Categories     main-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 12

4 pounds mussels
2 tablespoons olive oil
1 shallot, minced
2 garlic cloves, shaved
4 sprigs fresh thyme
1/2 cup dry white wine
1 lemon, juiced
1 cup chicken broth, low-sodium
Pinch red pepper flakes
1 tomato, peeled, seeded and cut in large dice
1/2 cup roughly chopped parsley
2 tablespoons unsalted butter

Steps:

  • Rinse the mussels under cold running water while scrubbing with a vegetable brush. Discard any with broken shells. Heat oil in a 6 to 8-quart stockpot. Saute the shallot, garlic and thyme to create a base flavor. Add the mussels and give them a good toss. Add wine, lemon juice, chicken broth and red pepper flakes; cover the pot and steam over medium-high for 5 minutes until the mussels open. Toss in the tomato, parsley and butter, recover the pot, and steam for another minute to soften. The tomatoes should keep their shape. Serve with plenty of grilled garlic bread to sop up the broth.

Yield Makes 8 servings

Number Of Ingredients 10

2 pounds sweet or hot Italian link sausages, divided
2 large onions, sliced (about 6 cups), divided
2 large fresh fennel bulbs, sliced (about 6 cups), divided
6 garlic cloves, crushed, divided
1 teaspoon dried crushed red pepper, divided
3 cups dry white wine (about one 750-ml bottle), divided
6 pounds mussels, scrubbed, debearded
1 16-ounce crusty French or sourdough baguette, cut into 1/2-inch-thick slices, divided
Extra-virgin olive oil (for drizzling)
Chopped fresh Italian parsley

4 REASONS STEAMED MUSSELS SHOULD BE YOUR GO-TO DISH FOR
2016-07-25 A simple veggie side is great to serve with a big vat of mussels, but beyond that, all you need is plenty of sliced up crusty baguette. Note: It's very important that you do not skimp on the bread. Occasionally, I do like to bake off a bag of frozen French Fries for the table… you know, for a kinda janky moules frites experience. But mostly--bread is all you need.
