MINI STRAWBERRY PIES



Mini Strawberry Pies image

There is nothing better than a Strawberry Pie, unless you make mini pies instead! This is a no hassle, fresh strawberry pie recipe that you don't have to share with anyone else! A delicious and beautiful dessert for summer!

6 mini graham cracker crusts (1 package - (6) 0.17 ounce crusts)
2 ½ cups strawberries (stemmed and chopped (~1 pound strawberries) (chopped and then measured))
¼ - ⅓ cup granulated sugar (or more, depending on how sweet your berries are)
2 tablespoons cornstarch
1 tablespoon lemon juice
2 to 3 drops red food coloring (optional)
whipped cream (optional garnish)
mint leaves (optional garnish)

Steps:

  • Place 1 cup of chopped strawberries in a food processor or blender.
  • Add the sugar, cornstarch, lemon juice and food coloring (if using). Process until smooth and strawberries resemble a puree.
  • Pour the strawberry mixture into a medium-sized saucepan. On medium or medium-low heat, slowly bring the mixture to a boil, stirring frequently making sure not to burn the bottom.
  • Let boil until thickened, approximately 1 to 2 minutes. Don't over-boil, as cornstarch will become thin again if boiled for too long or at too high a temperature.
  • Take pan off heat and allow the mixture to cool for 2 to 3 minutes. Pour thickened puree over the remaining 1 ½ cups chopped strawberries and gently stir until completely incorporated.
  • Scoop mixture equally into mini graham cracker crusts, smoothing the top until mixture reaches the edges of each pie.
  • Let cool and set up in the refrigerator, 1 to 2 hours.
  • Scoop or pipe whipped cream on top of each pie and garnish with mint leaves, optional.

I was looking for an easy and simple recipe to use up some strawberries that I had. Made with only 4 ingredients. Serve as-is or top with a powdered sugar and milk glaze.

½ (15 ounce) package refrigerated pie crust
1 cup diced fresh strawberries
2 tablespoons white sugar
1 large egg, beaten

Steps:

  • Bring pie crust to room temperature. Place strawberries in a bowl and sprinkle with sugar. Set aside.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Roll out pie crust. Use a 4-inch pastry cutter to cut out 6 rounds.
  • Divide strawberries equally amongst the 6 rounds. Wet fingers with water and run them along the edges of each round. Fold rounds in half and press edges together using the tines of a fork until sealed. Transfer to the prepared baking sheet. Brush with beaten egg and cut a small slit in each pie.
  • Bake in the preheated oven until lightly browned, 20 to 25 minutes.

I got this recipe from a friend on Facebook. Simple and delicious, as if we need another way to eat thin mint cookies!

32 thin mint cookies
3 tablespoons butter, melted
2 cups milk, cold
2 (3 1/2 ounce) packages Jell-O chocolate fudge flavor pudding and pie filling
1/4 teaspoon peppermint extract
12 ounces Cool Whip Topping, thawed, divided use

Steps:

  • Remove 10 cookies and set aside.
  • Crush or process remaining cookies, then mix them with the butter. Press firmly onto bottom and up side of 9-inch pie plate.
  • Pour milk into large bowl. Add both boxes of pudding mix and beat with wire whisk 2 minutes or until well blended. (Mixture will be thick.).
  • Spoon out 1 1/4 cup of pudding into another bowl and stir in peppermint extract. Pour peppermint pudding mixture over crust. To remaining pudding mix, add in 1 cup of whipped topping. Spread the pudding/whipped topping layer of the mint layer.
  • Chop remaining cookies and combine them with about 2 ½ cups (doesn't have to be precise) whipped topping. Spread this mixture over the top. The pie might look kind of messy at this point, so clean up the edges.
  • Chill for 4 hours or until set.
  • To garnish, place remaining whipped topping in a plastic zipper bag. Snip off a corner of the bag (about ½ inch up from corner) and squeeze whipped topping around sides decoratively.
  • To make thin zig-zags, pour COLD chocolate syrup into a small zipper bag. Snip a very, very tiny cut off the bottom corner and drizzle away!

⅓ cup all-purpose flour
½ teaspoon ground cinnamon
4 cups fresh strawberries

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Place one crust in a nine inch pie pan.
  • Mix together sugar, flour, and cinnamon. Mix lightly through the berries. Pour filling into pastry lined pan, and dot fruit with butter or margarine. Cover with top crust, and cut slits in the top. Seal and flute the edges.
  • Bake for 35 to 45 minutes, or until the crust is slightly browned.

50 chocolate and mint cookies
5 tablespoons butter, melted
1 tablespoon sugar
8 ounces cream cheese, softened
1 1/2 cups powdered sugar
1 tablespoon milk
1 teaspoon vanilla
8 ounces strawberry Cool Whip
1 cup smuckers strawberry jam
8 ounces strawberry cream cheese
1 tablespoon milk
1 teaspoon vanilla
1 1/2 cups powdered sugar
8 ounces Cool Whip

Steps:

  • For the crust: Crush cookies fine, add sugar and butter until moist.
  • Press with the back of a spoon into a 10' deep dish pie pan and shape.
  • Freeze.
  • Layer One: In a mixer beat cream cheese, vanilla and milk.
  • Add powdered sugar and Cool Whip.
  • Spread 1/2 of the batter over the cookie crust and freeze 10 minutes.
  • Filling: Spread strawberry jam over Layer One.
  • Freeze.
  • Layer Two: In a mixing bowl beat cream cheese, milk and vanilla.
  • Add powdered sugar and Creamy Cool Whip.
  • Add remaining batter from Layer One and mix well.
  • Spread over filling.
  • Top with strawberries and strawberry cool whip.
  • Refrigerate overnight to firm.
