3/4 cup butter, softened
1-1/2 cups sugar
1 large egg
1 teaspoon vanilla extract
1 cup buttermilk
3/4 cup sour cream
2 cups all-purpose flour
2/3 cup baking cocoa
1 teaspoon baking soda
1/4 teaspoon salt
FILLING:
4 ounces semisweet chocolate, chopped
1 cup heavy whipping cream
1/2 teaspoon vanilla extract
GANACHE:
8 ounces semisweet chocolate, chopped
1/4 cup butter, cubed
3/4 cup heavy whipping cream

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add egg and vanilla; beat for 2 minutes. Combine buttermilk and sour cream. Combine the flour, cocoa, baking soda and salt; add to creamed mixture alternately with buttermilk mixture, beating well after each addition. , Pour into two greased and waxed paper-lined 9-in. round baking pans. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pans to wire racks to cool completely. , In a heavy saucepan, melt chocolate with cream over low heat. Remove from the heat; stir in vanilla. Transfer to a small mixing bowl; chill until slightly thickened, stirring occasionally. Beat on medium speed until light and fluffy. Chill until mixture achieves spreading consistency. , For ganache, in a heavy saucepan, melt chocolate and butter. Gradually add cream; heat until just warmed. Chill until slightly thickened., Place one cake layer on a serving plate; spread with filling. Top with remaining cake layer. Slowly pour ganache over top of cake. Refrigerate until serving.

3/4 cup unsweetened Dutch-process cocoa powder, plus more for pans

3/4 cup low-fat buttermilk
3/4 cup warm water
3 tablespoons safflower oil
1 teaspoon pure vanilla extract
2 batches Ganache

Steps:

  • Preheat oven to 350 degrees. Butter two 8-inch round cake pans and dust with cocoa, tapping out excess. Sift cocoa, flour, sugar, baking soda, baking powder, and 3/4 teaspoon salt into the bowl of a mixer. Beat on low speed until just combined.
  • Raise speed to medium, and add eggs, buttermilk, warm water, oil, and vanilla. Beat until smooth, about 3 minutes.
  • Divide batter between pans. Bake until set and a toothpick inserted into center of each comes out clean, about 35 minutes. Let cakes cool in pans set on wire racks for 15 minutes. Turn out cakes. Let cool completely.
  • Transfer 1 cake to a wire rack set on a rimmed baking sheet. Pour half the warm ganache over top; pour in center, then slowly but steadily pour around edges, allowing ganache to drip down sides and cover cake. Let stand for 15 minutes. Transfer cake to a cake stand. Repeat with remaining cake and ganache.
  • Let cakes stand until set, about 3 hours at room temperature or 1 hour in the refrigerator.

1/4 pound unsalted butter at room temperature
1 cup sugar
4 extra-large eggs at room temperature
1 1/3 cups Hershey's chocolate syrup
1 tablespoon pure vanilla extract
1 cup all-purpose flour
1/2 cup heavy cream
8 ounces good semisweet chocolate chips
1 teaspoon instant coffee granules
Candied violets or edible gold leaf, for decoration (optional)

Steps:

  • Preheat the oven to 325 degrees. Butter and flour an 8-inch round cake pan, then line the bottom with parchment paper.
  • Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment until light and fluffy. Add the eggs, one at a time. Mix in the chocolate syrup and vanilla. Add the flour and mix until just combined. Don't overbeat, or the cake will be tough.
  • Pour the batter into the pan and bake for 40 to 45 minutes, or until just set in the middle. Don't overbake! Let cool thoroughly in the pan.
  • For the ganache, cook the heavy cream, chocolate chips, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.
  • Place the cake upside down on a wire rack and pour the glaze evenly over the top, making sure to cover the entire cake and sides. You can tilt the rack to smooth the glaze. Decorate with candied violets, if desired, or gently crumble the gold leaf and place it on the center of the cake. Do not refrigerate.

1 tablespoon cold drip coffee

1 cup sour cream
1/4 cup heavy whipping cream
1 teaspoon vanilla extract
2 cups all purpose flour

For Ganache:
2 1/2 cups heavy whipping cream
20 ounces fine quality bittersweet chocolate (60% cacao) finley chopped with food processor.
Hint The ratio of cream to chocolate:
Use 1/2 cup heavy whipping cream for every 4 ounces chocolate When preparing a 2 layer cake, you may need to make less.

Steps:

  • Preheat oven to 350 F. Prepare 3 8-inch round cake pans with nonstick cooking spray and flour. Cream together butter and sugar, then beat in eggs, one at a time. In a separate bowl, sift together flour, baking soda, and salt. In another bowl, whisk together water, cold drip coffee, cocoa, and esspresso powder until smooth. Then whisk in sour cream, cream, and vanilla. Add flour mixture and cocoa mixture to sugar mixture in alternating batches, beginning and ending with flour mixture. Mix together until well blended. Divide batter evenly among prepared pans, gently tapping to remove air bubbles and smooth tops. Bake in the middle of the oven for 30 minutes or until tester comes out clean. Cool in pans for 30 minutes, then remove cakes onto cooling racks to cool completely. While cakes are cooling, you can begin to prepare your ganache. In a saucepan, bring cream to a simmer, then remove from heat. Whisk in chocolate until smooth. You may leave at room temperature until desired consitency is met or refrigerate to thicken more quickly. *Keep in mind that to acheive the glossy appearance of the ganache, it must have set without refrigeration. Refrigerated ganache may be heated again to achieve the desired consistency and appearance. Cake freezes well if well covered. I have made this cake, filled and glazed it with ganache, then frozen it. Upon thawing, I cover it with a light layer of fresh ganache and it was beautiful and couldn't have looked or tasted fresher. I have also decorated with shaved chocolate on top for an even more lavish appearance!
