Extra chewy granola bars. You can make them your own by picking different ingredients to add in! Try using any combination of miniature chocolate chips, sunflower seeds, raisins, chopped dried fruits, candy-coated chocolate pieces, chopped nuts, etc.

4 ½ cups rolled oats
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
⅔ cup butter, softened
½ cup honey
⅓ cup packed brown sugar
2 cups miniature semisweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 9x13 inch pan.
  • In a large mixing bowl combine the oats, flour, baking soda, vanilla, butter or margarine, honey and brown sugar. Stir in the 2 cups assorted chocolate chips, raisins, nuts etc.
  • Lightly press mixture into the prepared pan. Bake at 325 degrees F (165 degrees C) for 18 to 22 minutes or until golden brown. Let cool for 10 minutes then cut into bars. Let bars cool completely in pan before removing or serving.

2 cups rolled oats
1/2 tsp baking soda
1/2 tsp salt
1/2 cup rice crispies ((brown, white, or gluten-free))
3/4 cup oat flour, (or process oats in a blender to make your own)
1/4 cup melted coconut or vegetable oil OR nut butter of choice
1/2 cup raw agave or honey
1/4 cup brown sugar OR 1/8 tsp pure stevia
1/4 cup applesauce or mashed banana
1 tsp pure vanilla extract

Steps:

  • Line an 8-inch pan with parchment paper. Set aside. If you wish to bake the bars, preheat oven to 350 F. Stir together all dry ingredients in a large bowl. Whisk liquid ingredients together in a separate bowl, then stir wet into dry. Transfer to the prepared pan. Smooth down firmly, using a second sheet of parchment or wax paper. Press down as hard as you can. For no-bake healthy granola bars, chill until firm. (The no-bake option is also firmer if you use coconut oil.) This is a base recipe that is full of nutrient rich ingredients but yet is not overly sweet. The result is a chewy, almost cake-like granola bar though not at all similar to any that you would find in the supermarket. This recipe is pretty flexible so don't hesitate to modify to suit your tastes. For a vegan version, replace the honey with maple syrup. And, try some of the suggested additions. Number Of Ingredients 12

2 cups rolled oats (old-fashioned)
1 cup whole wheat pastry flour (or stoneground spelt flour)
1 cup wheat germ
1/2 teaspoon salt
2 teaspoons cinnamon, ground
1/4 teaspoon nutmeg, freshly grated
1/2 cup ground flax seeds
1/2 cup oil (neutral flavor like sunflower)
1/2 cup honey
2 teaspoons vanilla extract
2 teaspoons blackstrap molasses (optional)
1 cup sugar-free applesauce, thick

Steps:

  • Preheat oven to 350°F.
  • Toast oats for 5 minutes in a dry skillet over medium heat. Let cool.
  • In a large bowl, combine dry ingredients (including oats) and whisk together until well combined.
  • In a separate bowl, whisk together wet ingredients until well blended.
  • Add wet mixture to dry ingredients and blend gently until well moistened. Add any of the suggested additions now (see Step 8). Mixture should be moist but not too wet. If it seems too dry and crumbly, add a little more applesauce (by the spoonful).
  • Line a 9in x 13in pan with parchment paper and press mixture into pan.
  • Bake at 350°F for 30 minutes. Cut into bars while warm, but let cool completely before removing from pan.
  • Suggested additions (add up to 2 cups of any of the following): chocolate chips, raisins (soaked in hot water for 10 minutes then drained), unsweetened shredded coconut, sunflower seeds (unsalted), pumpkin seeds (unsalted), dried fruit (like chopped apricots, cranberries), chopped toasted nuts.

Chewy, nutty, chocolaty, and packed with tasty energy, no one will ever know these bars are low-fat and healthy! They're very easy to make and you can pack in everyone's favorite nuts and fruits. My family has now stopped buying Kashi® and chewy bars because we love these so much. These are gluten-free when made with rice flour and appear to be professionally made thanks to the small spoonful of corn syrup that keeps everything tightly combined and gives the bars a nice shine. Have fun experimenting with different combinations of nuts, dried fruits, and toppings! Almond butter works well, too!

3 tablespoons butter, melted
¼ cup brown sugar

  • Stir peanut butter and melted butter together in a bowl until smooth. Add brown sugar, honey, corn syrup, vanilla extract, cinnamon, and salt; stir. Mix applesauce into peanut butter mixture.
  • Combine oats and flour in a bowl; toss to coat oats with flour. Stir peanuts and raisins into oat mixture. Pour peanut butter mixture over the oat mixture; stir to coat completely. Spread mixture into the prepared baking dish.
  • Bake in the preheated oven for 10 minutes. Sprinkle chocolate chips over the top and continue baking until chocolate melts and edges begin to brown, about 5 minutes more. Spread melted chocolate chips with the back of a spoon or a rubber spatula to coat the top. Cool completely before cutting into bars.

1 large egg, room temperature
2 tablespoons honey

Steps:

  • Preheat oven to 350°. Cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg, honey and vanilla. Whisk together flour, cinnamon, baking powder and salt; gradually beat into creamed mixture. This was adapted from King Arthur Flour, however I tried to use healthier ingredients. I love this recipe as it is extreamly easy and flexible. This is a basic granola bar that you can add anything to. I try to make this weekly as a quick on the go breakfest or a healthy snack during the day. I've double the recipe and keep extras in the freezer.

1 2/3 cups quick-cooking rolled oats
1/3 cup brown sugar (use more for a sweetness if you want it like store bought bars)
1/3 cup oat flour (or 1/3 cup oats, processed till finely ground in a food processor or blender)
1/4 teaspoon salt
1/4 teaspoon ground cinnamon (optional)
2 -3 cups dried fruits (* aprox 10 to 15 ounces) or 2 -3 cups nuts (* aprox 10 to 15 ounces)
1/3 cup peanut butter (I use almond butter) or 1/3 cup another nut butter (I use almond butter)
1 teaspoon vanilla extract (optional)
6 tablespoons butter (melted) or 6 tablespoons margarine (melted)
1/4 cup molasses
2 tablespoons agave syrup (you can use light corn syrup if you do not have agave)
1 tablespoon water

Steps:

  • Pre heat oven to 350°F Line an 8"x8"x2" pan with parchment paper. Lightly grease the parchment paper and the exposed pan or coat with a non-stick spray.
  • Stir together all the dry ingredients, including the fruit and nuts. In a separate bowl, whisk together the vanilla, melted butter or margarine, liquid sweeteners, water, and nut butter until smooth. Toss the wet incredients witht eh dry until the mixture is evenly curmbly. Spread in the prepared pan, pressing them in firmly.
  • Bake the bars for 28-35 minutes, until they're lightly browned on the edges. They will still sem soft and underbaked when you press the centre. Let cool fully before cutting in to squares with the serrated knife. I sometimes put them in the freezer befor cutting so the cut smoothly.
  • Store in an airtight container in the refrigerator or in the freezer.
  • *My favorite add ins are dried cherries, chocolate chips, pecans and seasme seeds. However you can add dried cranberries, apricots, apples, pears, walnuts, pistachios, sunflower seeds, coconut, or any other dried fruit or nuts. I sometimes even add protien powder or dried greens.
