1 medium spaghetti squash (about 8 inches)
1 cup water
1 pound lean ground beef (90% lean)
1 large onion, chopped
1 medium green pepper, chopped
1 teaspoon garlic powder
2 teaspoons dried basil
1-1/2 teaspoons dried oregano
1 teaspoon salt
1/2 teaspoon pepper
1/4 to 1/2 teaspoon chili powder
1 can (28 ounces) tomato puree
1 cup grated Parmesan cheese, divided

Steps:

  • Preheat oven to 375°. Slice squash lengthwise and scoop out seeds. Place squash, cut side down, in a baking dish. Add water and cover tightly with foil. Bake until easily pierced with a fork, 20-30 minutes. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink, breaking into crumbles; drain. Add onion, green pepper, herbs and seasonings; cook and stir until onion is tender, 5-7 minutes. Stir in tomato puree. Cover and cook over low heat, stirring occasionally. Scoop out squash, separating the strands with a fork. Just before serving; stir 1/2 cup Parmesan cheese into meat sauce. Serve sauce over spaghetti squash with remaining 1/2 cup Parmesan cheese.

Rach swaps spaghetti squash for pasta to cut carbs and boost fiber in this gluten-free version of spaghetti with meat sauce.

1 large spaghetti squash
cut in half lengthwise
seeds removed
6 tablespoons EVOO - Extra Virgin Olive Oil
divided
Salt and ground black pepper
1/2 cup grated Pecorino Romano cheese
plus more for topping if desired
1/4 pound thickly sliced pancetta
chopped
1 to 1 1/2 pounds ground sirloin
1 carrot peeled and cut into small dice or shredded
1 medium onion
cut into small dice
3 cloves garlic
finely chopped or grated
1/4 cup tomato paste
1/2 cup red wine
1/2 cup beef stock
1/2 cup (about a handful) fresh basil
chopped
1/2 cup (about a handful) fresh parsley
chopped

Steps:

  • Preheat oven to 400F
  • Place the spaghetti squash halves, cut side up, onto a baking sheet
  • Drizzle with 2 tablespoons EVOO, salt and pepper
  • Turn the squash over so they're cut side down and roast until the flesh is tender, about 45 minutes to an hour
  • Once cooked, use a fork to loosen the squash strands up
  • Drizzle with 2 tablespoons EVOO, ground black pepper, and a sprinkle of cheese
  • Reserve squash in the shells
  • While the squash is roasting, place a large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons
  • Add the pancetta to the pan and cook until crispy, about 5 minutes
  • Add the sirloin to the pan and cook until golden brown, 6-7 minutes
  • Add the carrots, onion and garlic to the pan and cook until the veggies are tender, about 5 minutes
  • Season everything with salt and pepper, and add the tomato paste, cooking it until golden brown and aromatic, about 1 minute
  • Add the red wine and beef stock scraping the bottom for any bits that may be stuck, and cook sauce until thickened and slightly reduced, about 5 minutes
  • To serve, ladle meat sauce on top of each squash half and garnish each with fresh basil, parsley and additional Pecorino-Romano cheese

1 spaghetti squash, halved lengthwise and seeded
1 ½ pounds ground beef
1 white onion, diced
1 tablespoon extra-virgin olive oil
1 cup sliced mushrooms
1 zucchini, diced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (14.5 ounce) can crushed tomatoes
1 (8 ounce) can crushed tomatoes
¼ cup chopped fresh basil, or to taste
¼ cup chopped fresh oregano, or to taste
¼ cup chopped fresh thyme, or to taste
1 tablespoon red pepper flakes, or to taste
½ cup extra-virgin olive oil, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour water into a baking dish. Place squash halves with cut sides down in baking dish; roast for until tender, 30 to 40 minutes.
  • While squash is baking, cook and stir ground beef and onions in a skillet over medium-high heat until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Set beef aside.
  • Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir mushrooms, zucchini, green and red bell peppers, both amounts of crushed tomatoes, basil, oregano and thyme. Simmer over medium heat until vegetables are cooked through and tender, about 10 minutes. Add the ground beef and onions; stir to combine. Simmer on low heat, stirring occasionally, while you finish preparing spaghetti squash.
  • Scrape the inside of hot spaghetti squash halves with a fork to shred the squash into strands; divide onto 8 plates. Drizzle each serving of spaghetti squash with 1 tablespoon extra-virgin olive oil and top each serving with a generous amount of meat sauce.

1 medium spaghetti squash
cooking spray
1 tablespoon olive oil
½ pound bulk Italian sausage
1 medium zucchini, chopped
1 medium red bell pepper, chopped
½ medium onion, chopped
1 clove garlic, minced
salt and ground black pepper to taste
1 (28 ounce) jar pasta sauce
½ cup shredded Parmesan cheese
½ cup shredded mozzarella cheese

Steps:

  • Pierce squash a few times with a very sharp knife. Place squash in a microwave-safe bowl and microwave on high power until squash is tender and a knife can easily poke through the skin, 10 to 13 minutes. Let squash rest, undisturbed, for 10 minutes.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Spray an 8-inch casserole dish with cooking spray.
  • Heat oil in a skillet over medium heat; stir in sausage, zucchini, bell pepper, onion, and garlic. Saute, stirring occasionally, until veggies are tender and sausage is crumbly and brown, 5 to 7 minutes.
  • Cut open squash and remove and discard all seeds. Scrape out the flesh with a fork and add to the sausage and veggie mixture. Season with salt and pepper and cook over medium heat for 5 minutes. Stir in pasta sauce and transfer to the prepared casserole dish. Top with shredded Parmesan and mozzarella cheeses.
  • Bake in the preheated oven until heated through and cheeses are melted, about 15 minutes.

I grow spaghetti squash in my garden and often try different ways to cook it. This is one of my favorite recipes for spaghetti squash, I found one similar in an old cookbook and just added my own things. It is really yummy!!

1 large spaghetti squash
1 (16 ounce) jar favorite spaghetti sauce
1 (14 ounce) can stewed tomatoes
1 chopped onion
1 (10 ounce) package frozen chopped spinach
1 (4 ounce) can mushrooms
1 garlic clove, minced
salt and pepper
butter

Steps:

  • Wash spaghetti squash then cut in half, lengthwise.
  • Scrape out seeds.
  • Sprinkle salt and pepper on spaghetti squash halves, add butter then put in baking pan with 1/4 cup water.
  • Cover with aluminum foil and bake at 350 for 45 minutes.
  • Remove from oven.
  • Meanwhile, as squash is cooking, put stewed tomatoes, onions, mushrooms, garlic and spinach in sauce pan, bring to a low boil and simmer 30 minutes.
  • Drain off juice, add spaghetti sauce, bring back to a boil, simmer 15-20 minutes .
  • Using a fork, scrape squash from shell, starting at one end finishing at the other.
  • It will look just like spaghetti noodles.
  • Put squash in one bowl and sauce in another bowl.
  • Serve with Parmesan cheese and garlic bread or a salad.

This was a Rachael Ray recipe a few weeks ago. I made it last night and it was SO GOOD! A few notes, though. She said it takes 45 minutes- 1 hour to roast the spaghetti squash. It took WAY longer. Next time I would start it in the microwave and cook it halfway. Then I would add the olive oil and cheese and finish it off in the oven. Once the squash was done, I spooned in the meat sauce, covered it with a bunch of the grated romano and put it back in the oven to brown the cheese. MMMMMM! Also, if you have a non stick pan, then you don't need the full 2 Tbl of olive oil to brown the pancetta. Prep time includes the roasting of the squash.

  • Step 1Bring a large pot of water to a boil for the pasta.Step 2For the breadcrumbs, in a skillet, heat the oil, two turns of the pan, over medium-high. Add the butter and let it melt into the oil. Add the garlic. Cook, stirring often, until fragrant, about a minute. Add the breadcrumbs. Cook, stirring often, until toasted and deep golden brown, 3 to 4 minutes; season with salt and pepper. Transfer to a plate and let cool. 1/2 medium spaghetti squash
4 tablespoons unsalted butter
1 cup heavy cream
1 clove garlic, crushed
1 1/2 cups freshly grated Parmesan

Grape or cherry tomatoes, sliced in 1/2

Steps:

  • Slice spaghetti squash in half lengthwise. Scoop out the seeds with a spoon and clean as you would a pumpkin. Completely submerge 1 half at a time, in a large pot of boiling water and cook for about 20 minutes until the inside is just tender to a fork and pulls apart in strands. (Cook's Note: It is better to undercook if you're not sure.) Remove, drain and cool with cold water or ice bath to stop the cooking.
  • Scoop out the cooked squash from its skin with a spoon as you would an avocado and discard the skin. Use a fork to fluff and separate the squash into "spaghetti"- like strands. You can also use your hands. Reserve the separated cooked squash and dip with a strainer into boiling water to reheat just before serving.
  • Melt half the butter in a medium saucepan over medium-high heat. Add cream and reduce for about 2 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in the rest of the butter and parsley. Place spaghetti squash in a large serving bowl, and pour Alfredo sauce over squash. Garnish with basil and tomatoes. Serve and enjoy!
