HOW TO MAKE HOMEMADE SRIRACHA SAUCE

How to Make Homemade Sriracha Sauce image

Not only is making your own hot sauce (also known as rooster sauce) at home possible, it's really fun and there's hardly any work involved. Serve it on just about anything.

Provided by Chef John

Categories     Side Dish     Sauces and Condiments Recipes

Time P3DT35m

Yield 24

Number Of Ingredients 7

1 pound red jalapeno peppers, stems cut off
½ pound red serrano peppers, stems cut off
4 cloves garlic, peeled
3 tablespoons light brown sugar
1 tablespoon kosher salt
⅓ cup water
½ cup distilled white vinegar

Steps:

  • Chop jalapeno and serrano peppers, retaining seeds and membranes, and place into a blender with garlic, brown sugar, salt, and water. Blend until smooth, pulsing several times to start.
  • Transfer puree into a large glass container such as a large jar or pitcher. Cover container with plastic wrap and place into a cool dark location for 3 to 5 days, stirring once a day. The mixture will begin to bubble and ferment. Scrape down the sides during each stirring. Rewrap after every stirring and return to a cool, dark place until mixture is bubbly.
  • Pour fermented mixture back into blender with vinegar; blend until smooth. Strain mixture through a fine mesh strainer into a saucepan, pushing as much of the pulp as possible through the strainer into the sauce. Discard remaining pulp, seeds, and skin left in strainer.
  • Place saucepan on a burner and bring sauce to a boil, stirring often, until reduced to your desired thickness, 5 to 10 minutes. Skim foam if desired.
  • Remove saucepan from heat and let sauce cool to room temperature. Sauce will thicken a little when cooled. Transfer sauce to jars or bottles and refrigerate.

QUICK-MARINATED SKIRT STEAK WITH SRIRACHA POTATOES AND SPINACH

Quick-Marinated Skirt Steak With Sriracha Potatoes and Spinach image

Roasted potatoes are pretty delicious, but they're even better when you douse them with spicy mayo and a shower of bonito flakes. Served here with steak and spinach.

Provided by Rhoda Boone

Categories     Potato     Kid-Friendly     Quick & Easy     Dinner     Steak     Spinach     Soy Sauce     22-Minute Meals     Sugar Conscious     Dairy Free     Peanut Free     Tree Nut Free     Kosher     Small Plates

Yield Serves 4

Number Of Ingredients 12

1 pound small fingerling potatoes, halved lengthwise
5 tablespoons vegetable oil, such as grapeseed, divided
3/4 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
1/4 cup plus 1 tablespoon soy sauce, divided
1/4 cup hot chile paste, such as sambal oelek
1 1/2 pounds skirt steak, cut into four equal-sized pieces
1/4 cup chicken or vegetable broth
1 1/2 pounds spinach, trimmed if needed
3 tablespoons mayonnaise
1 tablespoon Sriracha paste
Bonito flakes, for serving (optional)

Steps:

  • Place a rimmed baking sheet in oven and preheat oven to 450°F.
  • In a large bowl, toss potatoes with 1 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Spread in a single layer on pre-heated baking sheet, and roast until golden brown and tender, tossing halfway through, about 20 minutes.
  • In a medium bowl, whisk together 2 tablespoons oil, 1/4 cup soy sauce, chile paste, and 1/4 teaspoon each salt and pepper. Add steaks, turning to coat them in the marinade, and let stand at room temperature for 5 minutes.
  • Meanwhile, heat a large cast-iron skillet over medium-high heat. Add 2 tablespoons oil and let oil heat briefly. Working in batches if necessary, sear steaks until medium rare, 3 to 4 minutes per side. Remove steaks from skillet and transfer to a cutting board or plate to rest, reserving skillet.
  • Add broth and remaining 1 tablespoon soy sauce to skillet over medium-high heat, scraping bottom of skillet to deglaze the pan. Add spinach to the skillet and cover; cook until wilted, about 3 minutes.
  • In a medium bowl, mix mayonnaise and sriracha. Divide spinach among four plates and top with steak; serve potatoes alongside, drizzled with sriracha mayo and garnished with bonito flakes, if desired.

SRIRACHA CARNE ASADA

Sriracha Carne Asada image

Skirt steak is a chef's best friend. Besides cooking up fairly quickly, it's got a great flavor and a price tag that shouldn't break the bank. However, I've found that traditional supermarkets sometimes charge substantially higher for it than Latino markets and carnicerias, so shop savvy-especially if you plan on cooking for a larger crowd. Use the carne asada in tacos, burritos, or tortas, or atop a piping hot plate of nachos. diced onions, chopped cilantro, lime wedges, sliced radishes, and, of course, more Sriracha make excellent toppers

Yield makes 6 to 8 servings

Number Of Ingredients 12

6 cloves garlic
1 large onion, diced
1 small jalapeño
1/2 cup chopped fresh cilantro
2 tablespoons kosher salt
Juice of 3 limes
Juice of 2 oranges
Juice of 1 lemon
1/3 cup Sriracha
1/4 cup tequila
1/4 cup olive oil
4 pounds skirt steak or flank steak, 1/2-inch thick

Steps:

  • In the bowl of a food processor, combine the garlic, onion, jalapeño, cilantro, and salt and pulse until finely minced. Add the citrus juices, Sriracha, tequila, and olive oil, pulsing until combined. Place the meat in a large bowl or resealable plastic bag, and pour the marinade over, tossing lightly to coat the meat evenly. Refrigerate, covered, for at least 4 hours, preferably overnight.
  • Preheat the grill or broiler to high heat. Brush the grill lightly with oil. Cook the steaks until they reach medium-rare, 4 to 5 minutes per side. Cover with foil and allow the meat to rest for several minutes. Once the meat has rested, slice the steaks against the grain into strips, or chop into a smaller dice.
  • If your mouth really craves a beating, serve up a huge platter of these tacos topped with a bit of Sriracha Sour Cream (page 24) and wash them down with a tall, icecold Srirachelada (page 105).
