HOW TO TENDERISE BEEF (VELVETING BEEF)
Chinese restaurants tenderise economical cuts of beef so they are tender and juicy in stir fries. It's also done for chicken. There's a few methods - this baking soda way is the easiest, fastest and highly effective. Though I'm sharing this with beef stir fries in mind, don't just limit yourself to Asian food. This beef can be used for any recipe calling for strips of beef to be cooked quickly, like Beef Stroganoff. Do not use this method for whole steaks (read Note 4).

- Slice beef thinly against the grain. (Note 3)
- Place in a bowl. Sprinkle over baking soda, toss with fingers to coat evenly.
- Refrigerate for 30 to 40 minutes. (See Note 1 for different cuts)
- Rinse beef well with tap water. Shake off excess water, then use paper towels to blot away excess water (doesn't need to be 100% dry).
- Proceed with recipe of choice. Beef can be marinated or seasoned before cooking, stir fried or deep fried, and it will be soft and tender, "velvet" like. Use for Stir Fries, Stir Fried Noodles, Beef Stroganoff and any other recipe calling for quick-cooked beef strips.

SUPER TENDER BEEF STIR-FRY

But how do you keep your beef tender when stir-frying? Read on, my friends! My secret ingredient will supercharge your beef stir-fry and keep that steak juicy and succulent.

- Step 1.Slice the steaks against the grain and at a diagonal to form wide strips that are no more than 0.5 cm (0.2 inches) thick.
- Step 2.Whisk together the marinade ingredients in a large bowl. Add the beef and mix well with your hands to make sure each piece of beef is coated. Set aside to marinate for 10 minutes.
- Step 3.To make the stir-fry sauce, mix the ingredients in a small bowl.
- Step 4.Heat the vegetable oil in a large non-stick frying pan over high heat. Add the garlic and then the onion and stir-fry for 30 seconds. Push the onion and garlic to the sides of the pan and add the beef strips into the centre. Spread the beef out as much as possible and allow to sear for about 2 minutes. Then stir-fry and combine all the ingredients. Before the beef is cooked through, add the capsicum. Stir-fry for another 30 seconds or until the beef is just cooked. Add the stir-fry sauce and stir-fry for another 10 seconds or until everything is well coated. Turn the heat off and toss through the spring onions.
- Notes: - Chinese Shaoxing wine is a type of cooking rice wine. It's available in the Asian aisle of some major supermarkets or from an Asian grocery store. If you'd rather leave it out, simply replace with beef stock.

- Select An Appropriate Cut of Beef. Choose a cut of steak such as flank steak or better. The more premium the cut, the more tender the meat. I usually opt for flank steak because it strikes a good balance between budget friendliness and tenderness.
- Slice Against The Grain. Inspect the steak and look for long muscle fibers. Notice how they are aligned with the steak. You should slice perpendicular to those lines, so that you are cutting through the fibers.

This is similar to (but less involved than) a common technique in Chinese restaurants called velveting, where they will marinate meats in corn starch and cooking wine or soy sauce for about 15 minutes.
- Don’t Overcook. Thinly sliced beef only needs to be briefly seared on a hot pan before it’s browned and cooked through, about a few minutes. Once the beef is browned on all sides, it is done and can be removed from the pan.
