A savory galette is the easier and more streamlined cousin of a classic quiche. It has a buttery pastry filled with any combination of vegetables, cheeses and meats, but without the need to make a custard to anchor it all. In this galette recipe, roasted summer vegetables (eggplant, zucchini, and tomatoes) are combined with goat cheese and fresh red chiles for a ratatouille-like mix with a bite, all nestled into a hearty whole-grain crust. Feel free to use any combination of cooked vegetables instead, even leftovers from the fridge. You'll need three cups total. Serve it as you would quiche, with a salad for lunch or a light dinner.

2/3 cup/90 grams rye flour or whole-wheat flour
1 teaspoon/5 grams sugar
1/2 teaspoon/3 grams fine sea salt
1 large egg
Heavy cream, as needed
1 stick/113 grams unsalted butter, cut into big pieces
2 teaspoons/10 milliliters lemon juice
1/2 teaspoon/4 grams grated lemon zest (optional)
2 medium eggplant (about 1 pound), trimmed and thinly sliced
2 medium zucchini (about 3/4 pound), trimmed and thinly sliced
1 pound plum tomatoes, cored and thinly sliced
Extra-virgin olive oil, as needed
Kosher salt, as needed
Black pepper, as needed
2 hot chile peppers, such as cherry peppers, seeded and minced
3 ounces goat cheese, softened
1 small garlic clove, grated or pressed
1 teaspoon thyme leaves

Steps:

  • In a food processor fitted with a steel blade, or in a large bowl, pulse or mix together the flours, sugar, and salt. In a measuring cup, lightly beat the egg, then add just enough cream to get to 1/3 cup. Lightly whisk the egg and cream together.
  • Add butter to flour mixture and pulse or use a pastry cutter or your fingers to break up the butter. If using a food processor, do not over-process; you need chickpea-size chunks of butter. Drizzle the egg mixture (up to 1/4 cup) over the dough and pulse or stir until it just starts to come together but is still mostly large crumbs. Mix in lemon juice and zest if using.
  • Put the dough on lightly floured counter and knead to make one uniform piece. Flatten into a disk, wrap in plastic and chill for 2 hours, or up to 3 days.
  • When you are ready to make the tart, roll out dough to a 12-inch round (it can be ragged). Transfer to a rimmed baking sheet lined with parchment paper and chill while preparing the filling.
  • Heat oven to 425 degrees. Spread out eggplant, zucchini and tomatoes in one layer on three separate sheet pans or cookie sheets. Drizzle generously with oil and season with salt and pepper. Roast vegetables, tossing zucchini and eggplant occasionally, 35 to 40 minutes. Eggplant and tomatoes will be golden at the edges; zucchini will be tender. Don't let the vegetables get too dark because they will continue to brown in the tart. Transfer vegetables to a bowl (you want to have about 3 cups of them) and toss with chile peppers.
  • Decrease oven temperature to 400 degrees. In a small bowl, combine goat cheese, garlic and thyme leaves. Spread mixture in a thin layer over crust, leaving a 1 1/2-inch border all around. Arrange vegetables evenly over goat cheese. Fold up edges of crust, pleating to hold it in (sloppy is fine). Brush pastry generously with leftover egg and cream mixture.
  • Transfer galette to oven and bake until golden brown, about 40 minutes. Cool on a wire rack for at least 20 minutes before slicing.

1 cup chopped green onions
2 cloves garlic, minced
1 (5 ounce) creamy goat cheese log
½ cup grated Parmesan cheese

Steps:

  • Heat 2 tablespoons olive oil in a skillet over medium heat; cook and stir green onions in the hot oil until softened, about 3 minutes. Add garlic; cook until fragrant, about 1 minute. Remove from heat.
  • Combine goat cheese, Parmesan cheese, and cayenne pepper in a small bowl; stir with a fork until blended.
  • Gently flatten each puff pastry sheet with a rolling pin on a lightly floured surface. Cut each sheet into four squares. Lightly cut a border about 1/4-inch from the edges of each square using a sharp knife, not going all the way through the dough.

  • Bring a large pot of salted water to a boil. Toss the tomato, squash, chives, lemon zest and 2 tablespoons olive oil in a large bowl. Season with salt. Sprinkle in half of the goat cheese. Add the pasta to the boiling water and cook as the label directs, adding the wax beans to the pot during the last 3 minutes of cooking. Reserve 1/4 cup of the cooking water, then drain the pasta and beans and add to the bowl with the vegetables. Drizzle with the reserved cooking water and the remaining 1 tablespoon olive oil and toss until the goat cheese begins to melt. Add the parmesan and toss. Whether that's sweet fruit or savory vegetables, there are very few things you can't galette. Garnish with fresh basil if desired.

1 ⅓ cups all-purpose flour
2 tablespoons cornmeal
½ teaspoon fine salt
½ cup frozen unsalted butter, cubed
1 tablespoon apple cider vinegar
¼ cup ice water
1 (8 ounce) package soft goat cheese
1 egg yolk
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 pinch cayenne pepper
2 tablespoons sliced fresh basil
3 cups cherry tomatoes, halved
1 tablespoon extra-virgin olive oil
1 teaspoon Dijon mustard
1 egg, beaten
2 teaspoons water
2 tablespoons freshly grated Parmigiano-Reggiano cheese, or to taste
1 teaspoon extra-virgin olive oil, or as desired
sea salt to taste

Steps:

  • Combine flour, cornmeal, salt, and frozen butter in a food processor. Pulse until mixture resembles coarse crumbs. Add vinegar and ice water and pulse again until mixture comes together in clumps, scraping down the sides of the bowl as needed.
  • Wrap dough up in plastic wrap and shape into a disc. Refrigerate until thoroughly chilled, about 1 hour.
  • Combine goat cheese, egg yolk, kosher salt, pepper, cayenne, and basil in a bowl. Mix using a spatula until smooth and soft.
  • Place dough on a lightly floured work surface and sprinkle top with flour. Roll out into 1/8-inch-thick circle, about 13 inches in diameter. Roll dough over the rolling pin and transfer onto a 12-inch pizza pan; refrigerate until ready to use.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Mix tomatoes, 1 tablespoon olive oil, and Dijon mustard together in a bowl.
  • Drop spoonfuls of the cheese mixture onto the dough and spread evenly, leaving about 1 1/2-inch space on the sides. Place tomato mixture on top of cheese using a slotted spoon. Fold excess dough up and over tomatoes, creating a pleat every 3 inches or so by gently pressing and folding.
  • Combine beaten egg and water in a small bowl; brush over crust. Sprinkle Parmigiano-Reggiano cheese over galette.
  • Place a foil-lined pan on the rack under galette to catch any possible drips. Bake in the preheated oven until well browned on bottom and top, 30 to 35 minutes.
  • Remove from the oven and let cool completely, about 30 minutes. Sprinkle with remaining olive oil and sea salt. Serve room temperature or chilled.

Cooking all vegetables before assembling the galette adds flavor and expels most of the moisture, so the crust gets crispy in the oven. 2 1/2 cups unbleached all-purpose flour
1 teaspoon kosher alt
2 teaspoons granulated sugar
1 cup (2 sticks) cold unsalted butter, cut in pieces
3 tablespoons vodka, chilled
For the tart:
1 1/2 tablespoons extra-virgin olive oil, plus more for brushing
1 1/2 tablespoons butter
1 large leek, white and light-green parts only, halved lengthwise and cut into 1/4-inch thick slices
1/2 teaspoon kosher salt
1/4 teaspoon granulated sugar
Freshly ground black pepper
4 ounces bar cream cheese, softened
6 ounces farmer cheese, drained
1 tablespoon chopped tarragon
1 large egg, plus additional egg for egg wash
2 pounds medium-sized root vegetables, such as parsnips, carrots, beets, turnips, celery root, purple potatoes, and/or Yukon gold potatoes, peeled and cut in 1/4-inch rounds

1 teaspoon Dijon mustard

Steps:

  • Make the dough:
  • In the bowl of a food processor, pulse the flour, salt, and sugar. Add butter and pulse until coarse, pea-sized crumbs appear, about 10 seconds. With the machine running, add vodka and 2 tablespoons ice water and process until the dough just holds together, about 30 seconds. Squeeze a small amount of dough between your fingers -- if it is very crumbly, add more ice water, 1 tablespoon at a time (2 tablespoons maximum). Do not over process.
  • Turn dough out onto a lightly floured surface and push together into a rough ball. Knead a few times to combine, then place on a piece of plastic wrap and push together using the plastic wrap to form a 5x7-inch rectangular slab. Refrigerate at least 1 hour (or overnight).
  • Assemble the tart:
  • Assemble the tart: Preheat oven to 375°F. In a small sauté pan, heat 1 1/2 tablespoons each olive oil and butter over medium-low heat. Add the leek, salt, sugar and a pinch of pepper and cook, stirring occasionally, until soft and slightly caramelized, about 10 minutes. Transfer leeks to the bowl of a food processor and let cool slightly.
  • To the food processor, add the cream cheese, farmer cheese, and tarragon to the leek mixture. Pulse until smooth. Taste and adjust the seasoning, then add the egg and pulse a few more times until combined. Transfer to a bowl and refrigerate until ready to use.
  • Bring a large pot of well-salted water to a boil. Add the vegetables (if using red beets, cook in a separate pot so they don't bleed). Bring to a boil then turn down to a simmer and cook until tender but still holding their structure, about 10 minutes. Drain and set aside to cool slightly.
  • On a floured piece of parchment paper, roll your dough to 12x15-inch rough rectangle. Place 1 1/2 to 2 cups of filling in the center of the dough and spread out, leaving a 2-inch border on all sides. Arrange your vegetable rounds in a shingled pattern over the filling, then gently fold up the sides to create a border. Brush the vegetables lightly with oil and brush the pastry edges with egg wash, sprinkle the galette with coarse sea salt. Bake until vegetables are lightly golden and pastry is golden brown, 45 to 50 minutes. Transfer baking sheet to a wire rack to cool.
  • Make the mustard vinaigrette:
  • In a small bowl, combine the mustard, vinegar, lemon, garlic, and sugar. Gradually whisk in the oil and blend until emulsified. Taste and add 1/2 teaspoon warm water if necessary to balance flavors. Stir in the tarragon.
  • To finish:
  • Once galette has cooled, brush the vegetables with the mustard vinaigrette. Sprinkle with chopped tarragon, cut into squares, and serve warm or at room temperature.
  • DO AHEAD: Dough can be made and refrigerated up to 3 days in advance, or frozen for up to 3 months; thaw in the refrigerator before using. Tart can be assembled and frozen for up to 3 months. Tarragon vinaigrette can be made up to 1 day in advance and refrigerated.
