4 (8-ounce) New York strip sirloin steaks
Steak seasoning
8 ounces clarified butter
12 raw shrimp, skewered (3 on each skewer)
16 ounces raw French fries
Salt
4 lemon wedges, for garnish

Steps:

  • Preheat a grill to high. Alternatively, preheat a broiler to high. Season the steaks liberally with the steak seasoning on both sides. Cook the steaks over high heat to order: about 2 minutes on each side for rare, 2 1/2 minutes on each side for medium-rare, 3 1/2 minutes on each side for medium, and 4 1/2 minutes on each side for medium well. Halfway through the cooking time on each side, turn each steak 45 degrees to make grill marks.
  • Add half the clarified butter to a large skillet and heat over high heat. Add the shrimp skewers and cook the shrimp on both sides until they are opaque throughout, about 1 to 2 minutes per side.
  • Fill a deep fryer with oil and heat it to 350 degrees F. Alternatively, heat oil in a large, heavy Dutch oven to 350 degrees F; do not fill pan more than halfway full with oil. Drop the fries into the fryer and cook until they are golden brown, about 5 minutes. Remove to a paper towel lined plate to drain and season the fries with salt.
  • To serve, place 1 steak on a plate, top the steak with skewered shrimp, and add some French fries. Garnish with a lemon wedge and serve with a small dish of clarified butter on the side. Serve immediately.

1 tbsp olive oil
x braising steaks , trimmed of fat
2 garlic cloves , crushed
1 onion , thinly sliced
4 tomatoes , thinly sliced
2 large potatoes , peeled and thinly sliced

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Drizzle half the oil into a small casserole or pie dish and rub all over, then place one steak inside. Scatter over some of the garlic, followed by a layer of onion and tomatoes, then a layer of potatoes on top. Season, then repeat the layers, finishing with the potato.
  • Drizzle with the remaining oil and then cover the casserole with a tightly fitting lid or cover the pie dish with a double layer of foil. Transfer to the oven for 2 hrs. Remove the lid or foil, turn the oven up to 220C/fan 200C/gas 7 and cook for 30 mins more until the top is golden brown. Serve with some green vegetables.

4 cube steaks
3 tablespoons oil
4 slices French bread
1/2 cup chili sauce or 1/2 cup ketchup
1/3 cup water
2 tablespoons Worcestershire sauce
1 tablespoon lemon juice
2 teaspoons prepared mustard

Steps:

  • Mix flour and salt.
  • Coat steaks.
  • In skillet, heat oil and cook steaks until browned on both sides.
  • Place each steak onto a piece of bread and keep warm.
  • Into drippings in pan, stir in chili sauce,water, Worcestershire sauce, lemon juice and mustard.
  • Stir to mix well and heat to boiling.
  • Spoon sauce over steaks.
