20-MINUTE STRAWBERRY SPINACH SALAD & BALSAMIC DRESSING
This quick and easy strawberry spinach salad features toasted almonds, sliced cucumbers and an easy balsamic vinaigrette dressing! It's an amazing fresh and delicious healthy summer salad recipe, or side salad. For best results, dress the spinach salad minutes before serving.

Steps:
- Preheat oven to 350F (176C). Sprinkle slivered almonds onto a baking tray, spreading to even and toast for 6 minutes, or until lightly golden. Set aside.
- In a large mixing bowl combine spinach, sliced strawberries, red onion and baby cucumbers.
- Prepare balsamic vinaigrette in a jar by combining balsamic vinegar, olive oil, dijon mustard, maple syrup, chopped garlic and sea salt. Cover with lid and shake well to combine.
- Pour half the balsamic vinaigrette over salad and toss to combine. Sprinkle with toasted almonds, and sprinkle generously with a pinch of sea salt and pepper.

STRAWBERRY AND SPINACH SALAD WITH BALSAMIC VINAIGRETTE
I like the balsamic vinagrette combined with the sweet strawberries and fresh spinach. Unlike most salads with sweet berries the flavors are tangy and mild rather than sugary or syrup-y, allowing the sweetness of the berries to shine through. A little goat cheese on each serving would be nice but is optional. I hope you like it, too.

- For the vinaigrette, combine the vinegar, oil, mustard, and a little salt and pepper to taste.
- Whisk or shake in a jar until emulsified.

- Toss gently with the dressing just before serving.

- Separate romaine leaves and wash thoroughly.
- Spin or pat dry off paper towels.
- Wash and dry the spinach unless the package indicates that they have been cleaned.
- Wrap the greens in damp towels, cover loosely in plastic and refrigerate until serving time.
- Just before serving, wash and hull strawberries and cut into quarters.
- Tear romaine and spinach leaves into small-to-medium pieces.
- Combine greens and berries in a salad or arrange on six individual plates.
- Sprinkle parsley on top.
- Pour vinegar and oil into a small container that has a tight-fitting lid.
- Cover and shake until dressing is well mixed.
- Pour over salad.
- Season with salt and pepper.
- Serve immediately.

- For the dressing, push a straw through the strawberries from the tip to the green top to remove the hull. (Or you can cut it off with a knife!)
- Add the rest of the dressing ingredients.
- Blend until smooth. Refrigerate.
