RACH'S STEAK QUESADILLAS = TONIGHT'S TEX-MEX MEAL



Rach's Steak Quesadillas = Tonight's Tex-Mex Meal image

Thinly sliced sirloin steak or flank steak makes the best steak quesadillas.

Number Of Ingredients 35

1 pound thin sirloin steaks (½ inch thick each)
or 1 pound flank steak
2 jalapeño or serrano chiles
thinly sliced and seeded (for less heat) or chopped with seeds and membranes (for more heat)
½ small red onion
finely chopped
2 limes
juiced (about ¼ cup)
4 cloves garlic
grated
Salt
2 tomatoes on the vine
seeded and chopped
One handful fresh cilantro leaves with tender stems
finely chopped
Cayenne hot sauce (Rach's go-to is Frank's RedHot)
1 large Haas avocado
coarsely chopped
Pepper
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon chili powder (Rach likes Gebhardt)
3 tablespoons neutral-flavored oil
1 white or yellow onion
chopped
1 bell pepper (any color)
seeded and chopped
¼ cup drained mild or hot pickled jalapeño slices
4 large (10-inch) flour tortillas
Cooking spray
2 cups shredded Mexican cheese blend
pepper Jack
or Monterey Jack
Mexican crema or sour cream
for serving

Steps:

  • Freeze the steaks until slightly firm, about 5 minutes
  • Heat a large cast-iron skillet over medium-high to high
  • In 2 medium bowls, divide the chiles, red onion, and half the lime juice
  • Add a quarter of the grated garlic to each bowl; season with salt
  • Let stand for a few minutes
  • To one bowl, add the tomatoes, some cilantro, and a few dashes of hot sauce for the pico de gallo
  • In the other bowl, using a potato masher or fork, mash in the avocado for the guacamole
  • Thinly slice the steaks against the grain; season with salt, pepper, and the spices
  • Add 2 tablespoons oil, two turns of the pan, to the skillet
  • Add the beef in a single layer and cook until brown and crispy, 2 to 3 minutes
  • Turn the beef over and cook until browned, about 2 minutes more
  • Transfer to a plate
  • Add the remaining 1 tablespoon oil, one turn of the pan, to the skillet
  • Add the white onion, bell pepper, and pickled jalapeños and cook, tossing occasionally, until crisp-tender, 3 to 4 minutes
  • Add the remaining garlic and lime juice; season with salt and pepper
  • Mix in the beef and remove from heat
  • Heat a nonstick skillet over medium
  • Spray 1 tortilla lightly with cooking spray and add to the skillet, sprayed-side down
  • Scatter a quarter of the cheese on top
  • Arrange about a quarter of the beef and vegetables on 1 side of the tortilla
  • Fold the tortilla over the filling and cook, turning once, until golden and crispy, 1 to 2 minutes per side
  • Repeat with the remaining tortillas, cheese, beef, and vegetables
  • Cut the quesadillas into wedges
  • Serve with the crema, guacamole, and pico

2 tablespoons olive oil

1 teaspoon chili powder
1 teaspoon cumin
1 onion, sliced
4 cloves garlic, sliced
3 bell peppers, sliced
1 jalapeño pepper, sliced
1 tablespoon butter
4 large tortillas
2 cups mexican blend cheese
guacamole
sour cream
salsa

Steps:

  • Season skirt steak with olive oil, salt, pepper, chili powder, and cumin.
  • Cook on high heat for roughly 3 minutes each side, for medium-rare.
  • Let the steak rest for 10 minutes.
  • While the steak is resting, sauté onion and garlic until slightly translucent. Add bell peppers, jalapeño, salt, and pepper, cook slightly.
  • Slice the steak into strips.
  • Mix the steak into the pepper mix. Remove from heat and set aside.
  • In a clean pan, melt butter. Lay the tortilla on the buttered pan, add cheese, fajita mixture, more cheese, then top with another tortilla and pat it down.
  • Flip the quesadilla over and cook the other side until it's golden.
  • Remove from pan and cut into quarters or eighths. Repeat these steps with the remaining tortillas.
  • Serve immediately with sour cream, salsa, and guacamole.

1 can (15 1/2 ounces) black beans, drained and rinsed
1/2 cup cilantro, roughly chopped
2 plum tomatoes, cut into 3/4-inch pieces
1 avocado, halved, pitted, peeled, and cut into 3/4-inch pieces
1 tablespoon fresh lime juice
1/8 to 1/4 teaspoon cayenne
Coarse salt and ground pepper
1 strip steak (8 ounces and 1 inch thick)
1/2 teaspoon dried oregano
3 teaspoons olive oil
4 flour tortillas (10-inch or burrito-style)
1 1/2 cups grated pepper Jack cheese (6 ounces)
1 medium red onion, halved and thinly sliced
1/4 cup reduced-fat sour cream

Steps:

  • In a medium bowl, combine black beans, cilantro, tomatoes, avocado, lime juice, and cayenne; stir to combine. Season with salt and pepper.
  • Rub steak with oregano; season with salt and pepper. In a 10-inch skillet, heat 1 teaspoon oil over high. Add steak to skillet, and cook, turning once, until browned and still rare, 2 to 3 minutes per side. (Steak will cook a little longer in the quesadillas during baking.) Transfer steak to a cutting board; let rest 5 minutes before slicing 1/4 inch thick.
  • Preheat oven to 425 degrees with racks in upper and lower thirds. Brush one side of each tortilla with remaining 2 teaspoons oil. Place 1 tortilla, oiled side down, on each of two baking sheets. Dividing evenly, layer with half the cheese, then onion and steak, ending with remaining cheese. Top with remaining tortillas, oiled side up. Press lightly to seal. Bake, turning over once (with a wide spatula), until lightly browned and crispy, about 5 minutes per side. Transfer to a cutting board; cut each quesadilla into 6 triangles. Serve with black-bean salsa and sour cream.

If you're feeling bold, use both chopped chipotle chiles and their adobo sauce to make these pepper jack quesadillas extraspicy.

1 clove garlic, minced
1/4 teaspoon ground cumin
Juice of half lime
Juice of half orange
Kosher salt
8 ounces cleaned and trimmed skirt steak
Olive oil, for oiling the grill grates
Four 10-inch (burrito size) flour tortillas
2 cups shredded pepper-jack cheese
1 to 2 chipotle in adobo, chopped, plus 1 to 2 tablespoons sauce
2 tablespoons unsalted butter
Guacamole, salsa, chopped scallions and sour cream, for serving

Steps:

  • Preheat an outdoor grill over medium.
  • Whisk the garlic, cumin, lime and oranges juices and 1/2 teaspoon salt together in a medium bowl. Add the steak, coat well in the mixture and let marinade for 10 minutes.
  • Lightly oil the grill grates. Grill the steak, flipping once, until medium rare, 2 to 6 minutes per side depending on the thickness. Remove to a cutting board and let rest 5 minutes. Slice the steak against the grain and reserve.
  • Lay a tortilla on a work surface and top evenly with 1/2 cup pepper-jack cheese. Add 1/4 of the steak and some chopped chipotle in adobo and sauce. Fold the tortilla in half to enclose fillings. Repeat with remaining tortillas and ingredients.

Steps:

  • In a large skillet, heat 2 tsp oil, once hot add the chopped meat. Season with salt and pepper and cook until meat is fully cooked. Remove from skillet and cover to keep warm.
  • Meanwhile, finely chop the onion, dice the mushrooms, and peppers. Sautee vegetables in the same skillet until tender, adding another teaspoon of oil if needed.
  • Add the beef back to the skillet with minced garlic, stir and cook until meat is reheated.
  • Spread mayo (if using) on the tortillas. Divide the filling between the tortillas, adding them to one side of the tortilla. Top the filling with sliced cheese and close the tortilla

14 oz beef shaved steak
4 tbsp butter (divided (or use vegetable oil instead))
2 cloves garlic
2 tbsp chili powder
2 tsp sugar
1 tsp smoked paprika
1/2 tsp red pepper flakes (add more for more spice)
1/2 tsp salt
1/3 cup light beer
1/2 cup sweet onion (sliced)
1 cup red and yellow bell peppers (sliced)
2 cups shredded cheese (Cheddar or Monterey Jack)
12 slices nacho jalapeño peppers
4 large flour tortillas

Steps:

  • In a large, non-stick skillet over medium - high heat, melt one tablespoon of the butter. Add the shaved steak and cook, stirring often, until no longer pink. Remove the steak from the pan, leaving behind the juices.
  • Over medium heat, add a second tablespoon of butter and melt. Add the garlic and cook, stirring often, until fragrant, about one minute.
  • Add the tomato paste, chili powder, sugar, smoked paprika, red pepper flakes and salt. Cook, stirring often, for an additional minute.
  • Stir in the beer and cook for a couple of minutes until smooth. Return the steak to the pan with the sauce and stir to combine and cook for a few minutes until heated through.
  • Remove the steak for the pan, leaving the juices behind. Add the onions and peppers. Cook over medium heat, stirring often, until they are softened, about 6 - 8 minutes.
  • Remove the peppers and onions. Add a bit of butter to the skillet and place a flour tortilla in the skillet on top of the melted butter. Layer half the tortilla with cheese, steak, peppers and onions and sliced jalapeños. Fold the tortilla in half. Grill on both sides until cheese is melted. Repeat with all four tortillas.

2 medium bell peppers
1/2 white onion
3/4 lbs. shaved beef steak
1 tsp. sea salt, divided
1/2 tsp. cumin
1/2 tsp. garlic powder
2 tsp. olive oil
6 oz. shredded cheese, Mexican blend or cheddar
8 flour tortillas

Steps:

  • Prepare ingredients: Dice peppers and onion. Season steak with 1/2 teaspoon of the sea salt and sprinkle with garlic powder and cumin.
  • Heat olive oil in a large nonstick pan over medium heat. Add peppers and onion to pan and season with 1/4 teaspoon salt. Cook, stirring occasionally, for about 5-7 minutes, until vegetables have softened. Set aside and wipe out pan with paper towel.
  • Add remaining 1 teaspoon of olive oil to pan and when hot, add steak to pan. Cook until desired doneness, which will depend on cut of steak. I cooked my shaved beef steak for about 2 minutes per side. Set aside and let rest for 5 minutes.
  • Assemble quesadillas. In large skillet over medium heat, layer in the following order: bottom tortilla, 1/3 cup shredded cheese, 2/3 cup pepper mixture, 1/2 cup steak, 1/3 cup shredded cheese, and top tortilla.
  • Cook for about 2-3 minutes, and when cheese starts to melt, carefully flip over with large flipper and cook for another 2-3 minutes. Repeat with remaining 3 quesadillas.

1 teaspoon olive or vegetable oil
1 cup chopped red onion
Kosher salt and freshly ground pepper (to taste)
1 ½ cups chopped spinach
1 teaspoon seeded minced jalapeno
3 cups thinly sliced and roughly chopped cooked steak
1 teaspoons unsalted butter (divided)
8 8-inch flour tortillas
3 cups (12 ounces) cheese (such as a combo of cheddar and Monterey Jack)
Steak sauce, guacamole, sour cream and salsa (to serve, if desired)

Steps:

  • Heat a large skillet over medium high heat and add the oil. Add the onions, season with salt and pepper, and saute for 4 minutes, until the onions have softened. Add the spinach and jalapeno, and stir for another minute until the spinach has wilted. Remove them to a bowl, and stir in the steak.
  • Wipe out the skillet and return it to medium high heat. Add a half teaspoon of butter, and turn to coat the bottom of the pan. Place a tortilla in the pan. Sprinkle 3 tablespoons of the cheese over half of the quesadilla, and distribute 1/8 of the steak mixture over the cheese. Top that with another 3 tablespoons of the shredded cheese. Flip the bare half of the tortilla over the filling, cover the pan, and sauté for about 2 minutes until the bottom is golden and the cheese has started to melt, then use a spatula to flip the half-moon quesadilla, and continue to cook, uncovered, until all of the cheese is melted and the underside is browned, 2 to 3 minutes.
  • Remove the quesadilla to a cutting board and let the quesadilla sit for a minute before you slice into 2 or 3 wedges. Repeat until all of the quesadillas are cooked. Serve with steak sauce, guacamole, salsa and sour cream, as desired.

Quesadillas are one of the easiest camping dinner ideas, and of course, they're delicious. Who doesn't love melted cheese held together with a slightly crispy tortilla? So good. These steak and pepper quesadillas are my favorite way to change up a classic cheese quesadilla recipe.

1/2 pound of thin-cut steak (I use top sirloin)
1 large bell pepper (red or green)
1/2 yellow onion
8-10 oz sharp cheddar cheese, shredded
5 flour tortillas
butter for cooking steak
salt and pepper
sour cream

Steps:

  • Add about 1 Tbsp of butter or oil to the cast iron pan over medium-high heat and sear the steak on both sides for about 3 minutes to develop some color on both sides.
  • Remove the steak from the pan, and let it rest covered in foil or with another plate while you cook the veggies.
  • Dice the pepper and onion.
  • Add a little butter or oil to the cast iron pan over medium heat and saute the veggies with a pinch of salt and pepper until they soften and develop a little browning on the edges. This should take about 5 minutes, stirring occasionally.
  • Once the veggies are just about done, cut the steak into bite-sized pieces, and add it to the peppers in the pan. Cook everything together for a few minutes. Remove the peppers and steak from the pan and set aside.
  • Now it's time for assembly. Place half of your flour tortilla onto the pan and sprinkle that half with cheese.
  • Layer on some of the pepper and steak mix, and a little more cheese to bind everything together.
  • Fold over the other half of the tortilla. Cook over medium-low heat for a few minutes on each side to melt the cheese and develop a slight golden brown on the tortilla.
  • Remove from the pan, slice into wedges, and serve with sour cream. Enjoy!

Flour tortillas filled with cheese and a mixture of steak, jalapenos and onions. Then cooked until tortillas are crispy and the filling melts to godness!

1 lb beef loin (cut into thin strips)
½ tsp garlic powder
½ tsp ground cumin
½ tsp pepper
1 Tbsp chipotle powder (or smoked paprika)
1 large white onion (sliced)
3 large jalapeño peppers (veins and seeds removed, sliced)
2 Tbsp vegetable oil
salt
6 flour tortillas (read notes)
2 ½ cups grated melty cheese (Oaxaca, asadero, monterey jack, mozzarella, etc.)
vegetable oil (as needed)
guacamole salsa
molcajete salsa

Steps:

  • Place steak in a medium bowl. Add garlic, cumin, pepper, chipotle or paprika powder, and salt. Add oil and mix to coat well the meat.
  • Cover and allow to marinate for 20 minutes.
  • Heat a non-stick pan (or comal) over medium heat. Cook meat stirring constantly until no longer pink but there are still liquids in the pan.
  • Add onions and jalapeño peppers, a splash of water and cook stirring constantly for about 10 minutes or until meat is browned and onions are soft and translucent. Cover and set aside.
