- Cook pasta according to package directions. Meanwhile, in large nonstick skillet, saute the mushrooms, carrots, snow peas, yellow pepper, basil and garlic in oil for 2-3 minutes or until crisp-tender. , In a small bowl, combine the cornstarch, broth and salt until smooth; gradually stir into the vegetable mixture. Bring to a boil. Cook and stir for 1-2 minutes or until vegetables are crisp-tender and sauce is thickened., Remove from the heat; stir in tomatoes. Drain pasta; divide among four plates. Top with vegetable mixture; sprinkle with cheese.

- Saute parsley and garlic in oil.

- Cook pasta as directed on pkg. Meanwhile, drain artichokes, reserving the marinade. Chop artichokes; set aside. Heat oil in large skillet. Add peppers and garlic; cook and stir until peppers are crisp-tender. Add artichokes, reserved artichoke marinade and the mustard; stir until well blended.
- Drain pasta, reserving cooking water. Place pasta in large bowl. Add artichoke mixture; toss to coat. Moisten with some of the reserved pasta cooking water, if desired.
- Sprinkle with cheese.

I found this recipe on the Kraft foods website. It was to die for! I followed the recipe but I added extra artichoke hearts, an 8oz. container of mushrooms, 1 bunch of asparagus, chopped and a couple tablespoons of capers all tossed in with the red peppers to saute together in the oil. AWESOME!

- Chop artichokes and set aside.

DELICIOUS ANGEL HAIR PASTA
Angel hair pasta cooked and served with essentially a hot pasta salad dressing and cheese. I came up with this recipe as I could not find anything to eat, so I went through my spice cabinet and refrigerator, found these ingredients and threw them together. Serve with fresh chopped tomato.

- Bring a pot of lightly salted water to a rolling boil; cook the angel hair pasta in boiling water until the pasta has cooked through yet firm to the bite, 4 to 5 minutes. Drain.
- Heat the olive oil in a skillet over medium-high heat. Add the pimentos, lemon juice, vinegar, sugar, 1 tablespoon parsley, basil, oregano, garlic powder, and onion powder to the oil and stir; cook until the herbs are heated and fragrant. - Cook pasta in boiling water until al dente and, reserving 2 tablespoons of the cooking water, drain well. Add pasta with the reserved cooking water to bowl and toss with lemon mixture until it is absorbed. Serve pasta warm or at room temperature.
