I made these for Easter and they were a huge hit...putting this here in my cookbook so I can find it again...

Ingredients

1 lb frozen peaches, sliced and thawed
1 cup Splenda granular
2 cups water
1/2 cup peachtree peach schnapps
1 liter champagne

Steps:

In saucepan, over medium heat, combine the peaches, splendra, and water. Bring the liquid to a boil. Reduce the heat to medium low and simmer for 5 minutes. Remove from the heat. In a blender, puree the mixture until smooth. Add schnapps and more water if needed to thin the puree out into a peach juice. Refrigerate until chilled. Fill each flute glass 2/3 of the way with Champagne. Add the peach juice and serve -- Yummy.

1 oz vodka
12 oz low carb dry prosecco or champagne
1 teaspoon powdered erythritol blend sweetener
1 packet Ultima Replenisher Peach Bellini Electrolyte Mix

Steps:

Add ice, vodka, prosecco or champagne, sweetener and Ultima Peach Bellini Mix to a blender.
Blend until smooth. Pour into a champagne glass and enjoy!

2 ripe peaches, seeded and diced
1 tablespoon freshly squeezed lemon juice
1 teaspoon sugar
1 bottle chilled prosecco sparkling wine

Steps:

Place the peaches, lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth. Press the mixture through a sieve and discard the peach solids in the sieve. Place 2 tablespoons of the peach puree into each Champagne glass and fill with cold prosecco. Serve immediately.

1 large can sliced peaches, undrained
1 small can sliced peaches, undrained
1 c self rising flower
1 c 2% milk
1 c splenda
1 stick butter (not margarine)

Steps:

1. Melt butter in 13 x 9" pan in preheating 450 degree oven.
2. Mix flour and Splenda and add milk.
3. Pour batter into pan with melted butter.
4. Pour cans of peaches (syrup and all) on top of batter. Bake 30 minutes or until golden brown. Cool and enjoy.

Combine diced peach, raspberries and water in a blender pitcher; blend until smooth. Pour puree into a measuring pitcher through a fine sieve to remove seeds. Use a rubber spatula to help the puree move through the sieve. (If possible, cover and chill for an hour or more before assembling cocktails.)
Pour ~1 1/2 ounces of fruit puree into a flute glass; top with a little Prosecco and gently stir. Once foam has subsided top off with more Prosecco. Serve.
