3/4 cup shortening
1 cup sugar
1 large egg
1/4 cup molasses
2 cups all-purpose flour
1-1/2 teaspoons ground ginger
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon ground cloves
1/2 teaspoon salt
LEMON FROSTING:
2 cups confectioners' sugar
3 tablespoons butter, softened
1 teaspoon grated lemon zest
3 to 4 tablespoons lemon juice

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg and molasses. Combine dry ingredients; gradually add to creamed mixture and mix well. , Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350° for 8-10 minutes. Remove to wire racks; cool. , For frosting, cream the confectioners' sugar, butter and zest in a large bowl. Gradually add lemon juice, beating until frosting achieves desired spreading consistency. Frost cookies.

½ cup all-purpose flour
½ cup brown sugar
1 teaspoon coarsely ground black pepper
1 pound thick cut bacon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place flour, sugar, and pepper into a resealable plastic bag and shake to mix. Shake bacon with flour mixture a few strips at a time to coat. Place coated bacon onto a baking sheet or broiler pan.
  • Bake in preheated oven for 15 minutes or until bacon has cooked to desired doneness.

2 cups Corn Chex™ cereal
2 cups Rice Chex™ cereal
2 cups Apple Cinnamon Cheerios™ cereal
3 cups Bugles® original corn snacks
1 1/2 cups dry-roasted peanuts
2 egg whites
2 tablespoons orange juice or water
1 cup sugar
1 teaspoon ground cinnamon

Steps:

  • Heat oven to 300°F. Spray with cooking spray or grease 15x10x1-inch pan.
  • In very large bowl, mix cereals, corn snacks and peanuts. In small bowl, beat egg whites, orange juice, sugar and cinnamon with wire whisk or hand beater until foamy. Pour over cereal mixture, stirring until evenly coated. Spread in pan.
  • Bake 45 to 50 minutes, stirring every 15 minutes, until light brown and crisp. Cool completely, about 1 hour. Store in airtight container.

These are my DH's favorite eggs, full of sugary bacon, honey ham, and cheddar cheese. You can even make them healthy using Eggbeaters, turkey bacon and reduced fat cheddar cheese. I use my Sugar and Spice Bacon (or Turkey Bacon) recipe for the bacon

3 large eggs or 3/4 cup Egg Beaters egg substitute
1 tablespoon half-and-half or 1 tablespoon fat-free half-and-half
1 teaspoon honey mustard (I use Gulden's Zesty Honey Mustard)
1/2 teaspoon garlic, grated
1/8 teaspoon black pepper or 1/8 teaspoon cayenne
1 tablespoon butter
kosher salt
2 slices sugared bacon, crumbled
3 slices honey ham, torn
1/4 cup sharp cheddar cheese
1 tablespoon parmesean cheese, grated
1 teaspoon Heinz 57 steak sauce (optional) or 1 teaspoon maple syrup, for serving (optional)

Steps:

  • In a small bowl, whisk together eggs, half and half, and honey mustard.
  • In a skillet over medium low heat, melt butter. (I have omitted the butter and used a spray of Pam in a non-stick pan and they still tasted pretty good--not AS good, but still good) Grate garlic into butter and cook until slightly golden. Add eggs and stir gently. If any sign of browning occurs, reduce heat further and cook until beginning to set, but still very wet.
  • Add pepper, bacon, ham and cheese. Scramble in gently and cook to desired doneness. I like mine a bit wet, but DH will not eat them unless they are completely dry :) Season with salt to taste.
  • Serve with an additional drizzle of honey mustard or Hines 57 sauce, or if you love sweet and savory, drizzle a bit of maple syrup on top and enjoy! Good with a light and fluffy biscuit or some crispy hashbrowns.

5 slices bacon
1 lb small red potatoes (6 or 7), cubed
6 eggs
1/3 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter or margarine
4 medium green onions, sliced (1/4 cup)

Steps:

  • In 10-inch skillet, cook bacon over medium heat 8 to 10 minutes, turning occasionally, until crisp and brown. Remove from skillet; drain on paper towels. Crumble bacon.
  • Meanwhile, in 2-quart saucepan, heat 1 inch water to boiling. Add potatoes. Cover; heat to boiling. Reduce heat to medium-low. Cook covered 6 to 8 minutes or until potatoes are tender; drain. In medium bowl, beat eggs, milk, salt and pepper with fork or wire whisk until well mixed; set aside.
  • In 10-inch skillet, melt butter over medium-high heat. Cook potatoes in butter 3 to 5 minutes, turning potatoes occasionally, until light brown. Stir in onions. Cook 1 minute, stirring constantly.
  • Pour egg mixture into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with metal spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 3 to 4 minutes or until eggs are thickened throughout but still moist. Sprinkle with crumbled bacon.

This is how I fix bacon for scrambles, breakfast sandwiches, and just for munching. It is sweet, smokey, salty and just a tad spicy. I especially love it on Turkey Bacon because it makes boring old Turkey Bacon new again!

6 slices bacon or 6 slices turkey bacon
1 tablespoon brown sugar
1 tablespoon sugar or 1 tablespoon Splenda sugar substitute
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg (fresh grated is best)
1/8 teaspoon allspice
1/8 teaspoon clove
1/8 teaspoon garlic salt
1 pinch cayenne

Steps:

  • Preheat oven to 350*.
  • Place bacon slices on a cookie sheet and bake for 10 minutes.
  • Mix together remaining ingredients. If you are using regular bacon, you may want to add garlic powder instead of garlic salt. I always use the lower sodium bacon and Turkey bacon, so I feel like I can add the garlic salt :).
  • Remove from oven, flip bacon and sprinkle this side generously with sugar mixture. Return to oven for 5-7 minutes, until bacon is looking fairly crisp, but not completely done.
  • Remove from oven and flip bacon again. Sprinkle this side with sugar mixture and return to oven until bacon reaches your desired doneness. (I usually allow about 5 more minutes.
  • Remove bacon to paper towel lined plate to use in other recipes or start digging in, being careful not to burn your little fingers on the melty sugar!

  • In a large non stick skillet over medium heat bacon and cook till desired crispiness. Remove bacon and set aside on a paper towel. Drain bacon grease from the skillet (unless you like bacon grease you can use that instead of adding olive oil for the next step)
  • Heat oil in the skillet and add O’Brien potatoes with garlic salt and cook until tender, About 6-8 min. Add bacon back to the skillet with the potatoes
  • Whisk the eggs in a separate bowl until well mixed and slight bubbles appear, pour over potatoes evenly. Lower the temp to medium low so the eggs don’t burn and let rest for about 1 min. Then stir to mix in the potatoes and eggs together.
  • Cook, stirring occasionally, until eggs are fully cooked. Add salt and pepper to taste. Top with cheddar cheese, salsa, hot sauce, etc!

  • To make this cheesy breakfast egg scramble, start by adding half of the oil to your griddle or a large non-stick skillet and heat over medium high.
  • Once oil has heated, add hash browns in an even layer, sprinkle generously with salt and pepper, press down lightly and cook for 6-7 minutes or until golden on the bottom. Drizzle the top of your hash browns with the remaining oil, then flip the hash browns over using a large spatula. Season again with S&P. Continue cooking for another 7-8 minutes.
  • Once your hash browns are cooked, remove from pan or push aside on griddle. To the skillet or griddle, add 1 tablespoon butter and once melted, add diced onion. Cook for 2-3 minutes to soften onions. Add bacon pieces to warm and stir to combine. Cook for 1-2 minutes. Remove from skillet or move on top of hash browns if still on griddle.
  • To a skillet, add 1 tablespoon butter over medium heat. Add eggs to a large bowl with a dash of salt and pepper and whisk to scramble. Pour eggs into skillet. As eggs begin to set, gently PULL the eggs across the pan with a spatula, forming large soft curds. Continue cooking until eggs have thickened and no visible liquid egg remains.
