SPINACH BROWNIES

Spinach Brownies image

They look like brownies, but they're not sweet! Here's a wonderful way to have spinach. This is a treat my girls love to eat. Two 10 ounce packages frozen spinach, cooked, may be substituted for fresh.

Provided by BOWLINGNUT

Categories     Appetizers and Snacks     Cheese

Time 55m

Yield 24

Number Of Ingredients 9

1 (10 ounce) package spinach, rinsed and chopped
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 eggs
1 cup milk
½ cup butter, melted
1 onion, chopped
1 (8 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.

  • In a large bowl, mix flour, salt and baking powder. Stir in eggs, milk and butter. Mix in spinach, onion and mozzarella cheese.
  • Transfer the mixture to the prepared baking dish. Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Cool before serving.

SPINACH & BLACK BEAN BROWNIES

Spinach & Black Bean Brownies image

the brownies will not be firm until after they are baked and chilled completely. In other words, you would ideally make these one day and serve them the next. When they come out of the oven, they are more of a pudding texture which is certainly delicious, but you can't slice them like a traditional brownie until they are 100% cold from the fridge. Just letting you know, m'kay? :) From: http://www.carrieonvegan.com/2012/10/12/healthy-vegan-friday-spinach-black-bean-brownies/

Categories     Dessert

Time 1h

Yield 12 serving(s)

Number Of Ingredients 14

3 cups black beans, rinsed and drained
2 cups pitted medjool dates, soaked in 3/4 cup of water for at least 1 hour
1/2 cup unsalted almond butter
1/4 cup rolled oats (gluten-free if necessary)
1 teaspoon vanilla extract
1 tablespoon chia seeds
2 cups packed baby spinach leaves
1/3 cup carob powder or 1/3 cup cocoa powder
nonstick cooking spray
vanilla frosting
1/2 cup unsalted cashews
2/3 cup unsweetened soymilk
1 cup pitted medjool dates
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees.
  • Lightly spray a large baking dish (I recommend 13″x 9″) with non-stick cooking spray and set aside.
  • Combine all ingredients in a high-speed blender and process until smooth, adding a small amount of non-dairy milk if necessary to blend.
  • Pour batter into baking dish and bake for at least 45 minutes. If the top of the brownies begins to burn during the last 10-15 minutes of baking, drop the temperature to 350 degrees.
  • Let brownies chill completely before serving, preferably overnight in the refrigerator.
  • Alternatively, you can bake the brownies at 300 degrees for 1 hour and then an additional hour at 225 degrees.
  • Frosting: Combine ingredients in a high-speed blender and process until smooth. Note: it is not necessary to soak the dates for the frosting recipe.

Yield Makes 45 (2-inch) brownies

Number Of Ingredients 9

4 ounces unsweetened chocolate
1 cup unsalted butter or non-hydrogenated butter substitute
2 cups soft-cooked black beans, drained well
1 cup walnuts, chopped
1 tablespoon vanilla extract
1/4 cup natural coffee substitute (or instant coffee, for gluten-sensitive)
1/4 teaspoon sea salt
4 large eggs
1 1/2 cups light agave nectar

Steps:

  • Preheat the oven to 325°F. Line an 11- by 18-inch baking pan with parchment paper and lightly oil with canola oil spray.
  • Melt the chocolate and butter in a glass bowl in the microwave for 1 1/2 to 2 minutes on high. Stir with a spoon to melt the chocolate completely. Place the beans, 1/2 cup of the walnuts, the vanilla extract, and a couple of spoonfuls of the melted chocolate mixture into the bowl of a food processor. Blend about 2 minutes, or until smooth. The batter should be thick and the beans smooth. Set aside.
  • In a large bowl, mix together the remaining 1/2 cup walnuts, remaining melted chocolate mixture, coffee substitute, and salt. Mix well and set aside.
  • In a separate bowl, with an electric mixer beat the eggs until light and creamy, about 1 minute. Add the agave nectar and beat well. Set aside.
  • Add the bean/chocolate mixture to the coffee/chocolate mixture. Stir until blended well. Add the egg mixture, reserving about 1/2 cup. Mix well. Pour the batter into the prepared pan. Using an electric mixer, beat the remaining 1/2 cup egg mixture until light and fluffy. Drizzle over the brownie batter. Use a wooden toothpick to pull the egg mixture through the batter, creating a marbled effect. Bake for 30 to 40 minutes, until the brownies are set. Let cool in the pan completely before cutting into squares. (They will be soft until refrigerated.)
