STRAWBERRY CHRISTMAS TREES
- 1. Bake your brownies in greased mini-muffin tins filled up 3/4 of the way. You're going to have to shorten the baking time a bit, so just keep your eyes on them as they bake - they're done when a cake tester comes out clean. As the brownies are baking and cooling, put together your frosting and dye it green.
- 2. Once baked and cooled, secure the strawberries to the brownies with a dab of frosting. Put frosting in a piping bag fit with a small star tip, and cover the entire strawberry by starting at the strawberry, applying a bit of pressure, and pulling away gently to a nice point.
- 3. Feel free to use boxed brownie mix, canned frosting, and whatever other shortcuts you can come up with during this busy time of year! I ended up with more brownie batter than I had strawberries, so I just baked off a few extra and decorated them with frosting without strawberries.

- To prepare cone, wrap completely with parchment paper, using toothpicks to hold parchment in place. Set cone on the center a festive serving platter.
- In a medium bowl, place chocolate and coconut oil in a double boiler or heatproof bowl set over barely simmering water. Heat chocolate, stirring occasionally, until completely melted, then remove from heat.
- Working one at a time and starting with the largest berries at the bottom, dip the cut stem side of the strawberry into the chocolate then place it onto the parchment wrapped cone. Repeat process, placing the berries in rows and stacking them on top of each other to reach the top of the tree.
- Once all of the berries are placed on the cone, arrange mint sprigs in the spaces between the berries. Place confectioners sugar in a sifter and tap around the tree to dust with sugar.

- Cut the tops off of the strawberries. The ends should be flat. Insert a toothpick or skewer into the flat end of each strawberry and chill in the refrigerator for about an hour. By chilling the strawberries the chocolate will dry quickly, so you need to have the sprinkle decorations ready.
- Melt the chocolate or candy melts in the microwave, stirring occasionally. You can also melt these double boiler style, in a bowl over a saucepan of simmering water.
- Whisk together the powdered sugar and 2 tablespoons of the milk. Add more milk to reach a thick spreading consistency. If it's still too thick you can add small amounts of water or more milk until you are happy with it.

- Starting at the bottom of the cone and moving upward toward the top, insert toothpicks so they are spaced about an inch apart on all sides. Make sure there's enough space on the toothpick to hold a large or medium strawberry and that they are spaced close enough together to hide the cone.
- With the strawberry stem facing the cone, push strawberries onto each toothpick. Reinsert if there is too much space between the berries.

- Once candy melts are fully melted, turn the heat to low while you dip the strawberries using a toothpick inserted into the cut end.
- Shake off excess candy coating gently. Using a second toothpick inserted into the pointed end of the dipped strawberry, carefully place the strawberry on top of the icing on the Oreo.
