Steps:
- In a small bowl, combine the vinegar, shallot, mustard, salt, and pepper. Gradually whisk in the oil to make a creamy dressing.
- Put all but a large handful of the spinach in a large bowl. Toss with most of the dressing. Add remaining spinach and continue tossing until well coated.
- Serve immediately topped with goat cheese and walnuts.

- Preheat oven to 300°. In a small bowl, whisk egg white and vanilla until frothy. Stir in walnuts. Sprinkle with sugar; toss to coat evenly. Spread in a single layer in a greased 15x10x1-in. baking pan., Bake 25-30 minutes or until lightly browned, stirring every 10 minutes. Spread on waxed paper to cool completely., In a small bowl, whisk dressing ingredients until blended. Place spinach in a large bowl. Drizzle with dressing; toss to coat. - In a large bowl, whisk together vinegar, Dijon mustard, olive oil, shallot, and tarragon.
- Add spinach, walnuts, hard-cooked eggs, and mushrooms. Season with coarse salt and ground pepper. Toss just before serving.
SPINACH BERRY SALAD WITH CANDIED WALNUTS
Steps:
- For the dressing: Whisk together the vinegar, mustard, honey, jam, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Whisk in the oil in a slow stream and continue whisking until the dressing is emulsified.
- For the salad: Toss together the spinach, blackberries, onions and Candied Walnuts in a large salad bowl. Drizzle with the dressing and toss. Using a vegetable peeler, shave some cheese over the top.
- Line a baking sheet with parchment paper and set aside.
- Melt the butter in a medium saucepan over low heat. Add the walnuts and stir to coat. Raise the heat to medium, add the sugar and cook until the sugar is dissolved and caramelized, stirring often, about 5 minutes. Stir in the cinnamon, 1/2 teaspoon salt and 1/4 teaspoon pepper, then transfer the mixture to the baking sheet. Spread the nuts in a single layer. Let the walnuts cool until hardened, about 15 minutes.

I made this up about 18 years ago while visiting my aunt. She had purchased 10 pounds of fresh spinach and didn't know what to do with it!

- Heat the oil in a large skillet with a lid over medium-high heat.
- Saute the onion and garlic until the onion becomes translucent.
- Add the red pepper flakes, if using, and stir through once.
- Add the walnuts and saute until they become somewhat fragrant.
- Add the spinach and continue to stir until it begins to wilt.
- Cover and allow to steam in it's own juice for 5 minutes.
- If needed you can add 1 Tablespoon of water to the pan.
- Remove cover and add the soy sauce.
- Mix well and serve.

- Peel, devein and butterfly shrimp.
- Combine shrimp, 1 1/2 tablespoons sherry and gingerroot.
- Cover and marinate in refrigerator for 30 minutes.
- Combine remaining 1 1/2 tablespoons sherry, cornstarch, chicken broth, soy sauce, and vinegar; stir well.
- Add ketchup and next 3 ingredients.
- Set aside.
- Coat a wok with cooking spray.
- Heat at medium-high until hot.
- Add walnuts and stir-fry for 30 seconds.
- Remove walnuts from wok and set aside.
- Drizzle peanut oil around top of wok, coating sides.
- Add spinach to wok; stir-fry for 2 minutes.
- Remove to a serving platter; keep warm.
- Add garlic to wok; stir-fry 10 seconds.
- Add sweet red pepper and green onions; stir-fry 3 to 4 minutes.
- Add cornstarch mixture; stir-fry until mixture is slightly thickened and bubbly.
- Spoon over spinach and sprinkle with walnuts.
- Serve immediately.
