Steps:
- Combine water, sugar, and rosemary in a microwave-safe glass jar. Microwave and bring to a boil, about 2 minutes, watching carefully to ensure it doesn't boil over.
- Allow to sit for 10 minutes; bring to a boil again. Let syrup sit until cooled, 15 to 20 minutes. Strain out the spent rosemary.
- Measure 3 fluid ounces of rosemary simple syrup, ice, bourbon, orange liqueur, amaro liqueur, and lemon juice into a cocktail shaker and mix. Pour into glasses, add bitters to each, and top with a sprig of rosemary and an orange peel strip.

- Combine brandy and creme de menthe in a cocktail shaker. Add ice; cover and shake until chilled. Strain into a chilled cocktail glass.

AMARETTO STINGER
Steps:
- Fill a cocktail shaker half full of ice cubes. Pour all ingredients into shaker and shake well. Strain drink into a martini glass and garnish with whole almonds.
- Cook's Tip: Place a folded paper towel on a dessert plate and add 2 tablespoons of Amaretto. On another dessert plate, put 1 tablespoon crushed almonds. Rim the top of the martini glass with the Amaretto and crushed almonds, then pour the drink into the glass and serve.

With the social season and the holidays headed into high gear, there are likely to be nights when you'll want a cocktail at the end of the evening as much as at the beginning. My suggestion is a stinger, a Prohibition-era cocktail as classic as the Chrysler Building. Most agree it is one of the few cocktails that will also qualify as an after-dinner drink, though it's no Kahlúa on ice cream, either.
