VEGETABLE PIE

Vegetable Pie image

This tasty Vegetable Pie recipe is packed with tomatoes, zucchini, yellow squash and onion, and layered with a delicious cheese spread.

Provided by Lauren Allen

Categories     Main Course

Time 1h

Number Of Ingredients 11

1 9-inch pre-baked pie crust
3 tomatoes (, peeled and sliced (Roma work best))
1 small zucchini (, sliced into rings)
1 small yellow squash (, sliced into rings)
1/2 cup sweet onion ((or red onion), sliced)
10 fresh basil leaves (, chopped)
1 cup shredded mozzarella cheese
1 cup freshly shredded cheddar cheese
3/4 cup mayonnaise ((or half mayo, half Greek yogurt))
2 Tablespoons freshly grated parmesan cheese
salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.
  • Use a paper towel to pat-dry the tomatoes and make sure most of the excess juice is out. (You don't want very wet tomatoes or your pie will turn out soggy).
  • Heat a large skillet over medium-high heat. Season zucchini and squash with salt and pepper. Saute the squash in a single layer for 2-3 minutes on each side or until golden brown. Remove to a paper towel
  • Layer the zucchini, squash, tomato slices, and onion on the bottom of the pie shell. (Make sure pie shell is pre-baked, and completely cool, to avoid sogginess). Sprinkle basil on top.
  • Combine the grated cheeses and mayonnaise together. Smooth cheese mixture over the top and sprinkle parmesan cheese on top.
  • Bake for about 30 minutes or until lightly browned. Allow to cool for at least 15 minutes.
  • To serve, cut into slices and serve warm.

Time 1h30m

Yield 6-8 serving(s)

Number Of Ingredients 22

3/4 cup white flour or 3/4 cup unbleached flour
3/4 cup rye flour
1/2 teaspoon salt
1/2 cup butter or 1/2 cup margarine, cut into pieces
1/4 cup ice water (may need more or less)
2 tablespoons butter or 2 tablespoons margarine (or corn oil)
1 small onion, chopped
2 cloves garlic, minced
3 stalks celery, chopped
2 zucchini, sliced (I use a food processor for slicing)
1/2 cup shredded carrot (I use a food processor for shredding)
1/2 cup sliced mushrooms
1/2 cup frozen peas, thawed
1/2 cup frozen corn kernels, thawed
1 tablespoon honey
1 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon fresh sage, minced
3 tomatoes, seeded, stemed and chopped roughly, placed in strainer and salted and drained to get rid of excess liq
1 cup shredded swiss cheese
1 tablespoon parsley (or cilantro)

Steps:

  • Make crust by sifting flours and salt together in a large bowl. Cut in margarine (or butter) until it resembles corn meal. Blend in water one tablespoon at a time until dough holds together.
  • On a floured board, knead dough a few times and then pat it into a thick patty or disc. Place in baggie or wrap in plastic wrap and put in refrigerate for one hour or until ready to use.
  • Preheat oven to 375-degrees F.
  • Melt butter (or margarine) in a large skillet over med low heat. Add garlic, onion and celery. Saute for 5-10 minutes or until onion is tender.
  • Stir in zucchini, carrots and mushrooms. Continue cooking for another 5-10 minutes or until vegetables are tender.
  • Stir in peas and corn and cook for another 5 minutes.
  • Stir in honey, mustard, salt, pepper and sage. Remove from heat.
  • Press lightly against vegetable mixture to drain out any excess liquid and discard extra liquid.
  • Roll out crust to fit a 9" pie dish or quiche pan (I use a quiche dish).
  • Place in dish and trim edges and crimp or make decorative edging.
  • Prick bottom with a fork and brush with milk or egg wash if desired. If desired you can precook crust for 10 minutes.
  • Spoon vegetable mixture into prepared crust. Cover with tomatoes and cheese and sprinkle with parsley.
  • Brush crust edges with milk or egg wash.
  • Bake for 45-50 minutes (if crust was precooked baking time is 40-45 minutes).
  • Let stand 5-10 minutes before cutting.

For filling:
1 1/2 pounds yellow squash, cut into 1-inch pieces
1 bunch scallions, chopped, keeping greens separate
2 garlic cloves, finely chopped
1/4 cup extra-virgin olive oil
1/4 pound okra, trimmed and sliced
1 pound yellow tomatoes, seeded and
1/2 cup corn kernels (from 1 ear)
1 1/2 cups coarsely grated Havarti or Muenster cheese (4 1/2 ounces)
1 cup chopped basil
1 tablespoon cornmeal (not stone-ground)
4 hard-boiled eggs, peeled and chopped
For crust:
1 3/4 cups all-purpose flour
1/2 cup cornmeal
1 tablespoon baking powder
3/4 teaspoon salt
3/4 stick cold unsalted butter, cut into 1/2-inch cubes
3/4 cup whole milk plus additional for brushing

Steps:

  • Make filling:
  • Place a heavy baking sheet on middle rack of oven, then preheat oven to 400°F.
  • Toss squash with 1 teaspoon salt, then drain in a colander 30 minutes. Pat squash dry.
  • Cook scallions (except greens) and garlic in oil with 1 teaspoon salt and 1 teaspoon pepper in a 12-inch heavy skillet over medium heat, stirring occasionally, until golden, 4 to 6 minutes. Add squash and okra and cook, stirring occasionally, until vegetables are crisp-tender, 7 to 9 minutes. Remove from heat and stir in tomatoes.
  • Transfer to a large bowl, then toss with corn, cheese, basil, cornmeal, and scallion greens. Season with salt and pepper.

  • Roll out remaining dough in same manner and place over filling. Trim, leaving a 1/2-inch overhang. Press edges of crust together. Fold overhang under and crimp edge all around.
  • Brush crust with additional milk, then cut 3 steam vents.
  • Bake until crust is golden and filling is bubbling, 50 minutes to 1 hour. Cool at least 15 minutes before slicing. Serve warm or at room temperature.

SUMMER VEGETABLE TART

Summer Vegetable Tart image

Sautéed vegetables are piled atop a creamy goat cheese-custard filling.

Yield Makes 6 servings

Number Of Ingredients 18

1 1/2 cups all purpose flour
1/2 teaspoon salt
6 tablespoons chilled unsalted butter, cut into 1/2-inch cubes
3 tablespoons chilled solid vegetable shortening, cut into 1/2-inch cubes
4 tablespoons (about) ice water
5 ounces soft fresh goat cheese
1/2 cup whipping cream
1/4 cup sour cream
1/8 teaspoon salt
Generous pinch of cayenne pepper
3 large eggs
2 tablespoons olive oil
1 small red bell pepper, stemmed, seeded, cut into 1/2-inch strips
1/2 medium fennel bulb, cored, cut lengthwise into 1/2-inch strips
1 small zucchini (about 5 ounces), halved lengthwise, cut crosswise into 1/2-inch pieces
1 small yellow squash (about 5 ounces), halved lengthwise, cut crosswise into 1/2-inch pieces
1/2 cup fresh corn kernels
1 tablespoon chopped fresh basil

Steps:

  • Blend flour and salt in processor. Using on/off turns, cut in butter and shortening until pea-size pieces form. With machine running, add enough ice water by tablespoonfuls to form moist clumps. Gather dough into ball; flatten into disk. Wrap in plastic; refrigerate 1 hour. (Can be made 1 day ahead. Keep refrigerated. Soften dough slightly at room temperature before continuing.)
  • Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Trim dough overhang to 1 inch. Fold overhang in; press to form double-thick sides. Pierce bottom of dough all over with fork. Refrigerate 1 hour.
  • Preheat oven to 400°F. Bake crust until golden, piercing with fork if bubbles form, about 20 minutes. Cool 5 minutes. Reduce oven temperature to 375°F.
  • Whisk cheese, cream, sour cream, salt, and cayenne in medium bowl to blend. Add eggs and whisk to blend. Pour into prepared crust. Bake until filling is set, about 20 minutes. Cool 10 minutes.
  • Meanwhile, heat oil in large skillet over medium heat. Add bell pepper and fennel and sauté until beginning to soften, about 4 minutes. Add zucchini, yellow squash, and corn; sauté until all vegetables are tender, about 12 minutes. Season with salt and pepper. Mound vegetables on top of tart and sprinkle with basil. Serve warm or at room temperature.
