3 tablespoons apple cider vinegar
4 teaspoons spicy brown mustard
4 teaspoons pure maple syrup
1 tablespoon minced shallot (from 1 small shallot)
½ teaspoon kosher salt
½ teaspoon black pepper
3 tablespoons extra-virgin olive oil
1 (10 ounce) package fresh baby spinach
2 large Pink Lady apples, thinly sliced
½ cup sweetened dried cranberries
½ cup chopped toasted pecans, divided
2 ½ ounces semi-soft goat cheese, crumbled (about 1/3 cup)

Steps:

  • Whisk together vinegar, mustard, syrup, shallot, salt and pepper in a small bowl; slowly whisk in olive oil until completely blended.
  • Toss together spinach, apples, dried cranberries, half of the pecans and dressing in a large bowl. Transfer to a serving platter and sprinkle with goat cheese and remaining pecans. Serve immediately.

6 cups baby spinach, washed and dried
1 large apple, cored and thinly sliced (or 2 small apples)
¼ small red onion, thinly sliced
¾ cup dried cranberries
¼ cup pepitas (pumpkin seeds), toasted
⅓ cup goat cheese, crumbled
¼ cup extra-virgin olive oil
2 tablespoons apple cider vinegar (or balsamic vinegar)
1 tablespoon maple syrup (or honey)
salt and pepper (to taste)

Steps:

  • Add the washed and dried spinach to a salad bowl and top with sliced apples, sliced red onion, cranberries, pepitas and goat cheese.
  • Add all of the vinaigrette ingredients to a small mason jar and give it a good shake. If not using immediately store it in the refrigerator.
  • Add about half of the dressing and toss gently to combine. Serve immediately with more salad dressing on the side.

1/4 cup honey
3 Tablespoons red wine vinegar
1 Tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
6 to 8 cups prewashed spinach or spring mix
1 large apple (, cored and thinly sliced)
1/2 cup dried cranberries
1/2 cup walnuts or pecans
1/4 cup crumbled feta cheese

Steps:

  • In a small bowl, whisk together the oil, honey, vinegar, mustard, salt and pepper. Store in the refrigerator until ready to serve and stir before serving. The dressing stays good up to one week.
  • When ready to serve, place the spinach in a large bowl. Top with apple slices, cranberries, nuts and feta cheese. Drizzle with the dressing and toss until combined. Serve immediately.
