Ingredients

Ice (Cocktail shaker)
4 shots of rum
1 shot of sour cherry syrup*
3/4 shot lemongrass syrup*
4 limes (squeenzed)
4 TBS. of frozen or fresh raspberries (muddled)

Steps:

Add ice to a cocktail shaker and fill with rum, sour cherry syrup, lemongrass syrup and lime-juice. Take 2 margarita glasses, put muddled raspberries in the bottom and add the liquid. Sour cherry syrup can be bought at middle eastern grocers. Lemongrass Syrup: Boil 2 1/2 cups of water with 1 1/4 cups sugar. Let it boil just long enough for the sugar to dissolve. Turn off heat. Cut 4 sticks of lemongrass in 1/2, lengthwise. Let steep in the syrup for at least a half hour. Let cool and refrigerate.

2 lemongrass stalks
6 large fresh mint leaves
3 tablespoons sugar
6 tablespoons white rum
3 tablespoons fresh lime juice
Ice cubes
1 cup chilled club soda

Steps:

Microwave lemongrass on high for 40 seconds. Cut bottom 7 inches from each stalk. Slice thinly (save tops for garnish). Combine sliced lemongrass, mint, and sugar in shaker; mash well with muddler or wooden spoon. Add rum and lime juice; mash until all sugar dissolves. Strain into 2 highball glasses. Fill with ice; top with club soda. Garnish with lemongrass tops.
