SWEDISH APPLE PIE
I won 1st place in an apple bake-off contest with this recipe. It is the easiest and best apple pie I have ever tasted. It has no crust, believe me, it doesn't need one. I always use Granny Smith apples because they are the best apples for pies. Enjoy!!!!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan with margarine.
- Fill 2/3 of the pan with sliced apples. Sprinkle with cinnamon and 1 teaspoon sugar.
- In a medium bowl, mix 1 cup sugar with the melted margarine. Stir in pecans, flour, egg and salt. Mix well. Spread mixture over the apples.
- Bake in preheated oven for 65 minutes, or until golden brown.

- Preheat oven to 350.
- Fill pie pan 3/4 full with apples.
- Mix 1/4 cup sugar and 3 tsp cinnamon.
- Sprinkle over apples.
- In saucepan, melt butter and remove from heat.
- Add remaining ingredients (including the 1 cup of sugar remaining).
- Pour evenly over the apples in pan.
- Bake 45 minutes.

- Toss apples with 1 tablespoon of sugar, and pour them into a pie plate. Thoroughly mix together 1 cup of sugar with the flour, cinnamon, butter, and egg. Spread this evenly over the top of the pie.
- Bake in preheated oven until the apples have cooked and the topping is golden brown, about 40 to 45 minutes.

- In a large bowl, combine the sugar, flours, baking powder, salt and cinnamon. In a small bowl, whisk egg and vanilla. Stir into dry ingredients just until moistened. SWEDISH APPLE PUDDING RECIPE

- Preheat oven to 350. Cream together thoroughly the butter, sugars and egg. Mix in sour cream. Sift in dry ingredients and stir in apples. Spread in 2 square pans or 1 9x13 pan. Top with nuts, if using. Bake for 35-40 min. Let cool; top with warm caramel sauce (recipe follows). Caramel Sauce 1/2 c. butter 1/2 c. cream or evaporated milk 1 c. brown sugar 1 t. vanilla Cook butter, cream and brown sugar until boils and thickens (may take up to 20 minutes, I cooked to soft ball stage on candy thermometer), stirring occasionally. Remove from heat and stir in vanilla. Pour warm sauce over cake(s). *Note: Cake is good with just white sugar and not brown, to make it "healthier." If both sugars are used it is a more pudding like consistency...the one I sent to Ziggity had only white sugar and I left the brown out.
SWEDISH APPLE CAKE
This is a super easy, super tasty recipe that my mom used to make all of the time when I was a kid. This is a wonderful dessert (or even breakfast) in the fall--though it is more like a cobbler then a cake (the more apples you use, the more cobbler-like)! Also, I'm not sure that it really is a Swedish recipe as it was shared by a Greek neighbor, but it is still great! Update: I realize that it seems strange, but this recipe really doesn't need extra leavening--I have double-checked a number of times as it seems like it should have some! Though I don't think it would hurt to add some... :-)

- Preheat oven to 350°F.
- Mix apple slices with lemon juice.
- Fill a greased 2-quart casserole (or 8 inch square Pyrex dish) with apple slices.
- Sprinkle apples with 1 Tbs sugar and ground cinnamon.
- Mix together melted butter, sugar, flour, egg, and nuts to form a doughy batter.
- Scrape batter on top of apples and smooth out.
- Bake 45 minutes to 1 hour or until top is golden.

DANISH APPLE PUDDING
An economical dessert to make, using up applesauce and stale bread crumbs. A Danish version of the trifle, and my version of the Danish original.

Steps:
- Whip cream, 2 tbsp icing sugar and vanilla extract until soft peaks form (approximately 3 minutes - but it depends on the cream).
- Place butter in a skillet and melt over medium heat. Add brown sugar, bread crumbs, and cinnamon. Mix well and cook, stirring constantly, to toast the crumbs, 3-5 minutes. Let cool completely (you may need to break up some of the crumbs if they've clumped together - this is easily down in the processor). Set aside 1 tbsp of crumb mixture.
- Spread 1 cup of crumbs in a large bowl. Mix the lemon juice into the applesauce. Spread 1 cup of applesauce over crumbs. Next 1/2 of the whipped cream; then the last of the crumbs. Finally, another cup of applesauce and the balance of the whipped cream. Sprinkle with the toasted almonds and reserved bread crumbs. Chill for at least 3 hours.
- Serve spooned into sherbet glasses or sauce dishes.

DANISH APPLE PUDDING
A flavoursome Danish apple pudding with hazelnuts, honey and lemon. This dessert can be made well ahead of serving time as it is served chilled. Hazelnuts although high in fat contain mostly monosaturated fat which helps to lower levels of blood cholesterol in the body. I found this recipe on an International Masters '1001 recipes for pan or wok' card.

- Put the breadcrumbs and demerara sugar in a heavy-based non-stick pan and cook gently for 3-4 minutes, stirring constantly, until dark golden; transfer to a bowl, stir in the hazelnuts and set aside.
- Peel, core and slice the apples, grate the lemon rind and juice the lemon.
- Add the apples, honey, lemon juice and rind to a pan and cook gently for 10 minutes, breaking up the apples with a wooden spoon, until they are soft and pulpy.
- Using a wooden spoon, beat the apples into a thick purée and set aside to cool.
- Whik the caster sugar and egg white until stiff and fold into the cooled apple purée.
- Spoon half the apple mixture into 4 glass bowls, top with the breadcrumb mixture, and repeat the layers, finishing with a layer of breadcrumbs and nuts.
- Serve chilled.
- For variation: fold 150ml (5 fluid ounces) of cream and a tablespoon of brandy - or a liqueur of your choice - into the apple mixture.

- Combine flour, sugar and baking powder in a mixing bowl.
- Cut in butter or mrgarine with a pastry cutter until like cornmeal; set aside.
- Grease n 8x8" glass pan and slice in 6 (or less) apples.
- Spread flour mixture evenly over fruit.
- Pour water evenly over all and do not stir.
- Bake at 375°F for 1 hour, or until crust is browned.
- Serves 9.
- This recipe can be adapted for diabetics by replacing the sugar with artificial sweetener (i. e. Splenda).
- Note: For a 9x13" pan, make 1 1/2 times the recipe.
- Serves 12-15.
- Instead of apples, use pears, peaches, raspberries or blackberries.
- Serve with milk, cream, or ice cream and enjoy.
DANISH APPLESAUCE BREAD CRUMB PUDDING
Steps:
- Preheat oven to 325°F.
- In a large heavy skillet melt butter over moderate heat and stir in bread crumbs. Cook bread crumbs, stirring constantly and breaking up lumps, until golden, about 5 minutes.
- In a 1 1/2-quart soufflé dish layer 1 cup crumbs, 2 cups applesauce, and 1/2 cup preserves and repeat. Sprinkle remaining 1/2 cup crumbs on top and bake pudding in middle of oven 25 minutes, or until top is golden brown. Pudding may be made 1 day in advance and kept covered and chilled. Reheat pudding in a 325°F. oven before serving. Garnish pudding with whipped cream and additional preserves.
- Serve pudding warm with whipped cream.
- To make chunky applesauce:
- Peel and core apples and cut into 3/4-inch pieces. In a large heavy saucepan bring water, apples, and sugar to a boil and simmer, stirring occasionally, until apples are soft and starting to fall apart, about 25 minutes. Applesauce may be made 3 days in advance and kept covered and chilled. Makes about 5 cups.
