1/4-1/3 cup light soy sauce
1/4 cup sherry wine or 1/4 cup cooking wine
1 cup green onion, sliced
1 cup celery, sliced diagonally
1 tablespoon grated fresh ginger
1/2 cup carrot, cut into matchsticks
1 cup broccoli, sliced
1 tablespoon sesame oil
12 large mushrooms, sliced
1/4 cup vegetable oil
2 garlic cloves, minced
1 tablespoon cornstarch
1 1/2 cups water
water chestnut

Steps:

  • Toss beef in bowl with soy sauce and sherry.
  • Cover and marinate for 30 minutes.
  • Heat oil in wok, or wide frying pan.
  • Add garlic and ginger and saute over high heat.
  • Add drained beef (reserve marinade).
  • Stir fry until meat is brown.
  • Add scallions, celery, carrots, broccoli and mushrooms.
  • Cover and steam about 5 minutes.
  • Mix water, cornstarch, sesame oil and marinate in small bowl; pour into pan.
  • Heat to boiling.
  • Cook until thickened.
  • Serve over rice.

Steps:

1 tablespoon honey
2 teaspoons sesame oil

  • In a small bowl, combine the first 5 ingredients. Place beef in a shallow dish; add half of the marinade. Turn to coat; cover and refrigerate for at least 2 hours. 2 1/2 teaspoon reduced-sodium soy sauce, divided
1/2 teaspoon cornstarch, divided
2 tablespoon Chinese rice wine or medium-dry Sherry
2 teaspoon vegetable oil, divided
1/2 teaspoon minced peeled ginger
1/2 teaspoon minced garlic
1/8 teaspoon cumin seeds
1/8 teaspoon hot red-pepper flakes
2 celery ribs, sliced diagonally 1/4 inch thick, leaves chopped and reserved separately
Equipment: a well-seasoned 12- to 14-inch flat-bottomed wok or a 12-inch heavy skillet

Steps:

  • Halve steak lengthwise if large. Slice across the grain about 1/8 inch thick.
  • Toss beef with 1/2 teaspoon soy sauce, 1/4 teaspoon cornstarch, and a pinch of salt.
  • Stir together rice wine, remaining 2 teaspoon soy sauce, and remaining 1/4 teaspoon cornstarch.

Steps:

  • Cut the beef across the grain into thin slices approximately 1 1/2-inches long. To cut beef across the grain, pick up a cut of flank steak or (beef) shoulder steak, and you will notice that it has lines or "grains" running across it. These are the muscle fibers. To cut steak across the grain, cut perpendicular to these fibers. If you cut the meat along the fibers, it will turn out very tough.
  • Place the beef in a bowl and add the soy sauce, cooking wine or sherry, sesame oil, and cornstarch. Marinate the beef for 15 minutes.
  • Combine the dark soy sauce, rice wine or sherry, water, and sugar in a small bowl. Set aside.
  • Heat a wok or skillet over medium-high heat until it is nearly smoking. Add 1 1/2 tablespoons oil. When the oil is hot, add the garlic. Stir-fry for 10 seconds, then add the beef. Let sear briefly, then stir-fry the beef until it is no longer pink. Remove and drain in a colander or on paper towels.
  • Heat 1 1/2 tablespoons of oil in a wok or skillet. When the oil is hot, add the celery and the salt. Stir-fry the celery until it begins to turn a brighter green (about 1 minute).
  • Add the sauce and bring to a boil. Add the beef back into the pan. Stir-fry for 1 - 2 more minutes to blend the flavors. Serve hot.

Steps:

  • Gather the ingredients.
  • Remove the leaves and roots from the celery stalks.

  • Place the celery on a cutting board and use your hand to press down on the celery stalks to gently crush them.
  • Slice the celery stalks into 1-inch-long sections.

1 lb potatoes ((about 3 medium potatoes))
0.5 lb beef
1 1/2 tablespoons finely chopped garlic
2 teaspoons oyster sauce
2 teaspoons dark soy sauce
1/2 teaspoon cornstarch
2 teaspoons olive oil
1 cup celery leaves
1 cup leeks cut into 1'' long pieces
half a medium yellow onion
1 teaspoon fish sauce
black pepper
1-2 teaspoons coarsely chopped cilantro
plenty of frying oil

Steps:

  • Prepare a big bowl of cold water. Peel potatoes and place them in the bowl of water. Cut potatoes into matchsticks with 3/8-inch thickness. Also put all matchsticks in the bowl and soak in cold water for about 10 minutes.
  • While potato sticks are in cold water, slice beef thinly against the grain. Put beef slices in a bowl, add chopped garlic, oyster sauce, dark soy sauce, cornstarch, olive oil and black pepper, mix well. Set aside to marinate.
  • After 10 minutes, take potato sticks out of water, spread them on a large baking tray lined with a thick layer of paper towel. Place paper towel on top of potatoes, press to absorb excess water. Change paper towel as needed and let them dry, about 10 minutes.
  • While waiting for potatoes to dry, prepare all veggies: thinly slice onion, slice leeks into 1-inch long pieces.
  • Place a wok (or wok-shaped pan, heavy-bottomed pot) over medium high heat. Add at least 1 inch of oil. When oil reaches 350F, add potatoes. Cook in 2-3 batches depending on the size of your pan/pot and the amount of oil. Adjust heat to maintain the temperature of oil at 300F. Cook and stir frequently for about 5-6 minutes until fries are pale yellow and slightly bubbled. Transfer to a colander (or plate, tray) lined with paper towel to drain.
  • After all potato sticks have been fried the first time, start frying them the second time. Add more oil if needed, when the oil reaches 375F, add potatoes. Adjust heat to maintain the oil temperature at 350F, cook and stir frequently for 3-4 minutes until fries are golden brown and crispy to your liking. Transfer to a colander (or plate) lined with paper towel to drain, sprinkle a pinch of salt over fries. Place fries on a serving plate.
  • Remove oil from the wok/pan, wipe with paper towel and add new oil. With medium high heat, when oil is hot, add onion. Stir and cook for 2 minutes, then set aside.
  • Add oil if needed, wait for the wok/pan to be hot again then add beef. Spread beef slices into one thin layer, let them sit undisturbed for 20-30 seconds, then start stir-frying.
  • When beef is 90% cooked, add onion back to the pan, quickly mix and stir. Add fish sauce, black pepper, celery leaves and leeks, stir frying until beef is fully cooked. Turn off the heat, adjust seasoning to taste. Top the fries with stir-fried beef (or place beef next to fries), sprinkle cilantro over everything and serve hot.

3/4 tsp salt
1/4 tsp black pepper (omit for AIP)
1/4 cup + 2 tbsp coconut aminos (divided)
1 tsp apple cider vinegar
2 tsp arrowroot starch
2-3 tbsp avocado oil
3 ribs celery, chopped (on a bias)
2 carrots, chopped
3 garlic cloves, minced
1 thumb ginger, grated
2 tsp coconut sugar (omit for whole30)
1 tbsp green onion

Steps:

  • Slice the steak into thin strips against the grain and season well with salt and pepper. Set aside.
  • Combine 2 tbsp coconut aminos, apple cider vinegar, and arrowroot starch in a bowl and mix well. Add the steak and allow to marinate while you cook the vegetables.
  • Using a large pan, heat the avocado oil over medium-high heat. Add the carrots and celery and cook for 5-6 minutes or until tender. Set aside.

400 g celery
3 Toe garlic
1 piece ginger

Steps:

  • Cut the celery into 1cm-1.5cm long pieces. Garlic and ginger cut very finely.
  • Heat 3 tablespoons vegetable oil in a wok. Add the mince and fry until its color changes slightly light.
  • Put the meat in the wok aside, add the Chinese aniseed pepper, chilli peppers, ginger and garlic in the middle, leave to simmer until the garlic has a golden color. To add dark soy sauce, mix together.

2 spoons Cooking Wine
2 spoons black pepper powder
2 spoons salt
0.2 spoon MSG
1 piece Egg white

Steps:

  • Prepare the raw celery, pick it, wash and cut into small sections, blanch it in boiling water, immediately put it in cold water and then drain the water, cut the beef into small strips, peel the carrots, and serve as spicy crisp
  • The beef strips are put in seasoning oyster sauce, fresh soy sauce, sugar, cooking wine, black pepper powder, egg white
  • Mix all the seasonings and simmer for 20 minutes to taste
  • Put in an appropriate amount of dry starch and stir evenly
  • Pour an appropriate amount of oil into the pan and heat it until it is seven mature. Then add the beef strips and fry it until golden brown on the outside and crispy and tender.
