SPINACH, CHIVE, RICOTTA PASTA - BETHENNY FRANKEL

Steps:
- Bring pot of salted water to boil and cook pasta according to directions. Meanwhile, heat oil in large nonstick pan over medium high heat and add spinach, then garlic. Saute until wilted and add salt and pepper. Turn off heat.
- When pasta is cooked, add to spinach with a 1/4 cup of pasta water. Add remaining ingredients (except chives and pine nuts) and toss well.
- Season with salt and pepper to taste. Top with fresh chives, pinenuts and more grated parmesan.

If you don't want to turn the oven on, put a lid on your pan and turn the heat to low after adding the cheese. It will cook through but will not brown on top. Enjoy!

- Preheat the oven to 350 degrees. Spray a smaill nonstick pan with an ovenproof handle with cooking spray. Over medium heat, saute the vegetables.
- In a small bowl, whisk together the egg and egg whites with a little salt and pepper. Pour the egg mixture into the pan and move it around with a spatula until slightly solidified. Transfer the pan to the oven.
- Bake until the frittata is almost firm to the touch (approximately 15-20 minutes). Sprinkle with the cheese and bake until firm. Serve immediately.

- Blend ricotta cheese, milk and Parmesan in processor until smooth. Heat oil in heavy large skillet over medium heat. Add onion; sauté until beginning to brown, about 5 minutes. Add garlic and sauté 2 minutes. Add ricotta mixture, basil, chives and parsley to skillet; stir until heated through, about 5 minutes. Mix in rotelle. Season with salt and pepper.

- Combine tomatoes, spinach, broth, water, and garlic in a large pot or Dutch oven. Cover and cook until the broth comes to a simmer, about 5 minutes.
- Uncover and add the pasta. Stir pasta until it softens and is submerged in the liquid. Continue to cook, stirring frequently, until the pasta is tender and has absorbed most of the liquid, about 10 minutes.
- Stir in ricotta cheese and season with salt and pepper. Stir and allow ricotta cheese to heat through. Top with Parmesan cheese before serving.
