Sunday Morning Hash Browns Potatoes - Homemade image

Cooking up a skillet of hash browns is a Sunday morning treat. If you have difficulty flipping the entire "cake" of potatoes, cut it into wedges and flip a portion at a time. Although you can start with raw potatoes, I think they taste better if cooked ahead of time. Times are estimated. Recipe courtesy The Vegetarian Meat and Potatoes Cookbook.

Number Of Ingredients 5

1 1/2 lbs russet potatoes (or grated, about 3 cups) or 1 1/2 lbs other baking potatoes, cooked, peeled and finely diced (or grated, about 3 cups)
3 tablespoons grated onions
3/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
2 tablespoons olive oil

Steps:

  • In a large bowl, combine the potatoes, onion, salt and pepper and mix well.
  • Heat the oil in a large skillet over medium heat. Add the potato mixture and press down with a metal spatula to form a cake.
  • Cook until the potatoes turn golden brown on the bottom, 5 to 7 minutes.
  • Loosen the potatoes from the pan with the spatula and flip them over onto a large plate . Slide back into the pan and cook to brown the other side, about 5 minutes longer. Serve hot.

We parboil the potatoes before sauteing them with the rest of the hash brown ingredients to ensure every bite of this brunch staple is tender and fully cooked.

1 1/2 lb. small all-purpose potatoes
3 tbsp. olive oil
1 large onion
3/4 tsp. Salt
1/4 tsp. freshly ground black pepper
1 green bell pepper
1 red bell pepper

Steps:

  • In large pot of boiling water, cook potatoes 25 minutes, or until tender, but not falling apart. Drain. When cool enough to handle, peel and cut into 1/2-inch cubes.
  • In 12-inch skillet, heat 2 tablespoons oil over medium heat. Add onion, potatoes, salt, and pepper and cook, stirring frequently, 10 minutes, or until onion is golden brown.
  • Add remaining 1 tablespoon oil and bell peppers and cover. Cook, stirring frequently, 10 minutes, or until peppers are tender. Remove cover and cook 5 minutes more, or until potatoes are golden brown and crusty on edges. Serve hot.

1 pound russet potatoes, peeled and grated
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon Hungarian paprika
Kosher salt and freshly ground black pepper
2 tablespoons olive oil

Steps:

  • Using a box grater or a food processor with the shred attachment, shred the potatoes and place them in a colander over a large bowl. Fill the bowl with cold water and agitate the shredded potatoes and rinse with water until the water runs clear from the colander. Strain the potatoes and pour into a clean kitchen towel, gather the edges and twist the towel around to squeeze the excess water out of the potatoes. Do this as hard as possible, changing towels if needed to remove the most moisture. Transfer the dried potato shreds to a large bowl. Add the garlic powder, onion powder, Hungarian paprika, 2 teaspoons of salt, and a grind or two of pepper. Toss with your hands to combine.
  • In a large nonstick saute pan on medium heat, add the olive oil and shredded potatoes. Spread the potatoes evenly and allow a bottom crust to build before tossing to cook some more. Continue to cook while tossing until most of the hash browns are golden, 10 to 12 minutes. Pour into a serving plate.

1 ½ pounds thick sliced bacon
½ cup chopped sweet onion
½ cup chopped red bell pepper
12 eggs
1 cup milk
1 (16 ounce) package frozen hash brown potatoes, thawed
1 cup shredded Cheddar cheese
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon dried dill

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; reserving 2 tablespoons drippings in the skillet. Crumble bacon and set aside.
  • Cook and stir onion and bell pepper over medium heat in reserved drippings until tender, about 5 minutes; remove with slotted spoon.
  • Whisk eggs and milk in a large bowl. Fold hash browns, Cheddar cheese, salt, pepper, dill, onion mixture, and crumbled bacon into egg mixture; transfer to prepared baking dish.
  • Bake in preheated oven until a knife inserted near the center comes out clean, 35 to 45 minutes.
