Strawberries and Cream Bars image

Strawberries and Cream Dessert Bars have a sugar cookie base, topped with a sweet creamy layer, ending with a sweet fresh strawberry topping.

17.5 ounce pouch Betty Crocker® sugar cookie mix
1/2 cup butter (softened)
1 large egg
1 cup white chocolate chips
8 ounce package cream cheese, (softened)
3 cups sliced fresh strawberries
1/2 cup granulated sugar
2 Tablespoons cornstarch
1/3 cup water

Steps:

  • Preheat oven to 350° F. Spray the bottom of a 9x13-inch baking pan with non-stick spray.
  • In a large bowl, mix together the cookie mix, butter and egg until a dough forms.
  • Press dough into the bottom of the baking pan.
  • Bake for 15 to 20 minutes or until light golden brown. Remove from oven and let cool completely.
  • In a medium bowl, beat cream cheese with an electric mixer until smooth.
  • In a small, microwave-safe bowl, microwave white chocolate chips for 45 to 60 seconds or until chips are melted. Stir until smooth.
  • Stir in the melted white chocolate chips with the cream cheese.
  • Spread this mixture evenly over the cooled sugar cookie crust. Refrigerate while making the topping.
  • In a small bowl, crush 1 cup of the strawberries.
  • In 2-quart saucepan, add the crushed strawberries, sugar, cornstarch and water.
  • Cook over medium heat, stirring constantly, until mixture boils and thickens.
  • Remove from heat and let cool 10 minutes.
  • Gently fold in remaining strawberries. Spoon over the filling.
  • Cover and refrigerate 1 hour or until set.

cooking spray
1 (17.5 ounce) pouch sugar cookie mix
½ cup butter, softened
1 egg
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container frozen whipped topping
⅓ cup white sugar
2 tablespoons cornstarch
4 cups sliced fresh strawberries, divided
⅓ cup water
1 teaspoon vanilla extract
1 dash red food coloring, or desired amount

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray the inside bottom of a jelly roll pan with cooking spray.
  • Mix sugar cookie mix, butter, and egg together in a large bowl until a soft dough forms; press evenly into prepared pan.
  • Bake in the preheated oven until crust is light golden brown, 10 to 15 minutes. Cool completely, about 30 minutes.
  • Beat cream cheese using an electric mixer on medium speed in a bowl until smooth. Add whipped topping and stir until smooth; spread over crust. Refrigerate.
  • Mix sugar and cornstarch together in a 2-quart saucepan; add 1 cup strawberries, water, and vanilla extract. Cook and stir strawberry mixture, mashing strawberries with spoon while cooking, over medium heat until strawberries are softened and mixture is thickened, 10 to 15 minutes.
  • Stir food coloring into strawberry mixture and remove from heat; cool for 10 minutes. Gently stir remaining 3 cups strawberries into strawberry mixture; spoon over cream cheese filling. Refrigerate until set, about 1 hour. Serve within 4 hours.

1 pouch (1 lb. 1.5 oz.) betty crocker sugar cookie mix
1/2 c butter, unsalted
1 egg
FILLING:
1 c white vanilla baking chips (6 oz.)
1 pkg cream cheese, softened (8 oz.)
TOPPING:
4 c sliced fresh strawberries
1/2 c sugar
2 Tbsp cornstarch
1/3 c water
10 to 12 drops of red food coloring (opt.)

Steps:

  • 1. Heat oven to 350 degrees. Spray bottom only of a 15 x 10 x 1-inch pan or a 9 x 13-inch pan with cooking spray. In a large bowl, stir cookie mix, butter and egg until soft dough forms. Press evenly into the bottom of the pan. Bake 15 to 20 minutes or until light golden brown. Cool completely, about 30 minutes.
  • 2. In a small microwavable bowl, microwave the baking chips uncovered on high for 45 - 60 seconds or until the chips are melted and can be stirred, till smooth.
  • 3. In a medium bowl. beat cream cheese with electric mixer on medium speed until smooth. Stir in melted chips until blended. Spread mixture over crust. Refrigerate while making the topping.
  • 4. In a small bowl, crush 1 cup of the strawberries. In a 2-quart saucepan, mix sugar and cornstarch. Stir in crushed strawberries and 1/3 cup water. Cook over medium heat, stirring constantly until the mixture boils and thickens. Stir in the food coloring (optional). Cool for 10 minutes. Gently stir in remaining 3 cups of strawberries. Spoon topping over filling.
  • 5. Refrigerate for an hour or until it sets. Refrigerate the leftovers, covered.

1 roll (16 1/2-ounce) Pillsbury® refrigerated sugar cookies
2 packages (8-ounces each) cream cheese, softened
1/4 cup sugar
1 cup strawberry topping (from an 11.75-ounce jar)
2 eggs
1 container (16-ounce) frozen whipped topping, thawed
4 to 6 drops red food color, if desired
Fresh berries, if desired

Steps:

  • Heat oven to 350°F. Press cookie dough evenly into bottom only of ungreased 13x9-inch pan. If dough is sticky, use floured fingers. In medium bowl, beat cream cheese, sugar and 3/4 cup of the strawberry topping with electric mixer on medium-high speed about 1 minute or until well blended. Add eggs; beat about 2 minutes or until well blended and creamy. Spread evenly over crust in pan. In medium bowl, mix whipped topping, food color and remaining 1/4 cup strawberry topping. Spread topping mixture over cooled cream cheese layer. Refrigerate about 2 hours or until set. To serve, cut into 6 rows by 3 rows. Garnish each serving with fresh berries. Cover and refrigerate any remaining dessert.

A cool simple jello dessert. My Aunt Barb passed this recipe on to me when I was little. It contains my favorite combination: strawberries and sour cream. Cooking time is chill time.

2 (3 ounce) packages strawberry Jell-O gelatin dessert (I use wild strawberry)
2 cups boiling water
2 (10 ounce) packages frozen strawberries (best if thawed slightly)
1 (13 1/2 ounce) can crushed pineapple
2 large bananas, sliced
1 cup sour cream

Steps:

  • In large bowl dissolve jello in boiling water.
  • Add frozen berries and stir until thawed.
  • Stir in remaining fruit.
  • Pour 1/2 of the mixture in 9x13 pan and chill.
  • When firm, spread sour cream on first layer and then pour remaining jello-fruit mix on top and chill until firm.
  • Note: To save time you could just put the sour cream on top.

  • Make the sugar cookie dough according to package directions. (Should call for butter and egg.) Press the dough down in prepared pan evenly. Bake for 15-20 minutes or until edges are lightly golden brown. Cool completely.
  • Melt the white baking chips in microwave stirring it 30 seconds at a time. In a mixer, blend together the cream cheese and melted baking chips over medium speed. Spread over the crust and refrigerate while making the topping.
  • Crush 1 cup of the strawberries in a small bowl. In a medium saucepan, mix together sugar and cornstarch. Add the crushed strawberries and water. Cook over medium heat stirring constantly until mixture starts to thicken and comes to a boil. Let cool for 10 minutes.
