KIR
A classic kir is made with aligoté wine and crème de cassis (black currant liqueur), both of which come from the Burgundy region of France. Once you have the classic down (a glass of white wine with just a hint of cassis), variations abound. Substitute sparkling wine for the aligoté, and it becomes a kir royale. Add red wine, and it's a Bourgogne. If you're over wine entirely, dry hard cider (and a splash of Calvados, if you're feeling extra) turns the drink into a kir Normand, its name nodding to Normandy. Whatever base you choose, kirs easily veer saccharine when weighed down with a hefty pour of crème de cassis. Exercise restraint with the potent liqueur - aim for a more dusty rose hue than magenta - but feel free to drink in rapid succession.

HOMEMADE CREME DE CASSIS LIQUEUR
I'm so happy to have found this recipe! I love the subtle black currant flavor of creme de cassis. Delicious in desserts, baked goods or drizzled over ice cream. Mix an ounce or 2 with your favorite carbonated beverage for a lite refreshing cocktail.

Steps:
- Combine the currants and red wine in a ceramic or glass bowl, and leave for at least 24 and up to 48 hours.
- Purée the mixture in a food processor or blender, and then strain it through a cheesecloth-lined sieve into a large saucepan.
- For every cup of liquid, add 1 cup of sugar.
- Heat gently, stirring frequently, until the sugar has dissolved.
- Do not let the liquid come to a simmer, as you don't want to boil off the alcohol. Then leave at the lowest heat for an hour or more, stirring occasionally, until the liquid has reduced a little and become slightly syrupy.
- Allow to cool.
- Mix together 1 part vodka or brandy with 3 parts of the cooled blackcurrant-wine syrup, and funnel into clean, dry bottles. Store in a cool place for at least 2 weeks before drinking.
- Use whenever a recipe/cocktail calls for creme de cassis.

- DeKuyper Razzmatazz. Razzmatazz is a raspberry liqueur that makes the ideal substitute for Chambord. They taste similar and once mixed into cocktails like Martini, Kir Royale, The Hollywood, Espresso Martini, or Raspberries and Cream, few could tell the difference.
- Crème de cassis. Creme de cassis is a blackcurrant liqueur that’s bursting with sweet, fruity flavor. It originated in Dijon around 1841. There are no laws on how much or what quality fruit must be used to make Creme de cassis, so the flavor will vary by producer.
- Di Amore Raspberry. Di Amore Raspberry is an Italian liqueur that tastes of sweet, black raspberries. A considerably cheaper option, it tastes a lot like Chambord with a little less vanilla flavor and not quite as smooth.
- Raspberry extract. Not everyone wants to consume alcohol. To replace Chambord in mocktails and sweet treats, use raspberry extract. You’ll get a similar fruity flavor without the alcohol content – ideal for your next Raspberry Mojito.
- Framboise. Another raspberry liqueur is Framboise which has an intense and sweet in flavor. You’ll notice it doesn’t have the same silky mouthfeel as Chambord, but in most applications, it will barely be noticeable.
- Ole Smoky Blackberry Moonshine. Let’s start by saying Ole Smoky Moonshine doesn’t have the same flavor as Chambord. This is a good substitute for people that want something a little less French.
- Giffard Blackberry Liqueur. Giffard Blackberry (Muroise aux Baies Rouges) Premium Liqueur is a premium replacement for Chambord. This brilliant ruby drink is the option for anyone who can’t get their hands on Chambord and doesn’t want to sacrifice quality.
- Pama Pomegranate Liqueur. Pama Pomegranate Liqueur is made in the United States and combines pomegranate juice with vodka and tequila. It is only 17% ABV so it won’t hit you like a regular bottle of vodka or tequila would.

- Chambord. Chambord is a premium raspberry liqueur that is well-respected by bartenders around the world. Use it as a substitute in cocktails such as the Wibble, Apple and Blackberry Spritz, or Berry Flip.

- Blackberry syrup. For non-drinkers and kids, blackberry syrup or cordial makes an excellent Crème de Mure replacement. It has a pronounced blackberry taste, but it’s also very sweet.
- Blackberry puree. Are you in the kitchen looking for a decent alternative in your next pudding, cake, or pie recipe? Add a cup of fresh or thawed blackberries to a bowl and muddle them with a tablespoon of sugar.
- Blackberry brandy. Although not ideal, blackberry brandy will work in drinks if you’re in a pinch. Add a reduced amount to drinks like a La Rosa Margarita, London Scramble, or Moraldo.
- Homemade Crème de Mure. Making blackberry liqueur at home takes a couple of days, but it’s the best way to get the authentic flavor of store-bought Crème de Mure.
