350 degrees F (180 degrees C/gas 4). Pound the garlic cloves with the spices to make the spicy marinade, then add the olive oil. Cover all the pork with the marinade, then place in a roasting tray, cover with foil, and cook for 20 minutes.
- Mix the orange and lime juice and zest with the honey. Remove the pork from the oven take off the foil and brush the meat with the honey mix. Continue to cook at 375 degrees F (190 degrees C/gas 5) for about 25 minutes, basting occasionally.

- Marinate the minced pork with fish sauce and chili paste. Add the turmeric powder. Add chopped the Kaffir lime leaves and basil leaves.
- Pound to paste, the brown sugar with lemongrass, ginger and galangal; add them to the minced pork, then add an egg, Stir well, marinate for half hour. Scoop with tablespoon and fry with oil. Serve with tomato sauce.

- In a bowl combine well the pork butt, the pork fat, the garlic paste, the pepper, the sage, the thyme leaves, and the cayenne and chill the mixture, covered, overnight. Divide the mixture into 16 balls and flatten each ball into a 1/3-inch-thick patty. In a large skillet heat the oil over moderate heat until it is hot but not smoking, in it fry the patties in batches for 4 minutes on each side, or until they are golden brown and no longer pink within, and drain them on paper towels. Transfer the patties to a serving plate and garnish them with the thyme sprigs.

- Beat egg whites in large bowl with mixer on high speed until stiff peaks form. Gently stir in egg yolks, meat and cheese.
- Heat oil in medium skillet on medium heat. Drop 1/3 of the meat mixture into 4 (1/4-cup) mounds in skillet; flatten each to 4-inch patty. Cook 3 min. on each side or until golden brown on both sides. Remove from skillet; drain on paper towels. Cover to keep warm. Repeat with remaining meat mixture.
- Meanwhile, heat dressing in medium saucepan on medium heat. Add onions; cook 3 min., stirring occasionally. Stir in beans; cook 2 min. Add tomatillo salsa, water and bouillon; mix well. Bring to boil; cook 5 min., stirring occasionally.
- Serve meat patties topped with the sauce.
