- Instructions In a medium saucepan, combine the oats, water, chia seeds, cinnamon, and vanilla extract. Stir. Cook the oats over medium heat for 10 minutes or until they are thick and creamy, stirring occasionally In the meantime, prep your kiwi and strawberries. I sliced both of the fruits thinly, and made a kiwi rose as well. (If you are not planning on taking a picture of your finished product, you could just dice them for ease of eating) Once the oats have finished cooking, take them off of the heat and allow them to cool down a little. Layer the fruit, yogurt, and oats in two glass cups in any order or design of your preference. I started with a layer of strawberries, then added in the oats, then finished with a layer of kiwis and a thick pour of yogurt. Finish with cacao nibs, or any other crunchy toppings you have in your pantry. Enjoy!
STRAWBERRY KIWI BAKED OATMEAL

- Preheat oven to 325 degrees and grease a 13 x 9 baking dish or 24 muffin cups or 12 one-cup wide-mouth canning jars.
- In a large bowl, whisk together the eggs, milk, butter, and brown sugar. Add the oatmeal, baking powder, and salt and mix until thoroughly combines. Stir the strawberries and kiwi into the oatmeal.
- Pour the oatmeal into the greased baking dish. Bake at 325 degrees for 40 minutes. If using the muffin pans, reduce baking time to 30 minutes. If using the canning jars, reduce the baking time to 35 minutes.

- Pour simple syrup through a strainer and remove excess liquid, then let it cool to room temperature.

I'm always on the lookout for easy and delicious things to make for breakfast that are on the one hand, relatively healthy and good for you, while on the other hand, not too good for you. I think these really do fit the bill. These are normally made with strawberry preserves, but here we're using fresh strawberries for a little lighter and lower-sugar approach. For best results, refrigerate before serving.

- Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x12-inch baking dish.
- Remove the green tops from strawberries using the tip of small, sharp knife or strawberry huller. Place the berries cut-side down on a work surface and cut in half. Slice each half lengthwise 3 to 5 times before turning and cutting across in a nice, uniform dice.
- Combine diced strawberries, lemon juice, sugar, and cornstarch in a mixing bowl and stir until thoroughly combined and the cornstarch disappears. Set aside until needed.
- Combine oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ginger in a mixing bowl. Pour in melted butter and stir thoroughly until dry ingredients are evenly coated.
- Transfer 60% of the oatmeal mixture into the prepared baking dish and spread out into an even layer. Press the mixture down with the back of a spoon or spatula to compress slightly.
- Place strawberries over the top using a slotted spoon. Do not press down. Reserve any accumulated juices in the bowl. Top with remaining oatmeal mixture and press down lightly with the back of a spoon or spatula. Drizzle reserved juices on top.
- Bake in the preheated oven until the top is golden brown, about 45 minutes. Press the top down with a spatula to compress slightly. Let cool completely, about 1 hour. Cut into bars and serve.

STRAWBERRY OATMEAL
My family really enjoyed this oatmeal. When I made this recipe I made a few adjustments. I halved the recipe. I did used frozen strawberries which I cut in chunks. I used Splenda brown sugar substitute. When cooking my milk/water mix it seemed to curdle. I also took some advise of a reviewer and added the strawberries to the milk and water. This seemed to make the mix curdle alot worse. I added my sour cream directly to hot mixture. I got this recipe from Pinching Your Pennies.

- Prepare strawberries. The should be hulled and thinly sliced.
- In a medium bowl, combine strawberries and brown sugar and gently stir until all strawberries have sugar on them. Set aside.
- In a medium saucepan over medium heat, bring water and milk and salt to a boil. Immediately add the oats and reduce heat to medium. Stirring occasionally, allow to cool 5 to 6 minutes to desired texture.
- Fill four serving bowls wil oatmeal, leaving room for the topping. Spoon 1 Tablespoon of sour cream on each bowl followed by 1/4 of the strawberries.

I love coming up with new ways to eat my oatmeal in the mornings, and this is one that I've tried multiple times now. My roommate thinks it's weird to put kiwi in oatmeal, but then again, she thinks most of the things I eat are weird ;) This is kinda reminiscent of summer though :) I like to cut up the fruit at night, so I don't have to mess with it in the morning, since I like to hit the snooze button as many times as I possibly can before getting up...

- Put oats and water in good-sized microwave-safe bowl (big enough that the oatmeal won't overflow as it boils), and microwave on medium power (50%) for 3 1/2 minutes.
- Sprinkle with almonds. Don't worry about stirring them in, as they will get moved around as the oatmeal continues to cook. Microwave on medium power 1 1/2 minutes.
- Gently stir in desired amount of pre-cut fruit. I like a lot of fruit in my oatmeal, so I used about half of it. Microwave on medium for another 30 seconds.
- Stir and allow to cool; then eat up! The leftover fruit can just be eaten plain. This gives you about 2 servings of fruit (I think).
- The fruit adds enough sweetness for me, but you could probably drizzle this with a bit of honey for some added sweetness.
