Stuffed Artichokes With Lemon Zest, Rosemary and Garlic image

1 1/2 lemons, zested, then halved
4 large globe artichokes (about 12 ounces each before trimming)
2 1/4 cups plain bread crumbs
1/3 cup grated Parmesan cheese
1/3 cup chopped fresh parsley, plus 4 whole sprigs
1 tablespoon finely chopped fresh rosemary
8 garlic cloves, smashed and peeled
2 carrots, peeled
1 1/2 tablespoons chopped capers
1 1/2 teaspoons kosher salt
1/2 teaspoon ground black pepper
1 small onion, thinly sliced
1/3 cup extra virgin olive oil, for drizzling
1/2 cup dry white wine

Steps:

  • Heat oven to 400 degrees. Fill a large bowl with water and squeeze juice from two lemon halves into water. Cut off artichoke stems, peel them with a vegetable peeler, rub them all over with remaining lemon half (this prevents browning) and drop them into water.
  • Use a heavy, sharp knife to cut top 1 1/2 inches off an artichoke. Pull out pale inner leaves from center. At the bottom, where leaves were, is a furry bed, the choke. Use a spoon (a grapefruit spoon works wonderfully) to scoop out choke. Next, using kitchen shears or a pair of scissors, trim pointy ends from outer leaves of artichoke. As you work, rub lemon half over cut parts of artichoke. When you are finished trimming, drop artichoke into bowl of lemon water. Repeat with remaining artichokes.
  • To prepare stuffing, in a large bowl combine lemon zest, bread crumbs, Parmesan, chopped parsley and rosemary. Mince 6 garlic cloves and add to bowl. Finely chop one carrot and add to bowl along with capers, 1 teaspoon salt and 1/4 teaspoon pepper. Toss.
  • In a small roasting pan or baking pan large enough to hold artichokes, scatter onion slices. Add reserved artichoke stems, 4 sprigs parsley and remaining garlic cloves. Slice remaining carrot into rounds and add to pan.
  • Holding artichokes over stuffing bowl, stuff choke cavity and in between the leaves with bread crumb mixture. Stand stuffed artichokes upright in pan and generously drizzle olive oil over center of each artichoke.
  • Fill pan with water until it reaches 1/4 way up the artichokes. Add wine and remaining salt and pepper to water. Cover pan with foil and poke several holes in foil. Bake artichokes for about 1 1/2 hours, or until tender; when done, a knife should be easily inserted into artichoke and a leaf should be easily pulled out.

2 lemons
4 medium artichokes
4 cloves garlic, smashed
1/2 bunch mint, picked and cut into a chiffonade
1/2 bunch Italian parsley, leaves picked and finely chopped
1 cup grated Parmesan
1 cup bread crumbs
1/2 teaspoon crushed red pepper
1/2 cup pine nuts, toasted, optional
3 anchovy fillets, minced, optional
Extra-virgin olive oil
Kosher salt
2 cups white wine

Steps:

  • Cook's Note: Before starting this recipe be aware that there is a lot of waste involved in artichokes. It's ok. Just accept it and move on.
  • Squeeze 1 lemon into a large bowl filled with water and place the lemon halves in the water.
  • Cut off the pointy tops of the artichokes. Remove and reserve the stem of the artichoke. Peel off the tough green outer leaves and discard.
  • Gently spread the leaves of the artichoke. Using a melon baller, scoop out the hairy "choke" in the center of the artichokes. When clean reserve them in the lemon water. Remove the tough outer skin on the stems and reserve them in the lemon water as well.
  • In a small bowl combine the garlic, herbs, Parmesan, bread crumbs, crushed red pepper, pine nuts and anchovies, if using. Finely chop the reserved artichoke stems and add them to the bowl. Zest and juice the remaining lemon and add that to the bowl. Slowly drizzle in olive oil until the mixture forms a paste. Season with salt.
  • Stuff the artichokes with the paste.
  • Place the artichokes standing up in a saucepan large enough to accommodate them. Add the wine to the saucepan and enough lemon water to come 3/4 up the sides of the artichokes. Add the lemon halves to the pan also. Drizzle generously with olive oil and season with salt.
  • Cover the saucepan and bring to a boil. Reduce heat to a simmer and cook for 15 to 20 minutes or until the base of the artichokes are tender when poked with a fork.
  • Serve hot or room temperature drizzled with generous amount of olive oil.

6 large artichokes
1 lemon, juiced
1/3 cup chopped fresh Italian parsley leaves
1/4 cup chopped fresh basil leaves
1/4 cup chopped fresh mint leaves
2 garlic cloves, minced
2 teaspoons grated lemon peel
4 tablespoons drained capers
6 ounces Italian bread, crust trimmed, bread cut into 1/2-inch cubes
2 1/2 pounds plum tomatoes, seeded, chopped
Salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
12 fresh Italian parsley sprigs, for garnish

Steps:

  • Squeeze the juice from the lemon halves into a large pot of cold water; add the squeezed lemon halves and the whole garlic. Cut off the top quarter of each artichoke and discard. Use a small sharp knife to trim the stem of the artichokes. Starting at the base, bend the tough outer leaves back and snap off where they break naturally, leaving the tender inner leaves. Trim the outside of the base until no dark green areas remain. Cut the artichokes in half and then into quarters. Cut out the fibrous choke and small purple-tipped leaves. Submerge the artichoke quarters in the lemon water. Cover and boil until the artichokes are tender, about 45 minutes. Drain. Set the artichoke quarters aside to cool to room temperature.
  • Mix together lemon juice, herbs, garlic, lemon peel, capers, bread, and tomatoes in a large bowl. Season with salt and pepper, to taste.
  • Arrange artichokes, cut side up, on 2 platters. Spoon the tomato mixture into the center of the artichoke quarters, dividing equally. Drizzle with olive oil. Garnish with the parsley sprigs and serve.

Steps:

  • Preheat oven to 400°F. Mix breadcrumbs and oil in medium bowl. Spread mixture on large rimmed baking sheet. Bake until golden on edges, stirring occasionally, about 10 minutes. Transfer to large bowl. Mix in lemon juice, oregano, garlic and lemon peel. Season with salt and pepper.
  • Drain artichokes. Gently pull leaves outward from center until leaves open slightly. Fill artichoke cavities with bread stuffing. Pack stuffing between leaves. Place artichokes in 13 x 9 x 2-inch glass baking dish. Dot tops with butter. Pour 1/2 cup water into dish.

8 teaspoons lemon juice
1 medium lemon, sliced
4 whole peppercorns
1 bay leaf

4 cups cubed Italian bread (1/2-inch cubes)

2 tablespoons plus 4 teaspoons olive oil, divided

  • Using a sharp knife, level the bottom of each artichoke and cut 3/4 in. from the top. Stuffed artichokes were the "something special" on the table at all of my holiday gatherings and special occasions growing up. My grandmother would make them, and now the tradition has been passed on to the rest of the family. We would "fight" over the artichoke heart at the end. The filling is like a very moist dressing/stuffing you would have at Thanksgiving, but amped up with lots of garlic and cheese. The bottom of the artichoke leaves are tender and meaty with a subtle earthy, artichoke flavor. I like to dip the heart in a lemony mayo or butter at the end. Serve as a family-style appetizer or as part of a meal alongside a salad and grilled chicken.

4 large whole artichokes
1 lemon
1 ½ cups plain dry bread crumbs
1 cup grated Parmesan cheese

  • Pour water in the bottom of a Dutch oven. Add remaining 2 teaspoons salt. Set artichokes in the pot so that they are touching, so that they may remain upright during cooking. Bring to a boil and reduce to a simmer. Cover and cook until the leaves release very easily, about 1 hour.
  • Let stand for 10 to 15 minutes before serving. Sprinkle with more parsley if desired. Serve warm or room temperature.

  • Preheat the oven to 350°F (180°C).

The key to success with this recipe is to look for deep-green artichokes that are heavy for their size with tightly shut leaves; artichokes are best cooked the same day they're bought. This recipe makes for a delicious appetizer or side dish.

2 lemons
4 medium artichokes
3 cups fresh breadcrumbs
1/3 cup freshly grated Parmigiano-Reggiano cheese
1/3 cup freshly grated Pecorino Romano cheese
6 tablespoons extra-virgin olive oil
2 to 3 tablespoons coarsely chopped fresh flat-leaf parsley
2 tablespoons coarsely chopped fresh oregano
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Zest one lemon; set zest aside. Cut the lemon in half, and squeeze juice into a large bowl of water, add lemon rinds. Trim artichokes; working with one at a time, snap off tough outer bottom leaves. Cut off upper third of artichoke. Snip remaining leaf tips with scissors. Trim long stem, leaving a flat bottom. Peel stem and place in acidulated water. Gently spread artichoke leaves away from center, revealing choke. Remove choke with a spoon and discard. Place artichoke in acidulated water. Repeat with remaining artichokes.
  • In a medium bowl, combine breadcrumbs, Parmigiano and Pecorino cheeses, 4 tablespoons oil, parsley, oregano, and lemon zest. Season with salt and pepper. Remove artichoke stems from water, and drain well. Chop finely, and stir into breadcrumb mixture.
  • Remove artichokes from water, and drain well. Fill each artichoke with 1/4 of breadcrumb mixture; spread leaves to allow stuffing to sit inside, and mound stuffing on top. Place 1/2 cup water in bottom of a 9-by-9-inch baking dish. Fit artichokes into baking dish. Drizzle with remaining 2 tablespoons oil. Cover with aluminum foil. Bake until heart is soft when pierced with the tip of a knife, 30 to 40 minutes. Remove foil; bake until breadcrumbs are golden brown, about 10 minutes more. Cut remaining lemon into wedges, and serve on the side.

RICE STUFFED ARTICHOKES WITH LEMON SAUCE



Rice Stuffed Artichokes with Lemon Sauce image

I adapted another stuffed artichoke (one that uses bread crumbs) by Giada De Laurentiis to make this recipe. Although there is an alternate microwave method included in this adopted recipe, I recommend using Giada's stovetop method.

2 medium artichokes
4 tablespoons freshly squeezed lemon juice (the juice of 1 lemon)
water
1/2 cup shredded carrot
1/4 cup chopped green onion
2 tablespoons butter or 2 tablespoons margarine
1/4 teaspoon ground dried sage
1 1/2 cups cooked long grain rice
1/2 cup chicken broth
2 teaspoons lemon juice
3/4 teaspoon cornstarch
1 dash white pepper
1 large egg yolk, beaten

Steps:

  • Fill a large pot (a stock pot works well) with cold water; roll the lemon on the counter with your palm to "loosen" juices, then cut in half and squeeze the juice into the pot of water and toss in the squeezed lemon halves.
  • Trim the artichokes: cut off the top quarter from the artichokes and discard, remove the bottom and tough outer layer of stem, snap off the tough outer leaves from the base, remove dark green areas of the base.
  • Cut artichokes in quarters and remove the choke and small purple leaves.
  • Add trimmed and quartered artichokes to the pot of water, cover, and simmer over medium heat until tender, about 45 minutes; drain and set aside to let cool.
  • (Microwave method: cut off stems and loose outer leaves from artichoke. Cut of 1-inch from tops. Snip off sharp leaf tips. Brush cut edges with lemon juice. Place artichokes and water in a casserole. Cover with vented clear plastic wrap. Microwave, covered, on 100% power for 7 to 9 minutes or just till tender, rotating casserole a half-turn after 4 minutes. Let stand, covered, while preparing stuffing.)
  • In a skillet over medium heat, melt the butter; saute the green onion and carrot for 5 to 7 minutes, until vegetables begin to brown.
  • Stir in the ground sage, coating the vegetables well.
  • Add the cooked rice and stir well, and saute for an additional 5 minutes; remove from heat.
  • Preheat oven to 350 degrees F.
  • Place artichoke quarters in a lightly buttered baking dish.
  • Spoon rice stuffing onto each artichoke, sprinkle with Parmesan cheese.
  • Bake at 350 degrees F for 10 minutes, until the Parmesan browns a little.
  • Meanwhile, prepare the sauce: in a saucepan stir together the chicken broth, 2 teaspoons lemon juice, cornstarch, and white pepper. Heat over medium temperature for about 5 minutes or until thickened and bubbly.
  • In another bowl, whisk HALF of the hot sauce mixture into the egg yolk, combine well; then return the yolk mixture into the remaining sauce mixture and simmer for about 2 to 3 minutes to desired consistency. Check sauce for any possibly needed additional salt and pepper.
  • Transfer stuffed artichokes to a warm serving platter.

This is my favorite way to prepare fresh artichokes. It's terribly easy and perfectly delicious! Goes great with Mediterranean or Middle Eastern food, especially Greek food. But equally tasty with many other foods.

2 tablespoons olive oil
1 cup chicken broth
1/4 cup dry white wine or 1/4 cup dry sherry
2 tablespoons butter
1/2 cup chicken broth
1/4 cup fresh lemon juice
1/2 tablespoon minced fresh rosemary
3 egg yolks
1 teaspoon cornstarch

Steps:

  • Remove stems from artichokes and cut off the top third.
  • Cut artichokes in half, lengthwise, and scrape out the woody"choke" (using a spoon or knife is good, but I like a tomato shark); trim away rough purple tips from inside.
  • Remove the lower outermost leaves and trim the prickly part off the top of the remaining leaves.
  • Rinse and drain artichokes.
  • Heat olive oil in a large skillet, and place artichokes cut-side-down in the pan.
  • Add chicken broth and wine to the pan, then bring to a boil, reduce heat, cover, and cook for approximately 20 minutes, or until the artichokes are fork-tender.
  • While the artichokes are cooking, prepare the sauce.
  • Heat the butter in a small saucepan and add the rosemary and cook until lightly fragrant.
  • Add half the remaining chicken broth, and stir to mix.
  • In a small bowl, mix together the egg yolks, lemon juice, cornstarch, and remaining chicken broth.
  • Pour a slight amount of hot broth into the eggs to temper it, whisking well.
  • Return egg yolk mixture to the saucepan, and whisk over low heat until sauce thickens, about 5-8 minutes.
  • Serve the sauce over the cooked artichokes, or as a dipping sauce, whichever you prefer.
  • To eat artichokes, remove leaves and run the leaf through your closed teeth, bottom end first, scraping off the flesh.
  • When all the leaves are gone, the remaining heart is totally edible.

  • In a small skillet, heat 2 tablespoons olive oil over medium heat. Add the pancetta and cook until browned and fragrant. Scoop out the pancetta with a spoon, reserving the oil, and place it on a paper towel to drain. Add the garlic cloves to the hot oil and cook over medium heat until browned and fragrant. Discard the garlic and reserve the oil.
  • Tear the bread into chunks and place in a mini-prep food processor. Pulse several times until you have fine breadcrumbs. Set aside.
  • Place a steamer basket in a large pot and add 2-3 cups of water to the pot. Cover and bring to a boil.
  • Meanwhile, prep the artichokes: Remove any small leaves on the stem. Peel the stem of the artichokes using a sharp knife or vegetable peeler. Trim the stem keeping about an inch or two on the artichoke. Discard the remnants.
