STEAMED COD OR SEA BASS SALAD WITH RED PEPPERS, CILANTRO AND MINT
This refreshing combination has Middle Eastern overtones, though in the Middle East the fish would probably be fried or poached. Serve it as a first course or as a light main dish. Pacific sea bass or Pacific cod are the most environmentally friendly types of fish to use here.

Steps:
- Steam the fish above 1 inch boiling water for 5 to 7 minutes, until the fish pulls apart into large flakes easily when you poke it with a fork. Remove from the heat and transfer to a colander set in the sink. Allow to cool, then remove any bones and transfer to a large bowl. Toss with half the chopped herbs.
- Place the garlic in a mortar and pestle with a generous pinch of salt and mash to a paste. Add the cumin, work in the olive oil with the pestle and season to taste with salt and pepper.
- Toss the fish with the dressing, the red pepper and the olives. Taste and adjust seasoning. Add the remaining cilantro and mint shortly before serving and toss together.

CORN, ROASTED RED PEPPER AND CILANTRO SALAD
This festive summer salad, filled with vibrant flavors, gets bonus points for using up leftover corn on the cob. We suggest using grilled or roasted corn but steamed or boiled works, too.

Steps:
- For the dressing: Add the oil, vinegar, honey and lime juice to a deep bowl. Whisk to combine.
- For the salad: Add the corn, peppers, shallot and cilantro to the bowl. Stir with a spoon until well mixed. Season with salt and pepper. Let sit at room temperature for 10 minutes before serving so the flavors can marinate. May be made up to 1 day in advance and stored in a covered container in the fridge until ready to serve.
- Make it a Meal: Add some grilled shrimp to this salad for a quick and easy one-bowl meal ready in just about 10 minutes.

Steps:
- In small bowl, whisk together olive oil, lemon juice, Mediterranean oregano, (pinch or rub dried oregano to release more flavor) lemon herb seasoning, garlic powder, turmeric, paprika and pepper to make the dressing.
- Put garbanzo beans in colander and rinse well with cold water, let drain. Pat dry with paper towels if needed so the beans are relatively dry.
- Put the drained & dried beans into a bowl and mix in a quarter of the dressing. Let beans marinate while you prep the other ingredients.
- Wash the cilantro and parsley, spin dry, and finely chop. (You can use just parsley if you are not a cilantro fan.) Chop the red pepper and red onion. Chop roasted red pepper and peperoncini. Blot the sun dried tomatoes with paper towel to remove excess oil then chop.
- Drain oil from tuna and discard. Put tuna in mixing bowl and break apart with a fork a little, keeping it slightly chunky. Add the marinated beans and dressing, red pepper, red onion, sun dried tomatoes, roasted red pepper and peperoncini, chopped cilantro and parsley and combine gently. (Don't over-mix.).
- Mix additional dressing into salad. If you prefer your salads a little more dry you may not want all the dressing. Chill in refrigerator for 30 minutes to meld flavors. Season to taste with more fresh ground black pepper and sea salt and serve.

AJOARRIERO - SPANISH SALT COD AND RED PEPPER SALAD
According to Nancy Harmon Jenkins, you might eat a plainer version of this (just fish, peppers and oil and vinegar) in the Catalan, but in Madrid restaurants, you might get it this way. Almost all the time is soaking time for the cod and marinating time for the salad. If you have to take a shortcut, you can use good quality sweet peppers from a jar. You can also use a combination of red, yellow or orange peppers for effect, but the red are traditional.

Steps:
- Prepare the salt cod.
- Soak the fish for at least 24 or as much as 48 hours, changing the water three to four times each day.
- When the cod has softened, remove any skin and bones.
- Shred the fish, tearing it into thin strips with your hands.
- Prepare the peppers.
- Char the peppers over an open flame (If you don't have a grill or a gas stove, you'll have to do this in the broiler--which requires care to avoid burning).
- Using tongs, turn the peppers frequently until the skin is blackened and blistered.
- Transfer the charred peppers to a brown paper bag, roll it closed and let the peppers sit in the bag for 15 to 20 minutes.
- Using a paring knife, carefully scrape the blackened skin away.
- Cut the peppers open, remove and discard the seeds and white membrane.
- Slice the peppers into strips or chunks.
- Prepare the potatoes.
- Peel the potatoes and cut them into chunks.
- Add them to a pan of rapidly boiling salted water.
- Cook, covered, for 10 to 12 minutes until the potatoes are tender.
- Drain.
- As soon as the potatoes are cool enough to handle, slice them about 1/4 inch thick into a salad bowl.
- While the potatoes are still warm, add three tablespoons of the oil, the vinegar and salt and pepper to taste.
- Prepare the salad.
- Add the shredded cod fish and the sliced pepper to the potatoes and toss gently.
- Cover bowl with plastic wrap and set aside at room temperature for about an hour.
- When you are ready to serve, arrange the salad on a serving platter.
- Heat the remaining olive oil in a saute pan over medium heat.
- Add and brown the garlic slices.
- Pour this hot garlic and oil over the salad and serve.

Steps:
- 1. Rinse the fish inside and out with 1/4 cup of wine.
- 2. Select a round or oval platter that's large enough to hold the fish but will fit inside the top of a steaming utensil. This could be a traditional Chinese bamboo or metal steamer, or a Western-style clam steamer.
- 3. Place the fish on the platter and set platter in the top of the steamer. Cover and steam over boiling water 10 to 15 minutes.
- 4. Meanwhile, prepare the sauce base by combining the 2 tablespoons of wine, garlic, scallions, ginger, and sugar in a small bowl.
- 5. Check fish for doneness. When cooked, the flesh will be white and pull easily from the bones. Remove the platter and pour off the liquid that has accumulated around the fish.
- 6. Heat the oil in a wok or saucepan, and when it is hot, add the sauce base. Cook, stirring until the sauce boils.
- 7. Pour soy sauce over the sea bass first, and then pour the boiled sauce over the fish. Serve immediately.
