3 cups whole milk
1 cup evaporated milk
1/2 teaspoon pure vanilla extract
1/4 cup unsweetened cocoa powder
1/4 cup sugar
2 tablespoons cornstarch
Pinch of ground cinnamon

Steps:

  • In a saucepan, combine the whole milk, evaporated milk and vanilla and warm up over low heat.
  • Combine the cocoa powder, sugar, cornstarch and cinnamon in a bowl. Whisk the cocoa mixture into the warm milk mixture until smooth. Bring to a boil, whisking frequently to prevent it from scorching.
  • Remove the hot chocolate from the heat just after it has come to a boil. The mixture should be super rich and thick!

  • In a 1.5-quart saucepan over medium heat, whisk together whole milk, heavy cream, powdered sugar, and espresso powder until hot.
  • Small bubbles will appear around the edges and the mixture may start to steam. Do not allow the mixture to boil.
  • Turn heat to low and stir in chopped chocolate until melted completely.
  • Serve warm, topped with whipped cream.

3 cups milk, divided
1 cup 35% cream, divided
1/4 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 pinch salt
1 teaspoon vanilla

Steps:

  • In a saucepan, heat 2 1/2 cups milk and 3/4 cup of the whipping cream over medium heat, stirring often until steaming.
  • Meanwhile, in a bowl, whisk together sugar, cocoa and salt.
  • Whisk in remaining cold milk and vanilla to make a smooth paste.
  • Reduce heat to medium low and gradually whisk cocoa mixture into hot milk mixture until blended. Heat for about two minutes or until steaming hot.
  • In a small chilled bowl, using electric mixrer or whisk, whip remaining whipping cream until thick.
  • Ladle hot chocolate into four warmed mugs and evenly dollop whipped cream evenly into each mug. Stir toswirl lightly.
  • Serve immediately.
  • Note: if desired add 1 teaspoon coffee or chocolate flavoured liquer and 1/2 cup strong coffee to each mug of hot chocolate before adding the whipped cream. This is purely optional.

1 cup 2% milk
4 ounces dark chocolate candy bar, chopped
3 tablespoons sugar
Vanilla rum, optional
Sweetened heavy whipping cream, whipped

Steps:

  • In a small saucepan, heat heavy whipping cream, milk, chocolate and sugar over medium heat just until mixture comes to a simmer, stirring constantly. Remove from heat; stir until smooth. If desired, add rum. Pour into 2 mugs; top with sweetened whipped cream.

1 1/2 cups whole milk
1/2 cup heavy cream
1/2 vanilla bean
2 tablespoons unsweetened cocoa powder
2 tablespoons packed dark brown sugar
2 ounces bittersweet chocolate, coarsely chopped (70 percent cacao)
fleur de sel (1-3 grains, French sea salt)
8 marshmallows (or whipped cream)

Steps:

  • Off the heat, in a 1-quart saucepan, combine the milk and cream. Split the vanilla bean lengthwise and use the tip of your knife to scrape the seeds into the saucepan, then add the scraped pod.
  • Whisk the cocoa powder and brown sugar into the milk, then place the saucepan over medium heat and whisk for 5 to 7 minutes, or until frothy and simmering.
  • Place the chocolate in a heatproof bowl. Remove and discard the vanilla pod from the milk mixture, then pour the mixture over the chocolate. Add the salt and whisk until the chocolate is smooth.
  • Divide the hot chocolate among cups and top each with 2 marshmallows or a dollop of whipped cream. Can be cooled, tightly covered and refrigerated up to 3 days.
