1 tablespoon extra-virgin olive oil
1 pound ground beef
1 tablespoon brown sugar
1 tablespoon red wine vinegar
3⁄4 cup ketchup
1 tablespoon flour
1 tablespoon Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker
6 sandwich buns

Steps:

  • In a large skillet placed over medium heat, heat the oil until very hot but not smoking. Add the beef, breaking up with a spoon, and sauté until browned.
  • Mix the brown sugar, vinegar and ketchup together in a small bowl until well combined.
  • Pour mixture over beef, and stir until the meat is coated in the sauce. Sprinkle the flour and Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker into the beef mixture and cook, until the sauce has thickened slightly, about 5-10 minutes.
  • Pile into sandwich buns and serve immediately.

1 large green bell pepper, diced
1/2 large onion, diced
1 1/2 cups ketchup
5 cloves garlic, minced
Hot sauce, such as Tabasco
Worcestershire sauce
Salt and freshly ground black pepper
8 kaiser rolls
2 tablespoons packed brown sugar
2 teaspoons chili powder, or more as needed
1 teaspoon dry mustard
1/2 teaspoon red pepper flakes, or more as needed
2 tablespoons butter, softened
Chips or salad, for serving, if desired

Steps:

  • Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
  • Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
  • To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.

1 ½ pounds extra lean ground beef
½ onion, diced
2 cloves garlic, minced
1 green bell pepper, diced
1 cup water
¾ cup ketchup
2 tablespoons brown sugar
1 teaspoon Dijon mustard
1 dash Worcestershire sauce
1 ½ teaspoons salt, or to taste
½ teaspoon ground black pepper
1 cup water
1 pinch cayenne pepper, or to taste

Steps:

  • Combine the ground beef and onion in a cold skillet, place the skillet onto a stove burner, and turn the heat to medium; cook and stir until the beef is crumbly and browned. Stir the garlic and bell pepper into the beef mixture; continue cooking and stirring until the vegetables are tender, 2 to 3 more minutes. Add 1 cup of water. Mix in ketchup, brown sugar, Dijon mustard, Worcestershire, salt, and pepper. Pour in 1 more cup of water. Bring to a simmer. Reduce heat to low and cook until the mixture becomes very thick, 30 to 45 minutes. Adjust salt and pepper as needed. Season with cayenne.

1/2 cup fresh cilantro, leaves and tender stems
1/4 cup sour cream
1 avocado
1 lime, zested and juiced
Salt and freshly cracked black pepper
1 tablespoon canola oil
2 poblano peppers, seeded, ribbed and cut into 1/4-inch-by-2-inch strips
1 teaspoon ground cumin
Salt and freshly cracked black pepper
2 pounds fresh Mexican chorizo
One 12-ounce jar salsa (I like chunky, but use whatever you like)
Salted butter, at room temperature, for toasting the buns
4 fresh telera or bolillo rolls
1 cup shredded Chihuahua cheese

Steps:

  • For the avocado crema: Place the cilantro, sour cream, avocado, lime zest and juice in a food processor and run until smooth. Season with salt and pepper and reserve, covered with plastic wrap pressed directly on top to keep from browning.
  • For the filling: Preheat a heavy-bottomed 12-inch skillet over high heat, and then add in the oil. Add the poblano peppers, season with cumin, salt and pepper and toss to coat. Saute until the peppers are slightly soft and blistered, 5 to 7 minutes. Remove from the heat and set aside.
  • In the same skillet, add the chorizo and cook over medium heat, breaking up with a wooden spoon as it cooks. Cook the chorizo until well browned and cooked through, 10 to 15 minutes. If your chorizo has extra fat you can drain it on a paper-towel-lined plate to remove excess fat and then add the chorizo back to the pan along with the salsa. If your chorizo doesn't have that much fat, just add in your salsa and keep the party going. Simmer until heated through, about 5 minutes.
  • For the sandwich build: Slice, butter and toast each of the rolls until golden brown and crusty.
  • Sprinkle some cheese on the bottom bun, and then a hefty spoonful of the hot chorizo. On top of the chorizo place some poblanos. Smear the top bun with lots of avocado crema and serve 'em up.

I came up with this when I was getting ready to make Sloppy Joes, but was craving some ZING! The ZING! is in the chipotle pepper sauce and I will state again that is it kind of HOT. I enjoy spicy foods and this recipe is a product of that enjoyment. You can freeze the leftover chipotle peppers and sauce for adding zip to mayo or other white sauces or for adding to other dishes. It is neat stuff to experiement with! Hope you like the recipe, it is fast and easy!

1 lb ground beef (beef or turkey)
1/2 chopped onion
1/2 chopped green pepper (optional)
1 tablespoon minced garlic
1/2 tablespoon cumin powder
1 teaspoon adobo sauce, from a can of chipotle peppers (or more, this is HOT use at own risk)
salt and pepper
1 (8 ounce) can tomato sauce
1 cup grated cheddar cheese or 1 cup Mexican blend cheese
chopped green chili (optional)
sliced black olives (optional)
hamburger buns or hispanic roll (optional)

Steps:

  • At medium to medium high heat brown the meat with the onions, green pepper, and garlic.
  • Drain off the fat.
  • Pour in tomato sauce, chipotle sauce (this stuff maybe too hot for some people, if you DO NOT like spicy foods use less or don't use it at all-- start with a small amount and add more according to taste), cumin powder and grated cheese.
  • Stir until cheese is completely melted.
  • Allow sauce to thicken.
  • Reduce heat to low and stir in salt and pepper if desired.
  • You may now add olives or chiles if you desire.
  • Put thickened meat mixture on hamburger buns-- OR if you can find the little bollo or bonito (can't remember the name) rolls at your grocery store use those if you like.

I came up with this recipe one night when my bf wanted sloppy joes. We had a surplus of jalapenos from the garden, so I decided to spice them up. This was the final result and he claims it is "unparalleled." Feel free to down the spice by using mild or medium salsa or omitting the jalapeno.

1 lb ground turkey
1 small onion, chopped
1 green pepper, chopped
2 jalapenos, chopped
3/4 cup ketchup
3/4 cup salsa (I used hot)
1/2 teaspoon salt
4 tablespoons sugar
4 tablespoons vinegar
4 tablespoons Worcestershire sauce
2 tablespoons hot sauce

Steps:

  • In a large skillet, cook turkey, onion, green pepper, and jalapenos until turkey is done.
  • Meanwhile, combine ketchup, salsa, salt, sugar, vinegar, Worcestershire sauce, and hot sauce. Cook on low for about fifteen minutes.
  • Drain turkey (if needed).
  • Add sauce and simmer for 45 minutes to 1 hour.
  • Serve with Mexican blend cheese and sour cream if desired.
