Perfect sushi starts with perfect rice. Here's an easy recipe for Japanese sushi rice, which is a sticky rice seasoned with vinegar and sugar.

3 1/4 cups water
1/3 cup rice vinegar
1/4 cup sake-mash vinegar, or white-wine vinegar , optional

Steps:

  • Gather the ingredients.
  • Put the rice in a large bowl and rinse it by covering it with cold running water and gently mixing it around using your hand. Carefully pour out the water and repeat rinsing until the water becomes almost clear.
  • Drain the rice in a colander and set aside for 30 minutes.
  • Place the rice in a rice cooker and add the water. Let the rice soak in the water for at least 30 minutes.
  • Start the cooker and set it according to your cooker's instructions. When the rice is cooked, let it steam for about 15 minutes.
  • Prepare the sushi vinegar by mixing the rice vinegar, sake-mash vinegar (if using), sugar, and salt in a saucepan. Put the pan over low heat and cook until the sugar dissolves. Set aside to cool.
  • Spread the hot steamed rice onto a large plate or in a large bowl.
  • Sprinkle the vinegar mixture over the rice and quickly fold the rice with a shamoji (rice spatula) or wooden spatula. Be careful not to smash the rice.
  • To cool and remove the moisture of the rice, waft a handheld paper fan over the sushi rice as you mix it. This will give the sushi rice a shiny look.
  • It's best to use the sushi rice right away to make rolls with your favorite fillings.

2 cups short-grain rice or 2 cups sushi rice (NOT long-grained!!!!)
2 1/4 cups water
4 tablespoons sushi vinegar
1/3 cup rice vinegar (or white vinegar)
2 tablespoons sugar
1 teaspoon salt

Steps:

  • Bring water to a boil.
  • Pour in rice and boil for one minute, uncovered.
  • Cover and reduce heat to simmer.
  • Simmer for 20 minutes.
  • Let sit for 10 minutes, uncovered.
  • Put into large non-metal bowl and cut in sushi vinegar with a wooden spatula.
  • Let the rice cool further- one method is to spread the rice out on aluminum foil on a cookie sheet to cool.
  • Use to roll your sushi!

Sushi rice is the heart of sushi and the vinegar should add a tartness to the rice and give a nod to the humble beginnings of sushi before it became what we know it as today. This is a simple, straightforward recipe for basic sushi vinegar and sushi rice. There are countless variations with differing amounts of salt and sugar and other additions which flavor the seasoned vinegar chefs call sushi-su. Different vinegars affect the flavor of the finished sushi and vinegar recipes vary by region. This one contains a multi-purpose version for sushi-su that can be used as a base for pickling brine or salad dressing as well.

1/2 cup rice vinegar (4% acidity)
2 tablespoons plus 1 1/2 teaspoons granulated sugar
Kosher salt
1 gram dashi kombu (about a 1-inch square), optional
1 3/4 cups uncooked white short-grain or medium-grain rice

Steps:

  • For the seasoned vinegar: Heat the vinegar in a small saucepan over medium-low heat until just steaming (it will be about 100 degrees F). Do not boil the vinegar. Remove from the heat.
  • Add the sugar and 2 teaspoons salt and whisk until dissolved. Add the dashi kombu if using.
  • For the rice: Rinse the rice in a large bowl under cold running water until the water runs clear, about 5 minutes. While rinsing, gently agitate the rice with your hands to wash off extra starch. Drain the rice in a fine-mesh colander.
  • If using a rice cooker, set to the "white rice" or "sushi rice" setting; do not use the "quick cook" setting. Add the rinsed and drained rice and 1 1/3 cups of water to the cooker, gently move from side to side to evenly settle the rice and press start. If using the stove method: Add the rinsed and drained rice and 1 1/3 cups of water to a medium pot. Gently move the pot from side to side to evenly settle the rice. Put a piece of aluminum foil over the top of the pot before placing the lid on to create a tight seal. Bring to a boil over high heat (it is best to lower the heat just before it boils, when it begins to steam).
  • Lower the heat to low and steam the rice for 25 minutes; do not open the lid. Remove the rice from the heat and let sit covered for 10 minutes more.
  • Removed the dashi kombu from the seasoned vinegar if using. Transfer the cooked rice to a large bowl and immediately sprinkle the vinegar mixture evenly over the hot rice (see Cook's Note). Using a rice paddle or spatula, gently cut the vinegar mixture into the rice and alternately fold the rice so vinegar doesn't pool on the bottom of the bowl. Make sure the vinegar is evenly distributed throughout the rice.
  • Spread the rice in a baking dish and let sit until it is cool enough to handle and sticks together in a ball, 5 to 10 minutes. Use the rice within 2 hours or refrigerate in an airtight container for up to 1 day. You can use the rice at room temperature or gently reheat it using the "warm" function on a rice cooker.

Use it is a backdrop for your own home-rolled sushi, or pair it, as the article suggests, with various kinds of sliced fish and vegetables, pickled ginger and wasabi for a chirashi sushi bowl.

2 tablespoons rice vinegar

Steps:

  • Place the rice into a mixing bowl and cover with cool water. Swirl the rice in the water, pour off and repeat 2 to 3 times or until the water is clear.
  • Place the rice and 2 cups of water into a medium saucepan and place over high heat. Bring to a boil, uncovered. Once it begins to boil, reduce the heat to the lowest setting and cover. Cook for 15 minutes. Remove from the heat and let stand, covered, for 10 minutes.
  • Combine the rice vinegar, sugar and salt in a small bowl and heat in the microwave on high for 30 to 45 seconds. Transfer the rice into a large wooden or glass mixing bowl and add the vinegar mixture. Fold thoroughly to combine and coat each grain of rice with the mixture. Allow to cool to room temperature before using to make sushi or sashimi.

sushi rice seasoning, to taste (optional)

Steps:

  • The most important thing to get right when cooking sushi rice is the ratio of rice to water. It's better to use a volume measure rather than weighing. Use a cook's 250ml measuring cup if you have one, or a short glass, teacup or small mug. Once you've made one batch, you'll know how much cooked rice that measure makes - it should be about 2½ cups.
  • Measure out 1 cup rice into a saucepan, rinse the rice, swirling it around the pan, then drain off the water. Try not to lose any of the rice. Add 1½ cups water (about 375ml).
  • Bring the rice to a simmer quickly, put on a tight-fitting lid and reduce the heat to low. Cook for 13 mins - don't take the lid off.
  • Check a couple of grains at the top - the rice should be just about cooked and the water evaporated. If not, continue to cook and check at 2 min intervals, each brand of rice will differ. Turn the heat off and leave the rice to stand with the lid on for 10 mins so all the moisture is absorbed. Add sushi rice seasoning, if you like, and serve.

8 fresh prawns/shrimps ((medium size, note 2))
8 toothpicks
4 Simmered Shiitake Mushrooms (, thinly sliced (note 3))
2 large eggs worth of Kinshi Tamago ((shredded egg crepe, note 4))
6 slices of pickled lotus roots ((note 7), cut into quarters (pie shape))
½ pack Japanese grilled eel ((note 5))
50g/1.8oz sashimi salmon (, finely diced (note 6))
40g/1.4oz snow peas

Steps:

  • Remove heads and veins from the prawns.
  • Hold prawn horizontally with the tail on the left (for right hander) and the belly facing down.
  • Starting from the head end, put through a toothpick along the back between the shell and the flesh.
  • When the toothpick reaches half way, point the tip of the toothpick downwards and push it further towards the tail so that the toothpick cuts through the flesh. This will prevent the prawn from curling when cooked.
  • Repeat for the remaining prawns.
  • Bring a small saucepan with water and a tablespoon of vinegar to a boil. Add the prawns and cook for a couple of minutes.
  • Drain, remove the toothpicks, let them cool and remove shells.
  • Butterfly the prawns by cutting the belly side from the head end to the tail, leaving the dorsal side of the flesh and skin intact.
  • Cut the butterflied prawns, perpendicular to the butterfly cut, into 3 similar size pieces (note 8).
  • Cut the grilled eel perpendicular to the backbone, to 2cm/¾" wide pieces.
  • Cut each piece in half crosswise to make each piece almost square.
  • Break the stem end of snow pea gently and pull the tip towards the other end. The tough string that runs along the side comes off.
  • Pinch the other end, trim and pull the other side of the tough string (if you can) towards the stem end.
  • Place the snow peas in a microwave safe bowl with a small amount of water, sprinkle tiny amount of salt and cover with cling wrap. Cook for 1 minute.
  • Rinse under cold water to quickly cool them down. Pat dry with a paper towel.
  • Cut each snow pea pod diagonally into two pieces. If the pod is very large, cut it into three pieces diagonally so that you will have two ends and one diamond-shape piece.,
  • Spread the sushi rice thinly in a large shallow plate.
  • Scatter simmered shiitake mushrooms over the rice.
  • Scatter kinshi tamago over so that the rice and mushrooms are mostly covered.
  • Scatter the lotus root pieces over the kinshi tamago.
  • Place the prawn pieces with the red side up, randomly but evenly spaced.
  • Place the eel pieces with the skin side down, randomly but evenly spaced.
  • Make small balls with diced salmon and place them where the large patch of yellow is.
  • Place snow peas randomly but evenly spaced.

Although this recipe can be made in advance, keep in mind you only have a few hours to use it. Don't be put off by the 1½ hours total time needed to complete this version of Sushi Rice. Most of it is hands-off time. For your patience, you will be rewarded with perfectly flavored rice that spreads easily.

2 1/2 cup (500 g) short grain rice
2 1/2 cup (625 ml) water minus 3 tablespoons
3/4 cup (185 ml) Sushi Rice Dressing (see below)

  • Cover the rice with cool water in a medium bowl. Gently swish the rice in a circular motion with your hand taking care not to break the grains apart. Pour the water off and repeat 3 times.
  • Place the rice in a fine mesh strainer and rinse it with cool water. The run off water should begin to look clear. Allow the rice to drain in the strainer for 10 minutes.
  • Place the rice and measured water in a rice cooker. Once the rice cooker is started, cook for exactly 40 minutes. Most likely the cooker will indicate that the rice is done before 40 minutes have elapsed, but be patient. Do not lift the lid or stop the process before the time is up.
  • While the rice cooks, place a wooden spoon or rice paddle in a shallow bowl of water to soak. This will prevent the cooked rice from sticking to the paddle while tossing with the Sushi Rice Dressing.
  • Dump the steamed rice onto a large, flat cutting board. With the soaked wooden spoon or paddle, gently "cut" the rice into pieces like a pie. Pour ¼ cup (65 ml) of the Sushi Rice Dressing over the rice and toss well. Continue adding the Sushi Rice Dressing in ¼ cup (65 ml) intervals to the rice, tossing well after each addition. Spread the rice into a thin layer and let it cool for 10 minutes. Gently flip the rice over with the soaked wooden spoon or paddle and let it cool for 5 minutes.
  • Place the rice in a large non-metal bowl or container and cover with a damp, lint-free dishcloth until ready for use. Use the rice within 4 hours.
  • Mix together rice vinegar, turbinado sugar, and sea salt in a small non-metal bowl. Whisk it Vigorously for about 2 minutes or until most of the turbinado sugar and sea salt has dissolved. Set it aside until ready for use. If doubling the batch, store remainders tightly covered in a refrigerator for up to 6 weeks. Allow mixture to reach room temperature before use.

  • Make the dressing - in a mason jar with a lid, add miso and warm water. Mix with a spoon until miso dissolves. Add remaining ingredients. Secure lid tightly on the jar and shake well to combine.
  • To assemble the salad, to make 4 servings of salad: combine greens, cooked rice, edamame, chopped cucumber, radish, and carrots in a large bowl. Toss. Roll nori sheets into a long cigar shape and using kitchen sheers, cut into thin strips over the salad. Add about 2 tablespoons of dressing per serving (about 8 tablespoons for 4 servings) and toss so vegetables and greens are well coated. Divide into 4 serving bowls and top each bowl with pickled ginger and avocado. Serve with more dressing on the side.
