STUFFED ENDIVE LEAVES WITH MANGO image

Number Of Ingredients 4

1 3-ounce package cream cheese, softened
1/4 cup coarsely chopped nuts of choice -- consider macadamias; pecans; walnuts, etc.
2 to 3 medium heads Belgian endive, separated into individual leaves
1 large mango or papaya, cut into thin strips

Steps:

  • (Start to Finish: 20 minutes) 1) In a small bowl combine the cream cheese and macadamia nuts. 2) Spread about 1 teaspoon of the cream cheese mixture onto each endive leaf. 3) Top with the mango strips. Arrange on a serving platter. Make-Ahead Directions: Prepare as above through step 2. Loosely cover with plastic wrap; chill for up to 2 hours. Before serving, top with mango strips.

These are wonderful appetizers for your summer parties. We love them all year round! I use my own Recipe #134246, but bottled will work as long as you chop the larger pieces up.

1/4 cup pecans
3/4 cup mango chutney
4 ounces cream cheese, softened
18 leaves Belgian endive, chilled

Steps:

  • Preheat oven to 325°F.
  • Place pecans on baking sheet and toast until golden brown, about 15 minutes. Cool and coarsely chop.
  • Combine chutney, pecans and cream cheese and refrigerate.
  • No more than 2 hours before serving, fill endive cups.

Yield Makes approximately 10 to 15 endives

Number Of Ingredients 4

1 head endive
1 cup of blue cheese, crumbled
1/2 cup spiced nuts , chopped
3 tablespoons honey

Steps:

  • Slice off the base of the endive and separate the endive leaves, carefully pulling them off at the base so they're intact.
  • Lay the leaves on a large servign tray in a decorative pattern - such as concentric circles or diagonal rows.
  • Fill the base of each leaf (the strongest and whitest part) with a heaping teaspoon of blue cheese crumbles. Sprinkle each with nuts and top with a drop or two of honey.
  • Now slip into something fabulous.

¼ cup mayonnaise
½ teaspoon salt
½ teaspoon chopped fresh dill
10 pimento-stuffed green olives, chopped
1 head Belgian endive separated into leaves

Steps:

  • In a medium bowl, mash eggs with a fork. Mix in the mustard, mayonnaise, salt and dill. Set aside.
  • Select the largest endive leaves, and fill with egg salad. Place on a platter in a fan shape. Sprinkle the olives among the leaves. Cover, and refrigerate until serving.
