ANISE COOKIES (SPRINGERLE)

Anise Cookies (Springerle) image

This is a 100 year old recipe from Germany. I use it every Christmas. Its traditionally served with black coffee to dunk the cookie in. I prefer to eat them when they are still warm as the lemon flavor and the anise is a wonderful combination and the lemon is stronger at that time.

Provided by Judy

Categories     World Cuisine Recipes     European     German

Yield 25

Number Of Ingredients 6

4 eggs
4 cups confectioners' sugar
2 teaspoons lemon zest
4 ½ cups cake flour
1 teaspoon baking powder
4 drops anise oil

Steps:

  • In a large bowl, beat the eggs and sugar until very light and fluffy. Stir in the anise oil and lemon zest. Add the flour and baking powder; mix until well blended. Cover and chill dough for 3 to 4 hours.
  • On a lightly floured surface, roll out the dough to 1/4 to 1/8 inch thickness. Use a springerle rolling pin or board to make the designs. Cut into 1 1/2 inch rectangles, place onto a cookie sheet, and let them sit out overnight, uncovered, in a cool dry place.
  • The next morning, preheat the oven to 350 degrees F (175 degrees C). Bake the cookies for 15 to 20 minutes. Do not let the cookies brown. Allow cookies to cool, and store in an airtight tin for 1 week to blend the flavors.

SPRINGERLE COOKIES

Springerle Cookies image

Use these intricately molded cookies to dramatize the sides of a layer cake; for additional wow factor, apply a tinted glaze.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Yield Makes 4 to 5 dozen

Number Of Ingredients 11

Pure lemon extract
Luster or petal dust, for decorating
1/2 teaspoon baking powder
2 tablespoons whole milk
6 large eggs, room temperature
6 cups sifted confectioners' sugar, plus more for dusting and surface
4 ounces (1 stick) unsalted butter, softened
1/2 teaspoon salt
1 teaspoon anise extract
1 teaspoon finely grated lemon zest
9 cups sifted cake flour, plus more for dusting and surface

Steps:

  • Dissolve baking powder in milk in a small bowl. Whisk eggs with a mixer on high speed until very thick and pale, about 10 minutes. With machine running, slowly add sugar, beating until smooth and creamy. Add butter, 1 tablespoon at a time, beating after each addition. Beat in milk mixture, salt, anise extract, and lemon zest until just combined.
  • Reduce speed to medium-low. Add 6 cups flour, 1 cup at a time, mixing well after each addition. Remove bowl from mixer, and stir in remaining 3 cups flour, 1 cup at a time, until flour is incorporated and dough is stiff.
  • Transfer dough to a floured surface, and knead until dough is smooth and not sticky, adding more flour if necessary. Divide dough into 4 pieces, and wrap in plastic wrap.
  • Dust surface and springerle mold with confectioners' sugar. Roll out 1 disk of dough at a time to a 1/4- to 3/8-inch thickness (deeper molds will need thicker dough). Cut a piece of dough about the size of the mold. Press mold firmly into dough, flip over, and gently roll over dough with rolling pin. Flip over, and press onto a parchment-lined baking sheet. Using a knife, trim excess dough from sides of mold. Gently coax dough out of mold with fingertips and onto baking sheet. Repeat, spacing cookies 1 inch apart, and placing same-size cookies on same sheet. Let stand, uncovered, for 24 hours.
  • Preheat oven to 220 degrees. Bake cookies, 1 sheet at a time, until completely dry, about 1 hour. (They should not color; reduce oven temperature to 200 degrees if cookies start to color.) Let cookies cool on sheets on wire racks. Cookies will keep, unglazed and covered, for up to 2 to 3 weeks.
  • Make the glaze: Mix lemon extract and a pinch of luster or petal dust in a small bowl, adding more dust as needed to get desired color. (You will need only a little dust; the mixture should remain runny). Using a very fine paintbrush, brush the tinted extract onto the flat portion of each cookie around the relief. Using a clean, damp paintbrush, remove smudges. Mix additional extract and luster or petal dust in 1/2 teaspoon increments as needed.

GERMAN/SWABIAN SPRINGERLE COOKIES

German/Swabian Springerle Cookies image

This springerle holiday cookie recipe from Switzerland, Austria, and Germany has a long history as an anise-flavored biscuit with imprinted pictures.

Provided by Jennifer McGavin

Categories     Dessert     Snack

Time P1DT1h20m

Yield 60

Number Of Ingredients 8

4 large eggs
5 cups/500 grams confectioners' sugar (sifted)
1/4 teaspoon ammonium carbonate (hirschhornsalz)
2 tablespoons Kirschwasser
Clear liquid flavorings (to taste)
4 cups/500 grams all-purpose flour
Cornstarch (for cookie molds)
Whole anise (or ground anise, for cookie sheet)

Steps:

  • Using a whisk and a large bowl, beat the eggs until light yellow, thickened and foamy.
  • Add the confectioners' sugar a spoonful at a time and beat for 10 minutes.
  • Dissolve the ammonium carbonate in the Kirschwasser. Add any clear liquid flavorings of your choice at this time.
  • Mix the liquids into the confectioners' sugar mixture and beat another 10 minutes.
  • Mix the flour in a spoonful at a time. The dough should be about as soft as sugar cookie dough before it is refrigerated. If it is too stiff, mix in a little more liquid.
  • Knead lightly into a smooth ball, wrap in plastic foil, and refrigerate for 1 to 2 hours.
  • Lightly dust a wooden board or work surface with sugar or cornstarch and, using about 1/4 of the dough, roll it to just under 1/2-inch thick. Keep the rest of the dough covered so it does not dry out. Use a springerle rolling pin or various cookie molds to imprint cookies. Place the mold over the area you want to be imprinted, and bear down hard on the dough.
  • Cut out the imprinted shapes using a knife, a small roller cutter, a biscuit cutter, or a cutter designed for your cookie mold.
  • Lay the cookies on a baking sheet or wooden board that has been lightly dusted with sugar or cornstarch. Let dry right side up for 24 to 48 hours.
  • Before baking, wet the bottom of the cookies by laying them on a clean, moist kitchen towel.
  • Sprinkle anise on a parchment-lined baking pan and set the cookies on top.
  • Bake at 300 F/150 C for 10 minutes, then lower the temperature to 280 F/140 C and bake for another 10 minutes, until the underside starts to gain color. Try not to let the tops brown.
  • Remove and cool. When cool, you can paint them with food coloring. In earlier times, they even used gold leaf to decorate some of these cookies.
  • Store the cookies in a covered container with a slice of apple to keep them moist, and enjoy.

SPRINGERLE COOKIES (ANISE COOKIES) RECIPE

Springerle Cookies (Anise Cookies) Recipe image

Provided by á-2338

Number Of Ingredients 5

4 large eggs
2 cups granulated sugar
1 teaspoon anise extract or 4 tablespoons Anise Seed
4 cups cake flour
1 teaspoon baking powder

Steps:

  • Beat eggs till light, gradually add sugar and continue beating at a high speed until batter is thick and lemon colored. Add anise. Sift flour and baking powder and blend with egg mixture at a low speed. Cover bowl with wax paper or foil and let stand 15 minutes so dough is easier to work with. Divide into thirds. On lightly floured surface roll dough to 8 inch square, a quarter inch thick. Let rest 1 minute. Flour mold and press design, cut around design and place cookie on greased cookie sheet. Cover with a towel all night (or make sure that cookies sit at least 12 hours before baking). Brush off excess flour from the cookies. Bake 15 minutes at 300 degrees. Cookies will brown on bottom, but on top as they bake. Cookies will rise, but not spread during baking. Store cookies in a tight container, place a cut apple in the jar if cookies become too hard. Lemon or almond flavoring could be substituted for anise. After cookies have cooled the design can be painted with food coloring and a fine brush, by punching a hole at the top of each cookie before they are baked, one can insert colorful ribbon and hang on Christmas tree as traditionally done.

  • Preheat oven to 220°F. Bake cookies, 1 sheet at a time, until completely dry, about 1 hour. They will not take on any color. Transfer to wire racks to cool. Cookies can be stored in airtight containers at room temperature up to 3 weeks.
  • HOW TO FORM SPRINGERLE
  • To make springerle, dough is rolled out on a work surface dusted with confectioners' sugar, a mold is pressed into the dough, and the excess is trimmed away.
