SUGAR FREE STRAWBERRY PIE
It is almost strawberry time......this pie is so good, you will like it even if you aren't diabetic! I made this for a fundraiser recently and it was a big hit!

Steps:
- In a small saucepan mix water and cornstarch with a wire whisk.
- Bring to a boil, stirring constantly, for 1 minute.
- Remove from heat, cool slightly.
- Stir in gelatin and sweetener.
- Mix well, and gently stir in strawbrries.
- Pour into baked pie shell and refrigerate for about 2 hours.
- Top with Cool Whip OR Dream Whip right before serving.
- Garnish with strawberies if desired.
SUGAR-FREE PEACH PIE
Dan and I are dieting, so making a pie with artificial sweetener was an experiment. It turned out great. I thought it was just as yummy as the real thing.

Steps:
- Heat oven to 425 degrees. Prepare pastry. Mix peaches and lemon juice. Stir together sweetener, flour and cinnamon; mix with peaches. Turn into pastry-lined pie pan; dot with margarine. Cover with top crust which has slits cut in it; seal and flute.
- Cover edge with 2-3" strip of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking.
- Bake 35-45 minutes until crust is brown and juice begins to bubble through slits in crust.

SUGAR FREE JELL-O PEACH PIE
Steps:
- Boil peaches in water 30 seconds. Remove into ice water & peel off skin with hands. SAVE BOILED WATER.
- Add 3/4 cup of boiling water in large mixing bowl to orange Jell-O. Mix with spoon until Jell-O is dissolved. Add 2 cups ice cubes & stir until Jell-O beings to set. Remove all ice cubes. Add 1 cup Cool Whip & peaches with a whisk.
- When blended pour into 9" pie pan. Chill in refrigerator approx. 3 hours. I omit crust to save on calories.

NO-SUGAR PEACH PRESERVES

Steps:
- Fill a canner pot half-full with water and bring to a simmer. Wash jars and rings in warm soapy water; rinse with warm water. Place lids in a saucepan off the heat; pour boiling water on top. Let stand until ready to use.
- Measure 3 cups of peaches into a 6- or 8-inch saucepot. Stir in 3/4 cup water. Gradually add pectin, stirring until well blended. Bring mixture to a boil over high heat, stirring constantly. Boil exactly 1 minute, stirring constantly. Remove from heat. Stir in sucralose. Skim foam off the surface of the jam using a metal spoon.
- Ladle jam immediately into the prepared jars, filling to within 1/8-inch from the tops. Wipe jar rims and threads. Cover with lids and rings; screw bands tightly. Place jars on an elevated rack in the canner. Lower the rack to cover the jars with 1 to 2 inches of water, adding more boiling water if necessary. Cover and bring water to a simmer.
- Process the jam for 10 minutes. Remove jars and place upright on a towel to cool completely, 2 to 3 hours. Check seals by pressing the middle of lid with your finger; if lid springs back, lid is not sealed and refrigeration is necessary.

NO BAKE PEACH PIE

- Stir together the water, sugar, cornstarch, and butter in a small saucepan over medium-high heat. When the mixture has come to a boil, add a few slices of the peaches, then lower heat to medium-low and simmer for 5 minutes until thick and smooth. Remove from the heat, and allow to cool completely.
- Place the remaining peach slices into the pie crust, and spread the sauce all over them, covering completely. Refrigerate for at least 3 hours, or until firm before serving.

SUGAR FREE PEACH PIE
Steps:
- Preheat oven 350 degrees F. Butter bottom & sides of 8x8 dish.
- Slice peaches in dish. Mix the following together: Splenda, cinnamon, flour. Beat egg & butter together then mix with dry ingredients.
- Cut crust off bread and slice bread in 4 strips each & place on top of peaches. Pour sugar, flour, egg & butter mixture over top of bread, spread with back of spoon.
- Bake 40 - 45 minutes.
