This is a quick and easy recipe for homemade low carb blueberry jam. In about 20 minutes, you can make a batch of Keto blueberry jam with only 3g net carbs per tablespoon.

4 cups (14oz) blueberries, fresh or frozen
1/4 cup water
2 tablespoons fresh lemon juice (from 1 lemon)
1/4-1/3 cup Swerve Granular or Swerve Confectioners
1/2 teaspoon Xanthan Gum

Steps:

  • In a medium sized sauce pan, mix together blueberries, water, 1/4 cup sweetener and lemon juice. Bring to a boil over Medium heat. Lower heat and simmer for 15 minutes, stirring often. The mixture should thicken considerably. Taste for sweetness, and add more, in tablespoon measures, until it reaches the desired sweetness.
  • Sprinkle Xanthan Gum over blueberry mixture and quickly whisk it in. Cook for 2 minutes more to thicken further.
  • Cool to room temperature and then pour jam into a resealable container and store in the refrigerator for up to 3 months.

How to Make a Shelf Stable Sugar Free Blue Berry Jam ( plus it's low carb!) image

6 cups blueberries
1/4 cup lemon juice
2 cups allulose
3 tsp Pomona's Universal Pectin
3 tsp calcium water (provided in the pectin box)
1/4 tsp cinnamon (optional)
1 tsp vanilla (optional)

Steps:

  • Wash jars, bands, and lids. Place jam jars in water bath canner filled 1/2 way with water. Bring water to a boil. Turn off the burner and leave jars in canner until ready to use
  • Place lids in water in a small saucepan and heat until water simmers. keep lids in warm water until ready to use.
  • If using fresh blueberries, clean & destem before adding to a large saucepan. If using frozen measure and just pour right in.
  • Add lemon juice and calcium water and blend in well.
  • In a bowl add allulose and pectin and blend well.
  • Heat the blueberries and as they start to soften, mash with the back of a fork, or use a potato masher. I like to leave a few whole berries in my jam, but mash to the consistency that you like. Bring berries to a boil.
  • Add pectin-sweetener mixture, continuing to mix for 1 to 2 minutes to dissolve the pectin while the jam comes back up to a boil. Boil for 1 full minute once the jam reaches the boiling stage.
  • Fill jam jars to ¼" to the top. Clean rims with a clean cloth. Add lids.
  • Add jars to the water bath canner when the water in the canner reaches a full boil. Boil 10 full minutes (add 1 minute more for every 1,000 ft. above sea level).
  • Remove from water. Let jars cool undisturbed for 24 hours.
  • Test for seal, if a jar did not seal, you can reprocess it again in the canner for 10 full minutes, or add that jar to the refrigerator for up to 3 weeks.

3 pounds blueberries, (2 quarts)
1⅓ cup honey
1½ tablespoon bottled lemon juice

Steps:

  • Add the berries to a large, wide pot. The lower the better.
  • Mash well.
  • Stir in honey and lemon juice and allow to rest for a few minutes until the honey dissolves.
  • Bring the berry mixture to a boil and cook for 15 minutes, stirring occasionally.
  • When the jam has thickened, pour it into clean, hot jars.
  • For canning, process in a hot water bath for ten minutes.

LOW SUGAR BLUEBERRY JAM

Once you make your own jam, you will never want to eat store bought again!

2 cups blueberries (500 ml)
1/3 cup fruit juice or water (180 ml)
3 tsp lemon juice, fresh or bottled (15 ml)
1.5 Tbsp Low Sugar Pectin (22 gr)
0-1/2 cup Sugar (113 gr)

Steps:

  • Prepare water bath canner. Wash jars and lids thoroughly in hot, soapy water and rinse well. Add jars to canner and cover with water 1 inch above the jars. Let jars sit in hot water until ready to use.
  • Pour boiling water over lids and let sit in hot water until ready for use.
  • Combine the fruit, juice or water and lemon juice in a large saucepan. Gradually stir in pectin. Bring mixture to a full rolling boil (one that can't be stirred down.), stirring constantly.
  • Add sugar, if using. (see notes below) Return mixture to a full rolling boil that cannot be stirred down. Boil hard for 1 minute, stirring constantly. Remove from heat. Skim foam, if necessary.
  • Ladle hot jam into hot jars. Cool to room temperature, if not canning. Then refrigerate immediately.
  • If preserving, ladle hot jam into the hot jars, leaving 1/4" headspace. Wipe rims clean with paper towel.. Center lids on jars. Apply bands and adjust to fingertip tight.
  • Place filled jars in canner ensuring jars are covered by over 1" water. Bring to a gentle, steady boil.
  • Process jars for 5 minutes, under 1000 feet, adjusting for altitude. (see notes below) Turn off heat. Let jars rest in hot water for 5 minutes.
  • Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down in the center, when pressed. Store jars in a cool place.

No Sugar Added Blackberry Jam (With Splenda) image

We have so many blackberries right now, and I love making jam, but without all the added sugar. You can't use regular pectin when cooking with Splenda, as it requires real sugar to set. However, there are low and no-sugar pectins available. I use Mrs. Wage's Lite Home Jell, but there are others. It turns out just as well, and is diabetic-friendly. I'm sure any berry could be used instead of blackberries. Another possibility is to use one-half chopped peaches and one-half blackberries for a twist on classic jam.

4 cups blackberries
1 1/2 cups Splenda sugar substitute
1/4 cup fresh lemon juice
2 tablespoons low methoxyl pectin (one box if using Mrs. Wages) or 2 tablespoons light pectin (one box if using Mrs. Wages)

Steps:

  • Place blackberries in medium saucepan over medium heat and add lemon juice.
  • Crush berries with a potato masher, or any other tool, until desired consistency.
  • I like there to be big chunks of berries in my jam, so I only crush a little.
  • Cook for about 5 minutes, or until the mixture comes to a full boil.
  • Blend Splenda and the Lite Pectin in a small bowl, then add to the berry mixture.
  • Bring back to a boil, and stir slowly until Splenda and pectin have dissolved.
  • Mix well and allow to simmer one more minute.
  • Fill clean, hot jars with the jam, leaving about 1/4 inch space, and seal with two-part lids.
  • Store jam in refrigerator.
  • After opening, jam can be stored for two weeks, refrigerated.

1 envelope plain gelatin
5 cups fresh or frozen blueberries
1 tablespoon lemon juice
1/4 teaspoon ground nutmeg

Steps:

  • Pour the apple juice concentrate into a saucepan; sprinkle with gelatin and allow to soften for several minutes. , Meanwhile, in a blender or food processor, finely chop blueberries, 1 cup at a time. Add lemon juice, spices and 2 cups of chopped berries to gelatin; heat over medium-low until gelatin is dissolved. Remove from the heat; stir in remaining berries and mix well. , Pour into jars or plastic containers; store in the refrigerator up to three weeks.

Steps:

  • Place blueberries and lemon juice in a heavy-bottomed jam pot and gently bring to a simmer over low heat. Mash the blueberries to help them release their juices.
  • Once the blueberries have released their juices, increase heat to medium-high, and add sugar.
  • Cook the jam until it reaches gel stage, about 20 minutes. Test for gelling on a plate that's been in the freezer, or use an instant-read thermometer (220 degrees F at sea level).
  • Pour finished jam into prepared jars, seal with 2 part lids. Store in the refrigerator or water bath can for a shelf-stable blueberry jam.

  • Add the chia seeds, and use the back of a spoon or a potato ricer to mash the berries. Leave the jam to cook for another 1-3 minutes.
