Number Of Ingredients 15

2 boneless, skinless chicken breasts, cubed
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 cup flour
8 eggs, beaten
3 cups seasoned bread crumbs
oil, for frying
1 cup tomato sauce
8 oz mozzarella cheese, sliced or shredded
¼ cup grated parmesan cheese
fresh basil, chopped, to garnish

Steps:

  • In a food processor, add the chicken, salt, pepper, oregano, garlic powder, onion powder, and paprika, and pulse until thoroughly combined, with no large chunks.
  • Spread the mixture evenly into the bottom of a plastic wrap-lined, 10-inch (25 cm) cake pan. Fold over the excess saran wrap on top, and press it into a flat shape. Freeze until completely frozen solid, 2-4 hours.
  • In 3 separate shallow dishes, distribute the flour, eggs, and bread crumbs.
  • Unwrap the frozen chicken disc and dip it in the flour, shaking off any excess.
  • Submerge it into the eggs, then cover it completely with the bread crumbs, pressing the bread crumbs into the chicken.
  • Freeze for 15 minutes.
  • Preheat oven to broil.
  • Add oil to a large, deep pan halfway up the side to 400°F (200°C).
  • Carefully lower the chicken disc into the oil with tongs, making sure it doesn't splash. If the bottom is getting more color than the top, flip the patty extremely carefully and fry the other side until a deep golden brown.
  • Remove the chicken disc from the oil and transfer to a wire rack. Blot with paper towels to remove excess oil.
  • Add the tomato sauce to the fried chicken disc, spreading it in an even layer.
  • Lay the mozzarella over the sauce, then sprinkle with Parmesan over the top.
  • Broil for 5-8 minutes, or until the cheese is bubbly and golden brown.
  • Top with basil, slice, and serve.

1 cup shredded part-skim mozzarella cheese
1/2 cup chopped sweet red pepper

  • Cut bread in half lengthwise, then in half widthwise. In a small bowl, combine the butter, cheeses, garlic and Italian seasoning; spread over bread. Top with the remaining ingredients. This is a recipe that I came up with; measurements can be varied depending on your taste, i.e. if you want more cheese add more cheese, if you want less use less, you really can't hurt it. And you really can't mess it up as long as you use this recipe as a foundation.

½ cup grated Parmesan cheese
2 teaspoons Italian seasoning

When I say easy, I mean easy. This meal takes no time to prepare and taste's great. I love to serve it with spaghetti and a tossed salad.

4 boneless chicken breasts
2 sheets wax paper
flour
Italian seasoned breadcrumbs
2 eggs
3 tablespoons olive oil
1 (26 ounce) jar spaghetti sauce (I use Paul Newman's Marinara)
mozzarella cheese
parmesan cheese

Steps:

  • Wash and dry chicken breasts.
  • Place chicken between 2 sheets of wax paper and
  • Pound on both sides with a metal tenderizer mallet.
  • Lightly flour chicken.
  • Dip in egg.
  • Then coat with Italian bread crumbs.
  • Lightly brown breast's in pre-heated pan of olive oil.
  • After lightly browned, cut in the thickest part to make sure they are done.
  • After done, take out and place on paper towel to remove extra oil.
  • Remove paper towels and place in a big enough pan to fit chicken.
  • Using a spoon, spoon sauce over chicken to cover, and then add as much mozzarella and parmesan cheese as you want.
  • Repeat one more time.
  • Bake in a 350 pre-heated over for about 10 minute.

Ever had one of those nights where you didn't want take-out but you didn't want to make a fuss in the kitchen either? Tonight was one of those nights. I think some of my best dinners are 50% creativity and 50% laziness! ;) So with some of the usual pantry suspects, some leftover chicken, and a minimum amount of fuss, we ended up with some of the yummiest pizza bread we've ever had. Hope your family likes it too! :) (photo is from the internet, dinner didn't last long enough to get a picture!)

1 - loaf of your favorite garlic bread cut lengthwise (we used aldi's l'oven fresh parmesan and romano)
1 jar(s) prego roasted garlic parmesan sauce
4 ounce(s) sliced mushrooms (canned or fresh)
1-2 cup(s) cubed or shredded chicken (we used a rotisserie chicken)
8 ounce(s) shredded cheese, 5-cheese italian blend
1 package(s) caesar salad kit (optional)

Steps:

  • Preheat oven to 400F.
  • Lay out the loaf halves on a baking sheet.
  • Spread on the sauce, as much or as little as you like. (Save the remaining sauce for another meal or warm it up for dipping.)
  • Add the mushrooms, dividing evenly. Then the chicken, and finally the cheese.
  • Bake for 12-15 minutes. Depending on how crispy you like your pizza bread, I'd start keeping watch after 10 minutes. Cut each loaf half into 3 pieces, add a small caesar side salad and dinner is served!
  • Going to try it with sliced olives next time, and maybe sliced up breaded chicken tenders. Yummy! I imagine this would also work with the texas toast style garlic bread if you prefer it.
