Spicy Rice Noodles With Crispy Tofu and Spinach image

Herby noodles, chile oil and crisp tofu come together in this spicy, filling bowl that will disappear before you know it. But the component parts are just as valuable on their own: Make crisp baked tofu once, and you may never pan-fry cubes again. Make a scallion-basil paste on your cutting board, and forget about pesto from the food processor. And make a little extra spicy sesame oil, so that you can swirl it into scrambled eggs and smashed cucumber salads.

Number Of Ingredients 20

12 to 14 ounces firm tofu
1/2 to 1 teaspoon kosher salt
1 tablespoon peanut or vegetable oil
2 teaspoons sesame oil
1 tablespoon cornstarch
1 tablespoon panko (Japanese bread crumbs)
1 tablespoon sesame seeds (optional)
8 ounces wide rice noodles
3 tablespoons sesame oil
3 tablespoons peanut oil
1 garlic clove, thinly sliced
1 (1-inch) piece of ginger, peeled and thinly sliced
1 1/2 teaspoons to 1 tablespoon red-pepper flakes, to taste
1 tablespoon sesame seeds, plus more for garnish (optional)
1 teaspoon kosher salt
1 cup roughly chopped basil, packed
3 large or 4 small scallions, roughly chopped
3 cups baby spinach, packed
1/2 lime
Toasted sesame oil, for drizzling (optional)

Steps:

  • Heat the oven to 400 degrees and line a baking sheet with parchment paper. As the oven heats, press the tofu (you can do this by sandwiching the block in paper towels and placing a cutting board, plus a heavy pot, can or book on top).
  • Cut the tofu into 1/2-inch cubes and place in a medium bowl. Add the salt and oils, and toss to combine.
  • Sprinkle the cornstarch, panko and sesame seeds, if using, and toss gently so the tofu cubes are coated.
  • Spread on the prepared sheet and bake for 30 to 35 minutes, flipping once, until golden-brown and crisp.
  • While the tofu bakes, start the noodles: Put the dry rice noodles in a big, wide bowl. Fill a kettle, bring the water to a boil, and pour the boiling water over the noodles to cover. Set aside for 6 to 10 minutes, until the noodles are fully rehydrated and soft. (Time may vary by brand.) Then drain, rinse with cold water, and drain again. Transfer noodles to a large bowl.
  • As the noodles soak, prepare the spicy sesame oil: In a small pot, combine sesame oil, peanut oil, garlic, ginger, red-pepper flakes and sesame seeds. Bring to a boil, then reduce to a simmer and cook on the lowest heat for 10 to 12 minutes, until the garlic slices turn golden.
  • Meanwhile, on your cutting board, make a small mound with the teaspoon of salt. Place the basil and the scallions on top, and use your knife to furiously chop and smash until you have a rough paste.
  • Mix the basil paste into the bowl of rice noodles. Pile the baby spinach on top. Pour at least half of the hot oil immediately over the spinach, tossing so that the heat wilts the leaves slightly. Then add the juice of the 1/2 lime and toss to combine. Taste for salt and lime juice, and add more oil as you see fit.
  • Arrange the tofu on top of the noodles, or mix them in so that the cubes hide like little treasures. For extra flair, garnish with additional sesame seeds and a drizzle of toasted sesame oil.

1 whole chicken
12 cups water
16 ounces tofu, cubed
1 bunch spinach, de-stemmed and cleaned
1/2 cup diced Virginia ham, pre-cooked
White pepper, to taste

Steps:

  • Cook entire chicken in simmering water for 8 hours. While cooking, add water to keep chicken covered. Remove chicken, leaving only the chicken stock. Add a pinch of salt. Bring chicken stock to a boil and add spinach. Turn heat off as soon as spinach is added. Add tofu, Virginia ham, and pinch of white pepper.

INSTANT POT TOFU NOODLE SOUP



Instant Pot Tofu Noodle Soup image

The star of this meal is the broth. An Instant Pot is a great way to quickly infuse aromatics into water or stock to create flavors that taste like they have simmering all day.

3 cups low-sodium chicken broth
3 scallions (1 cut into thirds)
1 2-inch piece fresh ginger, peeled and sliced
2 cloves garlic, crushed
2 tablespoons toasted sesame oil
1 tablespoon low-sodium soy sauce
1 8-ounce package pad thai-style brown rice noodles
2 carrots
6 ounces Canadian bacon
1 1-pound package silken tofu
3 cups baby spinach
Kosher salt

Steps:

  • Combine 3 cups hot water, the chicken broth, cut scallion, ginger, garlic, 1 tablespoon sesame oil and the soy sauce in an Instant Pot. Put on and lock the lid, making sure the steam valve is in the sealing position. Set the pot to pressure-cook on high for 10 minutes. When the time is up, carefully turn the steam valve to the venting position. When the steam is released, turn off the pot and remove the lid.
  • Meanwhile, put the noodles in a bowl and cover with hot water; stir occasionally until softened, about 15 minutes. Gently separate any clumps, then drain and rinse under cool water. Cut the carrots into thin matchsticks, chop the Canadian bacon and thinly slice the remaining 2 scallions. Drain the tofu and cut into 12 chunks.
  • Set the Instant Pot to sauté on high. Remove the garlic, ginger and scallion from the pot with a slotted spoon; finely chop and return to the pot. Add the noodles, carrots and Canadian bacon; cook, stirring, until the carrots are just tender, about 3 minutes. Turn off the pot. Stir in the spinach and thinly sliced scallions; season with salt.
  • Divide the soup among bowls and add 3 tofu chunks to each. Drizzle with the remaining 1 tablespoon sesame oil.

1 tablespoon canola oil
1/2 pound tofu, cut in small dice
1 large garlic clove, minced
1 teaspoon grated or minced fresh ginger
1/4 teaspoon red chili flakes
Soy sauce to taste
1 6-ounce bag baby spinach, rinsed
2 tablespoons toasted sesame seeds
1 teaspoon sesame oil

Steps:

  • Heat the canola oil over medium-high heat in a large nonstick skillet or wok, and add the tofu. Stir-fry until the tofu is lightly colored, three to five minutes, and add the garlic, ginger and chili flakes. Cook, stirring, until fragrant, about one minute, and add soy sauce to taste. Add the spinach and stir-fry until the spinach wilts, about one minute. Stir in the sesame seeds, and add more soy sauce to taste. Remove from the heat.
  • Using tongs, transfer the spinach and tofu mixture to a serving bowl, leaving the liquid behind in the pan or wok. Drizzle with the sesame oil, and add more soy sauce as desired. Serve with rice or other grains, or noodles. You may also use it as a filling for whole wheat pita bread.

MISO UDON NOODLES WITH SPINACH AND TOFU

1 (7 ounce) package dried udon noodles
1 tablespoon salted butter
1 tablespoon miso paste
1 teaspoon sesame oil
1 teaspoon honey
1 clove garlic, finely chopped
1 cup cubed tofu
½ cup water
3 cups fresh spinach
3 stalks green onions, minced
1 tablespoon soy sauce
1 dash Sriracha sauce, or to taste
¼ teaspoon sesame seeds, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook udon in boiling water, stirring occasionally, until noodles are partially cooked, 5 to 7 minutes.
  • Meanwhile, combine butter, miso paste, sesame oil, and honey in a wok over medium heat and cook until sizzling. Add garlic and saute until fragrant, about 1 minute. Add tofu and cook for about 1 minute.
  • Drain udon noodles and add to wok with water. Cook and stir for 3 minutes. Add spinach and green onions; mix until spinach has wilted. Stir in soy sauce.
  • Ladle into two bowls. Drizzle with Sriracha and sprinkle sesame seeds on top.

50 g tofu, cubed into small pcs
1 teaspoon sesame oil, heated to smoking point and cooled
2 tablespoons oil
salt
3 -4 vegetable bouillon cubes or 3 -4 chicken stock cubes
2 tablespoons soya sauce
black pepper (optional)

Steps:

  • Heat oil in a wok.
  • Add the chopped spinach and saute till soft.
  • Add salt and 2-3 cups of water and the stock cubes.
  • Bring to a boil and then simmer.
  • Add the tofu and the soya sauce Cook for 5 minutes more and remove from heat.
  • Add the sesame oil and season and then serve hot.

1 tablespoon instant dashi stock
1/2 cup soy sauce
1 tablespoon sugar
1/2 lb dried soba noodles (buckwheat noodles)
2 carrots, sliced thin
1/2 lb spinach, coarse stems discarded and the leaves washed well, dryed, and cut crosswise into 1 1/2 inch-wide str
8 -10 ounces firm tofu, cut into 1/2 inch cubes (preferably silken)
3 -4 tablespoons miso, to taste (fermented bean paste)
2 scallions, minced

Steps:

  • Make the broth: In a saucepan bring the water to a boil.
  • Stir in the dashi and simmer the mixture, stirring occasionally, for 3 minutes.
  • Stir in the soy sauce and the sugar and simmer the broth for 5 minutes.
  • Strain the broth through a fine sieve into a heatproof bowl and pour it back into the pan.
  • In a kettle of salted boiling water cook the noodles for 3 to 5 minutes, or until they are al dente, being careful not to overcook them, drain them in a colander, and rinse them under cold water.
  • Add the carrots to the broth and simmer them, covered, for 5 minutes.
  • Stir in the spinach and the tofu and simmer the soup for 1 minute.
  • In a small bowl stir together well 1/2 cup of the soup broth and the miso and pour the mixture back into the pan.
  • Divide the noodles among 6 large bowls, ladle the soup over them, and sprinkle each serving with some of the scallions.
  • I sometimes sprinkle toasted nori over the soup.
  • Enjoy!
