- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, mix flour and sugar. Add strawberries and chopped rhubarb. Toss with sugar and flour and let stand for 30 minutes.
- Pour filling into pie crust. Dot top with butter, and cover with top crust. Seal edges of top and bottom crust with water.
- Apply yolk to top of pie, using a pastry brush. Sprinkle with sugar. Cut small holes in top to let steam escape.
- Bake at 400 degrees F (200 degrees C), for 35 to 40 minutes, or until bubbly and brown. Cool on rack.

- Heat oven to 425°F. Make pastry. Mix sugar, flour and orange peel in large bowl. Stir in rhubarb and strawberries. Turn into pastry-lined pie plate. Dot with butter.
- Trim overhanging edge of pastry 1/2 inch from rim of plate. Roll other round of pastry. Fold into fourths and cut slits so steam can escape. Place pastry over filling and unfold. Trim overhanging edge of top pastry 1 inch from rim of plate. Fold and roll top edge under lower edge, pressing on rim to seal; flute. Sprinkle with additional sugar if desired.
- Cover edge with 2- to 3-inch strip of aluminum foil to prevent excessive browning. Remove foil during last 15 minutes of baking. Bake about 55 minutes or until crust is golden brown and juice begins to bubble through slits in crust. Serve warm or cool.

- Crust Preparation:
- Using 2 pastry blenders, blend the flours, sugar, shortening, butter and salt. Whisk the egg, vinegar and water in a 2-cup measure and pour over the dry ingredients incorporating all the liquid without overworking the dough. Toss the additional flour over the ball of dough and chill if possible. Divide the dough into 2 disks. Roll out 1 piece of dough to make a bottom crust. Place into a pie dish. Put dish in refrigerator to chill.
- Preheat oven to 425 degrees F.
- Filling Preparation:
- Mix the rhubarb, strawberries, sugar, tapioca, flour, zest and juice of lemon, dash of cinnamon, and vanilla. Mix well in a large bowl and pour out into chilled crust. Dot the top of the filling with the butter. Brush edges of pie crust with egg white wash. Roll out the other piece of dough and place over filling. Crimp to seal edges. Brush with egg white wash and garnish with large granule sugar. Collar with foil and bake at 425 degrees F for 15 minutes. Decrease temperature to 375 degrees F and bake for an additional 45 to 50 minutes, or until the filling starts bubbling. Higher altitude will take 450 degrees F and 400 degrees F respectively. Also, you can use a pie bird for extra decor. Let cool before serving.

- To Make Filling: In a medium bowl, combine blackberries, raspberries, and rhubarb. In a separate bowl, mix together 3/4 cup sugar and 1/4 cup flour. Sprinkle over fruit mixture and stir gently. Cover bowl and refrigerate overnight.
- To Make Crust: In a large bowl, mix 2 cups flour with salt. Cut in shortening and 2 tablespoons butter until texture is like coarse cornmeal. Place 1/3 of mixture in a separate bowl. To the smaller portion, add water and mix to form a paste. Add this mixture back to the rest of flour mixture and stir just until dough forms a ball. Allow to rest at least 20 minutes before rolling out. Divide dough in half. Roll out bottom crust and place in 9 inch pie pan.
- Preheat oven to 400 degrees F (200 degrees C).
- Mix 1 tablespoon melted butter and lemon juice into fruit filling, then spoon into pastry-lined pie pan. Roll out top crust and place over filling. Crimp edges and cut steam vents in top. Brush lightly with half and half and sprinkle lightly with sugar.
- Bake in preheated oven for 10 minutes. Reduce temperature to 350 degrees F (175 degrees C) and bake an additional 40 to 50 minutes, until crust is golden brown.

OUR FAVORITE STRAWBERRY RHUBARB PIE
We had rhubarb growing in the back of our newly acquired home so a friend gave me this recipe. She said she never use to like rhubarb until she started using this recipe. After making this pie my teenage son said, "I never knew what rhubarb was and would not have tried it until I saw it growing." After eating it he said, "This is the best pie I have ever eaten." It takes a while to make this, but 2 hours is sitting and cooling at two different times and 45 min. is baking.

- Preheat oven to 375 degrees.
- Comine the water and sugar in a saucepan (large enough to later add the rhubarb,) and simmer the syrup over low heat for 2-3 minutes.
- Add the rhubarb pieces.
- Cook the syrup and rhubarb for 5 minutes.
- Remove from heat and allow to steep for 20 minutes.
- Strain out the rhubarb and set aside.
- Mix the almond liqueur with the cornstarch (add a few drops of water if necessary to remove all lumps) and stir into the cooled syrup which is now a rhubarb color. (If you want it more red add a couple drops of red food coloring.).
- Place the mixture back on the stove and cook the syrup till thick, about 5-6 minutes.
- Return the rhubarb to the syrup, add the strawberries and stir to combine.
- Remove from heat and cool completely for 1 hour.
- Pour the fruit filling into the pie dish lined with the bottom crust. You can do a plain or lattice crust top.
- Brush top with egg wash water mix.
- Bake for 45 minutes. Allow to cool at least 1 hour before serving. This is great served with ice cream.

Hey, Dad! Remember those surprise outings Team McKenna took to Knott's Berry Farm in the early 1980s? When we piled into the station wagon for a two-hour voyage with one seatbelt stretched over three kids? The trips that got you significantly more amped than they did anyone else? I do. Will you admit now that the real reason for those trips was that you were in thrall to the Knott's Berry Farm restaurant's strawberry-rhubarb pie? Twenty years later I've finally come around, and I now understand the overwhelming allure of this delicious pairing. This one's for you, Dad.

- Place the rhubarb in a medium bowl with the strawberries, agave nectar, arrowroot, cinnamon, ginger, and salt. Toss to combine.
- Spread a piece of plastic wrap on the counter and sprinkle it with spelt flour. Dump the dough onto the plastic wrap and shape into a 3-inch-thick disk. Wrap the dough and refrigerate for 20 minutes before using.
- Preheat the oven to 325°F. Line a baking sheet with parchment paper and lightly oil a 9-inch pie pan.
- Cover your work surface with parchment paper and sprinkle it heavily with spelt flour. Dredge the dough in the flour until it is completely covered. Using a rolling pin, roll out the dough to an even 1/4-inch thickness. Brush off the excess flour. With your hands, lift the crust and fit it into the prepared pie pan, allowing the excess dough to hang over the rim.
- Fill the pie shell with the strawberry-rhubarb mixture and spread evenly. Fold the excess dough back over the filling, folding and pleating to create a rustic-looking pie. Brush the dough lightly with oil. Place the pie on the prepared baking sheet and bake on the bottom rack for 20 minutes. Remove the pie from the oven and brush the crust with agave nectar. Return to the oven and bake for an additional 11 minutes. The finished crust will be brown and flaky.
- Let the pie stand for 15 minutes before slicing and serving. If it will not be served immediately, allow the pie to cool completely before covering with plastic wrap and storing at room temperature for up to 3 days.

- In a large bowl, toss the strawberries and rhubarb with the sugar, salt, and cornstarch. Set to the side.
- Line a pie tin with the pie dough.
- Preheat the oven to 375°F (190°C).
- Empty rhubarb and strawberry mixture into the pie tin, evenly distributing the mixture.

- Combine the flour, sugar and salt in the bowl of a food processor and pulse the mixture several times to combine.
- Add the cold butter and pulse again for about 30 seconds.
- Add the shortening and process until the mixture resembles coarse meal. Sprinkle in the water and mix until the dough is moistened.
- Turn the dough out into a large bowl and use piece and 1/3 for the other. Wrap each piece separately in plastic wrap, pressing down to form a disk. Refrigerate for at least 30 minutes or up to 2 days.
- Combine all of the ingredients in a large mixing bowl. Mix thoroughly until some of the juices from the fruit are released. Set aside.
- Preheat the oven to 400°F and lightly oil the pie dish.
- Dust a work surface and rolling pin with flour. Roll the larger piece of dough into a piece to cover the preprepared pie plate.
- On a baking sheet that will fit into the freezer and dusted with flour, roll the remaining piece of dough into a rectangle. Trim the rough edges. Cut the rectangle into 12 (13"long) strips, then place the pan in the freezer for 10 to 15 minutes.
- Spoon the filling into the pastry-lined pan in an even layer. Lay the dough strips on top of the fruit in a lattice pattern. Use your fingers to pinch the edges of the dough strips and the bottom dough layer together. Sprinkle the top of the pie with 1 tablespoon sugar.
- Bake the pie on the second to lowest rack position of the oven for 35 to 40 minutes or until the filling is bubbly and the pastry is golden. Cool the pie to allow the filling to gel, then serve
