Spinach-Gruyére Gateau De Crepes image

Crepes have become one of my favorite light addition to my entrees. I took this recipe out of the Martha Stewart February 2009 Magazine and put it here for safe keeping.

Number Of Ingredients 14

1/2 medium onion, cut into 1/4-inch dice
1 ounce unsalted butter, plus more for sheet
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1 1/4 cups grated gruyere cheese (4 oz.)
1 pinch of freshly grated nutmeg
coarse salt & freshly ground black pepper
olive oil
3 garlic cloves, minced (1T.)
5 ounces Baby Spinach (about 6 cups)
1 pinch crushed red pepper flakes
coarse salt & freshly ground black pepper
1 lemon, for squeezing
12 crepes

Steps:

  • Make the bechamel; place onion and butter in a medium saucepan over medium heat, and cook until onion is translucent and softened, about 5 minutes. Add flour, and cook, stirring constantly, for 2 minutes. Whisk in milk in a slow, steady stream. Cook, stirring constantly, until mixture has thickened, about 4 minutes. Add 1 cup Gruyere, and stir until cheese melts. Remove from heat, add nutmeg, and season with salt and pepper.
  • To assemble; Heat oil in a large saute pan over medium heat. Add garlic, and cook, stirring occasionally, until wilted, about 2 minutes. Add red-pepper flakes, and season with salt, pepper, and a squeeze of lemon. let cool slightly. Squeeze out any excess liquid, and coarsely chop.
  • Preheat oven to 450°F
  • Reserve 2 tablespoons of bechamel. Mix remaining bechamel and spinach in a medium bowl. Butter and rimmed baking sheet. Place 1 crepe on center of sheet and top with 3 tablespoons spinach mixture, spreading evenly. Top with another crepe, then 3 tablespoons spinach mixture. Repeat with remaining crepes and spinach mixture, ending with a crepe. Spread reserved bechamel on top and sprinkle with remaining 1/4 cup cheese.
  • Bake until cheese melts and turns golden brown, 10 to 12 minutes. Let cool slightly, then transfer gateau de crepes to a platter. Cut into wedges and serve warm.

CREAMED SPINACH WITH GRUYERE

Extra-virgin olive oil, for the pan
4 cloves garlic, smashed
Crushed red pepper
2 1/2 pounds baby spinach
Kosher salt
1 shallot, diced
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup milk
1/4 cup heavy cream
1/2 cup grated Gruyere cheese
1/2 cup grated Parmigiano, plus more for garnish

Steps:

  • Coat a large, straight-sided saute pan with olive oil and heat over medium heat. Add 2 cloves of garlic and a pinch of crushed red pepper and cook until the garlic is golden, about 1 minute. Remove the garlic and discard.
  • Add half of the spinach to the pan, season with salt and saute until gently wilted. Remove the spinach from the pan to a towel-lined colander set inside a bowl to let the spinach drain and cool. Repeat the process with the remaining garlic and spinach and another pinch of crushed red pepper. Squeeze the towel to remove most of the liquid from the spinach.
  • Remove any liquid from the bottom of the saute pan and coat lightly with olive oil. Heat the oil over medium heat, add the shallots and season with salt and a pinch of crushed red pepper. Saute until the shallots are translucent and very aromatic, 5 to 7 minutes. Add the butter and, when melted, stir in the flour. Cook until it is the texture of wet sand, 5 to 6 minutes. Whisk in the milk and heavy cream. Taste for seasoning and season with salt, if needed, (it will). Bring the milk and heavy cream to a boil, then reduce the heat and simmer for 5 to 6 minutes, stirring occasionally so the milk doesn't scorch on the bottom. Stir in the Gruyere and Parmigiano until melted. Add the reserved spinach and stir to combine. Taste and adjust the seasoning, if needed. Transfer to a serving bowl, top with a sprinkle of Parmigiano and serve.

Vegetable oil cooking spray
1 tablespoon extra-virgin olive oil
4 ounces thinly sliced pancetta, diced into 1/2-inch pieces
2 shallots, chopped
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Two 1/2-to-3/4-inch-thick slices country-style bread, cut into 1/2-inch cubes (about 4 cups)
6 large eggs, beaten, at room temperature
2 packed cups chopped spinach
1 1/2 cups grated gruyere (6 ounces)
1/4 cup milk, at room temperature
Special equipment: four 10-ounce ramekins

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F. Spray four 10-ounce ramekins with vegetable oil cooking spray.
  • Heat the oil over medium-high heat in a medium skillet. Add the pancetta and cook until browned, about 6 minutes. Remove the pancetta using a slotted spoon and drain on paper towels. Add the shallots, salt and pepper in the same skillet. Cook over medium-high heat until soft, about 3 minutes.
  • In a medium bowl, mix together the cooked pancetta, shallots, bread, eggs, spinach, gruyere and milk until all the ingredients are moistened.
  • Spoon the mixture into the ramekins. Place the ramekins on a small baking sheet and bake until golden brown, about 25 minutes.
  • Cool the ramekins for 20 minutes. Using a paring knife, loosen the edges of the ramekins and unmold onto serving plates. Serve warm or at room temperature.

SPINACH AND GRUYERE CAKES



Spinach and Gruyere Cakes image

This one is not exactly easy, but believe us, it's worth all the effort. You need to cook the spinach in milk and then mix it with a creamy mixture of butter and flour. Add yolks and make this really cheesy with Gruyere and parmesan. You can also, increase the creaminess factor with sour cream. Let's get on with it!

¾ cup milk
5 ounces of frozen spinach, thawed
1 ounce butter
¼ cup flour
½ cup gruyère, grated
1 teaspoon nutmeg
salt
pepper
2 yolks, whisked
3 whipped egg whites
1 tablespoon melted butter
⅔ cup parmesan, grated
4 tablespoons of sour cream

Steps:

  • Add the milk and spinach to a cooking pot over low heat. Cook and stir until it bubbles. Continuously stir while boiling for 5 minutes. Remove from heat.
  • Melt the butter in a skillet over low heat. Add the flour. Cook and continuously stir until you have a crumbly and even mixture.
  • Add the milk and spinach mixture. Cook and continuously whisk until reduced.
  • Transfer to a bowl. Add the Gruyere cheese and nutmeg. Season with salt and pepper and mix until even.
  • Add the whisked yolks and mix them in. Add the whisked egg whites and mix more until even.
  • Transfer the mixture to ramekins (we needed 4 of them). Place them into a roomy baking dish and fill it halfway with water. Bake for 30 minutes at 350⁰F/175⁰C.
  • Coat a baking dish with melted butter. Sprinkle it with some of the grated parmesan (keep 4 tablespoon for later).
  • Carefully remove the cooked spinach and milk mixture from the ramekins and place them into the baking dish. Cover with aluminum foil and refrigerate overnight.
  • Discard the aluminum foil and top each cooked spinach cylinder with 1 tablespoon of sour cream and the remaining parmesan. Season with salt and pepper and bake for 30 minutes at 340⁰F/170⁰C.
  • Optionally, serve with more sour cream on top.

This is a variation on a recipe my mother used to make when I was a kid. I've tweaked it a bit over the years, but it's still a great stand by recipe for holiday meals.

8 ounces cream cheese, softened
6 tablespoons butter, softened
1/2 teaspoon salt
1/2 cup parmesan cheese, grated
1 cup gruyere cheese, grated
4 lbs frozen chopped spinach, thawed and drained
1 teaspoon texas pete hot sauce
1 cup panko breadcrumbs

Steps:

  • Beat cream cheese and 4 T of the butter until smooth.
  • Mix the salt, parmesan cheese, and 1/2 cup of the gruyere into the cream cheese mixture.
  • Mix the spinach and Texas Pete into the cream cheese mixture.
  • Butter a casserole dish, then add the spinach mixture.
  • In a bowl, combine the Panko and the remaining Gruyere cheese. Sprinkle over the top of the spinach.
  • Melt the remaining 2 T of butter and drizzle over the top.
  • Bake at 350 for 25 minutes or until top is lightly browned.

3/4 cup plain flour
1/4 cup cold unsalted butter, diced
1 pinch salt
3 tablespoons of ice cold water
1 shallot, roughly diced
1 cup assorted wild mushroom, trimmed and cut into bite size pieces
2 cups tightly packed Baby Spinach
2 large eggs
1/2 cup cream
50 g gruyere cheese, grated

Steps:

  • Preheat oven to 100°C.
  • In a food processor place flour, butter and salt and process until the mixture resembles bread crumbs.
  • Add water and continue to process until dough forms a ball.
  • Turn off processor and remove dough.
  • Cut dough into 4 pieces, cling wrap and refrigerate for ½ an hour - 1 hour.
  • Remove dough from refrigerator and place on lightly floured work surface using a rolling pin roll each ball to 0.5 cm thick.
  • Grease individual tart tins with a little butter and line tins with pastry.
  • Place grease proof paper over pastry and weigh the paper down with beans or rice.
  • Place tart tins on a sheet tray and bake in the oven for 15 minutes.
  • Remove the weights (i.e. beans or rice) and paper and cook for further 10-15 minutes.
  • Place a medium sized sauté pan over a medium to high heat and drizzle a little olive oil and add shallots and mushrooms and sauté for 1-2 minutes.
  • Add spinach and continue to sauté for further 1-2 minutes.
  • Once spinach has wilted and mushrooms are soft remove from heat and allow to cool.
  • Divide spinach, mushrooms, and cheese between the tarts.
  • In a separate bowl combine eggs and cream and whisk gently with a fork.
  • Pour over egg and cream mixture (be careful not to overfill) and return tray to oven.
  • Bake for 15-20 minutes or until just set.
  • When removing tarts from oven allow to cool for 5 minutes before unmolding.
  • Cut into quarters and arrange on a serving dish.

3 shallots, minced
3 bunches flat-leaf spinach, thick stems removed and leaves roughly chopped
Coarse salt and ground pepper
8 ounces Gruyere cheese, grated (about 2 cups)
1 recipe Basic Pie Dough for Spinach and Gruyere Quiches, fitted into two 9-inch pie plates
8 large eggs
3 cups half-and-half
1/8 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees, with racks set in upper and lower thirds. In a large skillet, heat butter over medium. Add shallots, and cook, stirring occasionally, until softened, 1 to 2 minutes. Add as much spinach to skillet as will fit; season with salt and pepper, and toss, adding more spinach as room becomes available, until wilted, 2 to 3 minutes.
  • Transfer spinach mixture to a colander. Press firmly with the back of a spoon to squeeze out as much liquid as possible. Divide spinach mixture and cheese between prepared crusts. Place each crust on a separate rimmed baking sheet.
  • In a large bowl, whisk together eggs, half-and-half, nutmeg, 1 teaspoon salt, and 1 teaspoon pepper. Dividing evenly, pour egg mixture into crusts.
  • Arrange baking sheets on racks, and bake until center of each quiche is just set, 55 to 60 minutes, rotating sheets from top to bottom halfway through. Let quiches stand 15 minutes before serving.

1/4 teaspoon salt
1/4 teaspoon fresh ground pepper

Steps:

  • Preheat oven to 400°F.
  • Pulse spinach in three batches in a food processor until finely chopped.

Steps:

  • Preheat oven to 375°F Butter a round 1-quart tall-sided baking dish and dust with breadcrumbs; set aside.
  • In a large skillet, heat 2 tablespoons water over medium-high. Add spinach and cook, stirring constantly, until wilted, about 4 minutes. Transfer to a strainer to cool; press to release liquid.
  • In a medium saucepan, melt butter over medium until bubbling. Add flour and whisk until a paste forms. Continue to cook until pale blond in color, 2-3 minutes. Whisking, gradually add milk. Cook, whisking, until lumps are gone and mixture is thickened, about 3-5 minutes. Remove from heat. Stir in cheese until melted; season with salt and pepper. Transfer souffle base to a large bowl.
  • In a food processor, pulse spinach and egg yolks until coarsely pureed. Add 1/4 cup souffle base; pulse until blended. Stir spinach mixture into remaining souffle base.
  • In a large bowl, using an electric mixer, beat 4 egg whites and a pinch of salt on medium-high until stiff peaks form (do not overbeat), about 3 minutes. In 2 additions, gently fold egg whites into souffle base.
  • Pour batter into prepared dish and bake until souffle is tall, browned, and firm to the touch, about 35 minutes. (Avoid opening oven during the first 25 minutes of baking.) Serve immediately.
