STIR-FRIED GARLIC GREEN BEANS



Stir-Fried Garlic Green Beans image

The green beans should remain crunchy in this dish, which is adapted from Grace Young's recipe in "Stir-Fry to the Sky's Edge."

1 pound green beans, trimmed
Salt to taste
1 tablespoon soy sauce, low-sodium if desired
1 tablespoon Chinese rice wine or dry sherry
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1/4 teaspoon red pepper flakes
1 tablespoon peanut oil or canola oil

Steps:

  • Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
  • Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.

1 pound fresh green beans, cut into 1-inch pieces
1 tablespoon canola oil
1 cup julienned sweet red pepper
1 cup sliced fresh mushrooms
1/4 cup thinly sliced green onions
2 garlic cloves, minced
3 tablespoons reduced-sodium soy sauce
2 teaspoons minced fresh gingerroot
1/4 cup sliced dried apricots
1 teaspoon sesame oil
2 teaspoons sesame seeds, toasted

Steps:

  • In a large nonstick skillet or wok, stir-fry beans over medium-high heat in oil for 2 minutes. Add sweet pepper and mushrooms; stir-fry 2 minutes longer. Add green onions and garlic; stir-fry for 1-2 minutes., Combine the soy sauce and ginger; stir into skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Stir in apricots; cook and stir for 1 minute longer. Remove from the heat; stir in sesame oil and sesame seeds. Serve immediately.,

1 1/2 pounds green beans, washed and trimmed
1 tablespoon wok or vegetable oil, 1 turn of the pan in a slow stream
1 teaspoon dark sesame oil, several drops or a drizzle
1/2 teaspoon crushed red pepper flakes
2 tablespoons toasted sesame seeds (a handful)
Coarse salt

Steps:

  • Steam green beans covered in 1/2-inch boiling water for 2 minutes. Transfer beans to a colander and run under cold water. Drain well.
  • Heat a wok shaped skillet or large nonstick frying pan over high heat. Go once-around-the-pan with wok or vegetable oil, add several drops sesame oil, and crushed pepper flakes. The pan will smoke. Add beans and stir-fry for 2 minutes. Add sesame seeds and coarse salt and toss to coat beans evenly.

1 cup blanched almond, slivered
1 tablespoon soy sauce
1/2 teaspoon sugar
1/4 cup chicken stock
salt and pepper
chinese noodles

Steps:

  • Parboil beans for 4 minutes and dry them.
  • In a large skillet or wok, heat oil to hot.
  • Add ginger and almonds, stir fry 1 minute. Add beans, stir fry 1 minute. Add soy sauce, sugar and chicken stock and boil until liquid reduces and thickens.
  • Season with salt and pepper to taste.
  • Serve at once with chinese noodles.

1 1/2 tablespoons minced garlic
1 1/2 tablespoons minced fresh ginger
2 scallions, minced (white and green parts)
2 tablespoons dry sherry
2 tablespoons Splenda sugar substitute
2 tablespoons soy sauce
1 tablespoon water
2 tablespoons peanut oil or 2 tablespoons canola oil
1 1/2 lbs green beans, trimmed and rinsed
2 tablespoons water

Steps:

  • Stir-Fry Sauce: Combine the stir-fry sauce ingredients in a small bowl.
  • Set aside.
  • Stir- Fry: In a large skillet or wok.
  • Heat the oil and stir-fry the green beans,until they are barely crisp-tender, about 2 minutes.
  • Add water and continue stir-frying for another 2 minutes, until the beans are crisp-tender and the water has evaporated.
  • Add the sauce and continue stir-frying for 5 or 6 more minutes.
  • Until the beans are tender,BUT, not over cooked.
  • Serve immediately.

1 tablespoon sesame seeds
1 lb trimmed string bean
1 garlic clove, minced
1/3 cup chicken broth or 1/3 cup water
3 dashes sesame oil
1 teaspoon soy sauce

Steps:

  • Heat 1/2 tablespoon of peanut oil in a wok or a wide frying pan.
  • Over medium heat, cook sesame seeds, stirring constantly until seeds are golden. Remove and set aside.
  • Increase heat to high. When pan is hot, add remaining oil. When oil ripples, add string beans and garlic and stir fry for 1 minute. Add chicken broth or water, lower heat, cover and cook until beans are crisp tender. Return sesame seeds to pan, along with a few drops of sesame oil and soy sauce. Mix well.

  • First make your stir fry sauce: in a medium bowl, whisk together the soy sauce, water, garlic, coconut sugar, sesame oil, rice vinegar, fresh ginger, sesame seeds, red pepper flakes and arrowroot starch (or cornstarch). Set aside.
  • Add ½ tablespoon sesame oil to a large pot and place over medium heat. Once oil is hot add in ground chicken and season with garlic powder, salt and pepper. Quickly begin to break up the meat and cook until no longer pink. Once cooked, transfer meat to a bowl and set aside. Keep heat in pan.
  • In the same pot, add ½ tablespoon sesame oil. Add in chopped onion and sliced carrots and cook for 2-4 minutes until onions begin to soften. Next add in green beans and bell pepper and cook, stirring frequently, for an additional 6-8 minutes or until green beans are slightly tender but still have a bite. Add cooked ground chicken back to the pot with the veggies. Immediately turn the heat to low and add in the sauce. Cook for an additional 2-4 minutes over low heat until the sauce begins to thicken.
  • Serve with brown rice or quinoa for a healthy dinner. Garnish with roasted cashews, a few extra sesame seeds and scallions. Serves 4.
