PRIZE-WINNING CHILI
I won a chili cook-off with this recipe in Tennessee in 1996. My family and friends all love this chili. It is requested for all family get-togethers. Great dish for a chilly day.

Steps:
- Heat olive oil in a large stock pot over medium heat; cook and stir onion, bell pepper, and jalapeno pepper until onion is translucent, about 10 minutes. Add sausage and ground beef; continue to cook and stir until meat is browned and crumbly, about 7 minutes. Drain and discard grease.
- Season meat mixture with chili powder, cayenne pepper, and salt. Add pinto beans, tomatoes, and water and bring to a simmer over medium heat. Reduce heat to medium-low and continue to simmer for 1 hour.

AWARD WINNING CHILI
This delicious chili took 2nd place at our local chili cook-off! Bet you can't eat just one bowl. If it is too thick, add water 1/4 cup at a time until you reach desired consistency. Even better tasting the second day!

Steps:
- In a large pot over medium-low heat, combine tomatoes, tomato paste, carrot, onion, celery, wine, pepper flakes, bell peppers and steak sauce.
- While tomato mixture is simmering, in a large skillet over medium heat, cook bacon until crisp. Remove to paper towels. Cook beef in bacon drippings until brown; drain. Stir chili seasoning into ground beef.
- Stir seasoned beef, cumin and bacon into tomato mixture. Continue to simmer until vegetables are tender and flavors are well blended.
- Stir in beans, cilantro and parsley. Heat through and serve.

SUPER BOWL CHILI
This is the recipe I make every year for the Super Bowl, for my boyfriend and two dozen or so of his closest beer-drinking, football-watching friends. The problem with trying to find a good chili recipe is that what makes a "good" chili is a personal opinion; my idea of a great chili may be very different from yours. My chili is heavy on the meat, garlic and spice; rather rich-tasting, hearty, thick, fiery, and smoky. If that sounds like something you'd enjoy, I'm also going to include plenty of advice on how to adjust it to meet your tastes. Enjoy. Notes: To cut down on fat, lean, turkey/chicken Italian sausage can be used, without affecting the flavour or texture of the final meal. Extra-lean beef can also be used.

- Warning: this makes a LOT of chili. I suggest using a 12-quart stock pot.
- In stockpot over medium heat, brown sausage or beef, stirring and breaking it up as it browns. Depending on how lean your meat and sausage are, add olive oil if the meat begins to stick.
- When meat is browned, add onions and garlic and cook until soft. Add chili powder, cocoa, and cumin. Stir well to incorporate and cook for an additional minute.
- Transfer chipotles to blender or food processor and puree until smooth, adding some water if necessary.
- (Warning: if you aren't familiar with chipotles and aren't a fan of very spicy food, they are VERY HOT. If you aren't sure how much of this you would like in your chili - reserve it for now, proceed with the rest of the recipe, and then incorporate the chipotles, one teaspoon at a time, until your desired hotness level is reached).
- Add (chipotles if you are confident you want all of them in there), molasses, tomato paste, ONE can of crushed tomatoes, and ONE cup of the beef stock. Bring to boil, stirrng well to prevent from sticking to bottom of pot.
- Taste your chili so far. Add salt and liquid smoke to taste - it's a big pot, so you may need to add what seems like a LOT of salt to get it to taste right. A little goes a long way with the liquid smoke.
- Depending on how soupy or tomatoey you like your chili - you may or may not wish to add more stock or more tomatoes.
- The Velveeta may seem like an odd ingredient to add to chili - but it adds a creaminess that makes it all come together. If you're not sure you'll enjoy it - remove about a cup of chili to a much smaller pot, add an ounce of Velveeta and cook, stirring, to melt. Taste it - and compare it to the big pot to see which you like better.
- If you like it - cube the Velveeta and add, stirring well to melt and incorporate into the chili.
- If you have left the chipotles aside until now, and want to add a bit of zing - add them, one teaspoon or so at a time, stirring well to incorporate after each addition.
- If you overshoot and it's spicier than you wanted - the potato flakes can soak up a lot of the spice, and you can add them a little at a time.
SUPER BOWL AWARD WINNING CHILI BEANS
A fantastic chili that's packed with flavor, meat, and beans. Hearty and comforting, it's perfect for a cool crisp day of watching football. This recipe does take a little babysitting while it simmers on the stove. But, Joyce also gives an option to throw it in the slow cooker for it to cook down and allow the flavors to mingle. Serve the piping hot chili with a piece of buttery, sweet cornbread and the flavor contrasts are fantastic.

- Drizzle about a Tbsp of olive oil or canola oil in a large stockpot on the stove and heat to med-high temp. Saute onion, jalapenos, and garlic until onions are almost clear.
- Mince lean ground beef and cook with the onion mixture. Salt and pepper to taste. Add Mexican oregano and stir to blend.
- Add tomatoes, tomato sauce, tomato paste, green chiles, including the liquid from the tomatoes. Stir to incorporate.
- Drain the liquid from all of the beans. Pour beans into the chili mixture and stir well.
- If you have time to tend to the beans you can leave them in the stockpot. Let the chili beans simmer for 1-2 hours. Make sure to stir periodically. Otherwise, put the chili mixture & beans into a slow cooker for 4 - 6 hours on low. Then on warm until ready to serve.
- Optional: Serve with corn bread, Fritos scoops, shredded cheddar/jack or Mexican blend cheeses, and sour cream.
- *DIRECTIONS IF YOU ARE GOING TO USE A SLOW COOKER OR CROCK POT: Steps 1, 2, & 3are done in a large skillet or large saute pan instead of a stockpot. Pour the ingredients into slow cooker or Crock Pot and continue with steps 4 & 5.

- In a large skillet cook the ground beef and sausage over medium heat until browned. Remove 1/4 cup drippings then strain and place into a crock pot or large stock pot.
- In the same pan saute your onions, celery, carrots, peppers, and garlic with the 1/4 drippings and salt and pepper until the onions are soft and translucent. Stir in tomato paste and allow the mixture to caramelize. Add in your red wine, scraping the bottom of the pan with a spatula to get all the delicious flavor bits on the bottom. Add in the diced tomatoes, tomato soup, Worcestershire sauce, hot sauce, and chili powder (not the old el paso just yet) cumin, parsley and ancho chile powder. Bring to a slow boil and then add in your honey. Simmer for a few minutes then add to the crock pot or pot.
- Add all your beans to the crock pot and stir in your Old El Paso seasoning. Let cook for in crock pot for 4-6 hours. Turn it off and let cool overnight. Reheat in crockpot on low for 4-6 hours. Serve topped with sour cream, shredded cheese, and chopped cilantro. (You can serve after the first 4-6 hours I just like to let mine sit!)
