Categories     Appetizers and Snacks

Time 1h10m

Number Of Ingredients 26

8 ounces finely shredded pork loin ((225g))
¼ teaspoon salt
½ teaspoon sesame oil
1 teaspoon Shaoxing wine
½ teaspoon cornstarch
¼ teaspoon white pepper
2 tablespoons oil
1 clove garlic ((minced))
10 dried shiitake mushrooms ((soaked until softened and thinly sliced))
2 medium carrots ((julienned, about 1 cup))
1 cup bamboo shoots ((julienned; fresh is preferred, but canned is fine too))
1 small napa cabbage ((julienned, about 6 cups))
1 tablespoon Shaoxing wine
2 tablespoons light soy sauce
1 teaspoon sesame oil
½ teaspoon salt ((or to taste))
white pepper ((to taste))
1/4 teaspoon sugar
2 tablespoons cornstarch ((dissolved in 2 tablespoons cold water))
1 package spring roll wrappers ((8" squares; this recipe makes about 20 spring rolls))
1 tablespoon cornstarch ((dissolved in 1 tablespoon boiling water for sealing the spring rolls))
Canola oil ((or peanut or vegetable oil, for frying))
2 teaspoons sugar
2 teaspoons hot water
1 teaspoon Worcestershire sauce
1 tablespoon soy sauce

Steps:

  • Mix the pork with the marinade ingredients and set aside for about 30 minutes. In the meantime, prepare the rest of the ingredients. Cut all of the vegetables to approximately the same size. You want everything the same size so each ingredient blends together.
  • Brown the pork over high heat in 2 tablespoons of oil, and add the garlic, mushrooms and carrots. Stir fry for 30 seconds, and add the bamboo shoots, napa cabbage, and Shaoxing wine. Continue stir-frying for a minute. Adjust the heat to simmer the mixture, as the napa cabbage will release a lot of moisture.
  • Stir in the soy sauce, sesame oil, salt, white pepper, and sugar. At this time, you have the option of adding 1/4 cup of the decanted water from soaking the dried mushrooms. It strengthens the mushroom flavor, so this is purely according to your personal preference. You may also have to simmer the filling longer to reduce the additional liquid.
  • Continue simmering the filling for another 3 minutes--until the napa cabbage is completely wilted--and stir in the corn starch slurry to thicken. How much slurry you add depends upon the wetness of the filling (this varies if your cabbage had more moisture or if you did add the optional mushroom water), but there should be no standing liquid at all.
  • Transfer the filling to a large shallow bowl, and let cool. Place into the refrigerator to cool further-at least one hour. It's best to start with a cold filling for easier wrapping. The key to wrapping spring rolls is making sure that they're tight, yet not overstuffed. It's best to use fresh spring roll wrappers if you can, as freezing the wrappers can result in the spring roll skin being a bit too damp.
  • Place the wrapper on a flat surface so that a corner is facing toward you. Use about two spoonfuls of the mixture per spring roll, and spoon it about 2 inches from the corner that is closest to you. Roll it over once, and, like you're making a burrito, fold over both sides. Continue rolling it into a cigar shape. With your fingers, brush a bit of the cornstarch water onto the corner of the wrapper that is farthest from you to seal it.
  • In case you're wondering, we did try egg wash instead of the cornstarch mixture to seal the spring roll but the egg wash "stains" the spring roll, so it's best to use the cornstarch mixture.
  • Place each roll on a tray. This recipe makes about 18-20 spring rolls. You can also freeze these spring rolls on the tray overnight, and transfer them to a zip-lock bag when they are completely frozen for future use. We usually fry some fresh and freeze the rest, unless we are hosting a party, in which case, these go like hot cakes!
  • To fry the spring rolls, fill a small pot (which requires less oil) with oil until it's 2 to 3 inches deep. Heat the oil slowly over medium heat until it reaches 325 degrees. Gently add the spring rolls one at a time, frying in small batches. Carefully roll them in the oil so they cook evenly until golden brown and transfer them to a plate lined with paper towels.
  • Prepare the dipping sauce by adding all ingredients to a small sauce pan. Mix and heat until just simmering and pour into a small bowl. Serve the spring rolls hot with the dipping sauce!

SPRING ROLL RECIPE

Spring Roll recipe image

Recipe video above. Everybody's favourite Spring Rolls, made at home! Nothing like the ones at suburban Chinese takeout joints with unidentifiable mushy fillings and overly greasy. These are shatteringly crisp and golden, just like they should be, and you will actually be able to taste the filling!

Provided by Nagi

Categories     Starter

Time 30m

Number Of Ingredients 20

1 tbsp oil
2 garlic cloves (, finely chopped or minced)
400 g / 13 oz pork mince ((ground pork), or chicken or turkey)
6 dried shiitake mushrooms soaked in boiling water OR 8 fresh ((Note 1))
1 1/2 cups shredded carrot ((1 large or 2 small))
1 1/2 cups (heaped) bean sprouts
1 1/2 cups (packed) shredded green cabbage ((any type is fine))
1 tsp cornflour / cornstarch
1 1/2 tbsp Oyster Sauce
2 tsp soy sauce ((light or all purpose is best, dark is also ok))
15 - 20 spring roll wrappers, defrosted (21.5 cm / 8" squares) OR 35 - 40 small spring roll wrappers (Note 2), or Egg Roll wrappers to make Egg Rolls (Note 6)
2 tsp cornflour (for sealing rolls)
1 tbsp water (for sealing rolls)
Oil for frying (I use vegetable) OR oil spray for baking (I use canola)
2 tsp cornflour/ cornstarch
2 tbsp water
½ cup apple cider vinegar
1/3 cup brown sugar ((adjust to taste))
2 tbsp tomato ketchup
2 tsp soy sauce

Steps:

  • Heat oil in a skillet or wok over high heat. Add garlic, stir quickly, then add pork. Cook, breaking it up as you go, until it turns white.
  • Add carrot, bean sprouts, cabbage and mushrooms. Cook for 3 minutes or until vegetables are wilted. Add cornflour, soy sauce and Oyster sauce, cook for 1 minute until the liquid is gone. The Filling should not be watery, it should be kind of sticky (watery filling = soggy spring rolls = ? ).
  • Cool Filling (super speedy: spread on tray, refrigerate 5 minutes). (Hot filling = spring rolls burst open = ? )
  • Mix cornflour and water in a small bowl (for sealing the rolls).
  • Carefully peel off one spring roll wrapper, keep the others covered under a damp tea towel.
  • Place the wrapper with the SMOOTH SIDE DOWN (Note 3) in a diamond position. Place a very heaped dessert spoon of filling on the bottom. Roll up halfway, fold sides in, then finish rolling. Use cornflour sludge to seal. (Watch VIDEO below). They should be about 12 cm / 5" long, 2.5cm / 1" wide once wrapped.
  • Pour enough oil in a wok or large saucepan (Note 4) so it is double the height of the spring rolls. Heat on medium high until hot - stick a bamboo chopstick or wooden spoon handle in, if rapid bubbles appear, then it's hot enough.
  • Carefully place spring rolls in the oil (about 4 - 5 at a time) and cook, turning occasionally, until deep golden - around 1 1/2 - 2 minutes. Transfer to paper towels to drain.
  • Repeat with remaining spring rolls. Serve while hot with Sweet and Sour Sauce!
  • Place spring rolls on a rack and place the rack on a tray. Spray very generously with oil all over (use canola or other natural oil). Bake at 200C/400F (standard) or 180C/350F (fan / convection) for 20 to 25 minutes until golden and crispy - no need to turn.
  • Combine ingredients in a small saucepan over medium heat. Bring to simmer, stirring regularly, then simmer until it thickens to taste (about 3 - 5 minutes).

SPRING VEGETABLES WITH WARM VINAIGRETTE

Spring Vegetables with Warm Vinaigrette image

Provided by Food Network Kitchen

Categories     side-dish

Time 45m

Yield 8 servings

Number Of Ingredients 11

Kosher salt
3 bunches baby carrots (about 24)
3 bunches spring onions (about 15)
3 bunches asparagus (about 3 pounds)
5 tablespoons extra-virgin olive oil
2 teaspoons sugar
Freshly ground pepper
2 tablespoons white wine vinegar
1 tablespoon dijon mustard
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill

Steps:

  • Bring a wide pot of salted water to a boil. Trim the baby carrots, leaving just 1/2 inch of the green tops, then peel and halve lengthwise. Trim the spring onions, removing the root and all but 2 inches of the tops, and halve lengthwise. Snap or cut off the tough ends of the asparagus and peel the bottom half of each. Cut each spear in half crosswise (or into thirds, if long).
  • Fill a large bowl with ice water. Add the carrots to the boiling water; cook until crisp-tender, about 6 minutes. Transfer with a slotted spoon to the ice bath to cool, then remove to a colander to drain. Add the spring onions to the boiling water; cook until crisp-tender, about 3 minutes, then cool in the ice water and remove to the colander. Repeat with the asparagus, cooking about 3 minutes. Pat the vegetables dry with a clean towel. (The vegetables can be prepared up to this point several hours ahead; cover and refrigerate.)
  • Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the spring onions; sprinkle with the sugar, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring once or twice, until golden brown, about 3 minutes. Reduce the heat to medium; push the onions to one side of the skillet. Add the vinegar, mustard and 1/4 cup water to the other side of the skillet, whisking to combine; bring to a simmer and cook until thickened, 2 minutes. Toss with the onions. Remove from the heat and let cool slightly.
  • Add the carrots, asparagus, parsley and dill to the skillet; toss to combine.

CRISPY POTATO SPRING ROLLS WITH TUNA SUSHI IN A LEMON THYME VINAIGRETTE

Crispy Potato Spring Rolls with Tuna Sushi in a Lemon Thyme Vinaigrette image

Provided by Food Network

Categories     appetizer

Time 1h30m

Yield 20 pieces

Number Of Ingredients 14

1 cup lemon juice
1 teaspoon ground pink peppercorns
1/2 teaspoon white pepper
1 teaspoon sea salt
1/2 cup honey
1 1/2 cups olive oil
1/2 bunch lemon thyme
1 pound Yukon Gold potatoes, peeled and cut into 1/2-inch dice
Olive oil
Salt and pepper
1 ounce julienne of sun dried tomatoes
4 green onions, green parts only, cut into 5-inch long pieces
4 12-inch rice paper wrappers
3 ounces #1 Sushi Grade Yellowfin Tuna, cut into 5-inch long bars

Steps:

  • Make the vinaigrette: In a bowl, whisk together lemon juice, pink pepper, white pepper, and salt. Whisk in honey. Drizzle in olive oil in a slow stream to emulsify. This is a temporary emulsification and needs to be whisked just before serving.
  • In a heated pan with olive oil saute the potatoes. Season with salt and pepper. Cover the pan and roast until potatoes are tender. Add sun dried tomatoes to the pan. Transfer mixture to a bowl. With a hand-held masher, mash the mixture until fluffy. Check for seasoning. Place the potatoes mixture into a pastry bag fitted with a round tip.
  • To hydrate the rice paper wrappers, fill a large bowl with warm water. Place the wrappers in water for about 3 minutes until soft.
  • Remove one wrapper at a time from the water, lay out on a flat surface, and blot with a paper towel. Pipe a 5-inch strip of mashed potatoes in the center of the wrapper. Lay a tuna bar and a piece of scallion evenly next to the potato. Roll into a spring roll.
  • In a very hot pan with oil saute the spring rolls quickly, browning all sides. Cook on very high heat, making sure not to cook the tuna.
  • Cut each spring roll into 5 pieces. Brush with olive oil. Drizzle with the vinaigrette and serve immediately.

Fresh Lobster Spring Rolls With Lime-Ginger Vinaigrette image

Another recipe from Hawthorne House restaurant in SF. I will use shrimp with these since i cant bring myself to cook a live lobster lol

Provided by MarraMamba

Categories     Lunch/Snacks

Time 41m

Yield 10 rolls

Number Of Ingredients 21

1 (1 1/2 lb) fresh lobsters, about 1-1/2 lbs. cooked
1 head butter lettuce
1 small carrot
1/2 cucumber
20 basil leaves
20 fresh cilantro stems
40 garlic chives
20 mint leaves
1/4 cup toasted peanuts, chopped coarsely
15 pieces rice paper sheets
1 -4 cup rice wine vinegar
1 egg yolk
1 teaspoon water
1 cup peanut oil
1/2 cup fresh cilantro
basil, and
mint leaf, loosely packed
2 tablespoons rice wine vinegar
1 lime, juice of
1 tablespoon minced fresh ginger
to taste salt and pepper

Steps:

  • prepare the vinaigrette:.
  • Place the egg yolk and water into the workbowl of a food processor and turn it on. Slowly add half of the oil then add the herbs and ginger then puree until the mixture becomes smooth. Add the vinegar then add the remainder of the oil. Finish with the lime juice then season to taste with salt and pepper.
  • prepare the rolls:.
  • Remove the lobster meat from the shell and dice into 1/2 inch pieces. Keep chilled.
  • Peel the carrot and wash the cucumber. Cut the cucumber in half lengthwise and scoop out the seeds. Cut both the carrot and cucumber into thin julienne and reserve. Prepare the herb leaves by washing and spinning dry.
  • Separate, wash and dry the leaves from the lettuce, discarding the dark green outer leaves. You will need one leaf for each roll. Lay the leaves down, concave side up on a clean work surface and assemble the remaining ingredients in each leaf starting with the herbs and finishing with the lobster and peanuts.
  • Heat a 5 quart pot of water to a boil and add 1/4 cup rice wine vinegar. Dip a rice wrapper into the water for a second or two then lay out onto a damp towel. After it becomes soft, place the lettuce cup into the center and roll into a cylinder, tucking the ends in before the final roll.
  • Chill well then slice the hard ends off and cut each roll into six equal slices. Drizzle the vinaigrette over the top and serve.
