Warm up on a cool night with this hearty stew recipe from chef Marcus Samuelsson's "New American Table" cookbook.

1 cup peeled 1/4-inch-thick slices Jerusalem artichokes (from about 2 Jerusalem artichokes)
1 cup peeled 1/4-inch cubes Yukon Gold potatoes (from 1 medium potato)
2 pounds boneless leg of lamb, cut into 1-inch pieces
2 yellow onions, thinly sliced
2 carrots, sliced 1/4-inch-thick
2 bay leaves
1/2 cup white wine vinegar
1/2 teaspoon white peppercorns
1 tablespoon yellow mustard seeds
1 teaspoon whole coriander
1 tablespoon honey
2 tablespoons katjap manis
1 1/2 teaspoons Dijon mustard
1/2 cup heavy cream
1/4 cup chopped fresh dill
Coarse salt

Steps:

  • Place Jerusalem artichokes and potatoes in a large pot of salted water; bring to a boil over medium-high heat. Reduce heat to low and simmer until tender, about 10 minutes. Drain and set aside.
  • Place lamb in a large pot and cover with water; bring to a boil over medium-high heat. Reduce heat to low and simmer for 2 minutes. Remove from heat and drain.
  • Transfer lamb to a large pot along with onions, carrots, bay leaves, vinegar, peppercorns, mustard seeds, coriander, and 16 cups water. Bring to a simmer over medium heat and cook for 1 1/2 hours, skimming foam from the surface as necessary.
  • Stir in reserved Jerusalem artichokes and potatoes, honey, ketjap manis, mustard, and cream; bring to a boil. Reduce heat and simmer for 10 minutes. Remove bay leaves and discard. Stir in dill and season with salt.

There are many versions of Swedish meatballs, and this is the way we like ours. They're juicy, tender, and flavorful in a creamy and rich sauce. We enjoy them over mashed potatoes or buttered noodles and served with lingonberry sauce or cranberry sauce.

1 cup fresh bread crumbs
¾ cup milk
1 pound lean ground beef
½ pound lean ground pork
½ cup finely chopped onion
½ cup finely chopped fresh parsley
¼ cup finely chopped celery
1 large egg, lightly beaten
1 teaspoon minced garlic
1 teaspoon white sugar
1 teaspoon salt
½ teaspoon freshly ground black pepper
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups beef broth
1 tablespoon Worcestershire sauce
1 cup reduced-fat sour cream
3 tablespoons chopped fresh dill
¼ teaspoon lemon zest
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and place a baking rack on top. Spray the baking rack with cooking spray.
  • Combine bread crumbs and milk in a large bowl. Allow bread crumbs to soak up the milk for about 10 minutes. Mix in ground beef, ground pork, onion, parsley, celery, egg, garlic, sugar, salt, and pepper until combined; mixture will be fairly wet. Shape into 36 meatballs with a 1-tablespoon cookie scoop. Place meatballs on the prepared baking rack.
  • Bake in the preheated oven until an instant-read thermometer inserted into the center of a meatball reads 160 degrees F (71 degrees C), about 18 minutes.
  • While the meatballs are baking, melt butter for sauce in a large saucepan over medium-low heat. Whisk in flour and cook, stirring constantly, for 2 minutes. Gradually whisk in beef broth and Worcestershire sauce until smooth. Cook, stirring often, until slightly thickened, about 12 minutes.
  • Remove meatballs from the oven and add to the sauce mixture. Simmer for 3 minutes. Stir in sour cream, dill, and lemon zest. Season with salt and pepper and serve immediately.

Recipe for Swedish Lamb Stew with Pears Potatoes & Green Beans from "The Swedish Princesses Cook Book," aka "Prinsessornas Kokbok" published 1936

4 lbs lamb shoulder meat cut into chunks
3 tbsp olive oil
1 yellow onion
1 clove garlic, minced
4 pears, peeled, cored and halved
4 medium potatoes, peeled and quartered
2/3 lb string beans, trimmed
6 cups water
2 tsp salt
1/2 tsp pepper
1 sprig thyme
1 sprig parsley
1 bay leaf

Steps:

  • Preheat oven to 325 degrees. Season the meat with salt and pepper.
  • In a dutch oven, brown the lamb pieces in olive oil till they form a dark crust. Remove and set aside.
  • In the same pan, brown the onions and garlic. Be sure to scrape up any brown bits from the bottom of the pan.
  • Once the onions and garlic and tender and have some color, return the lamb to the pan.
  • Make an herb bouquet by tying the thyme, parsley and bay leaf together with cooking twine.
  • Add 2 tsp salt, 1/2 tsp pepper, herb bouquet and enough water to cover. I used 6 cups of water, but this may vary slightly based on the size of your pan.
  • Cover and cook in the preheated oven for 1 hour. Remove from oven and add the pears, potatoes and string beans to the pan.
  • Cover and cook for an additional hour, or longer if needed, till lamb is very tender and pears, potatoes and beans are cooked through and tender.Remove the meat and lay in a mound in the center of a serving dish. Surround with the vegetables and pears.
  • Remove the herb bundle from the sauce. The book suggests thickening the sauce into gravy by ricing one of the potatoes and adding it to the cooking liquid. I tried this, but it was still a bit on the thin side, so instead I added 1 tbsp of corn starch mixed with a little cold water (corn starch wasn't commonly used as a thickener till after this cookbook was published, so this was a slight modernization). I simmered it in the remaining sauce till it thickened into a nice gravy. You can add more cornstarch mixed with water to thicken it further, if desired. Season with salt and pepper to taste (I used lots of pepper!).
  • Serve the stew with hot gravy to pour over each serving. Serve.

2 1/2 lb boneless lef of lamb, cut into 1-inch cubes
4 c water
1 large onion, chopped
1 large carrot, chopped
1 large fresh dill bunch
8 white peppercorns
2 tsp salt
2 Tbsp butter
2 Tbsp all purpose flour
1 Tbsp white wine vinegar
2 tsp sugar
1/4 c chopped fresh dill
2 Tbsp whipping cream
salt, to taste
freshly ground black pepper, to taste

Steps:

  • 1. Place lamb, 4 cups water, onion, carrot, bunch of dill, peppercorns, and salt in heavy large pot. Bring to boil over medium-high heat, skimming off foam. Reduce heat to medium-low, cover and simmer until meat is tender, stirring occasionally, about 1 1/2 hours.
  • 2. Strain broth into medium saucepan. Boil until reduced to 2 1/3 cups, about 8 minutes. Meanwhile, remove lamb from vegetables; discard vegetables.
  • 3. Melt butter in medium saucepan over medium heat. Add flour and whisk 1 minute. Whisk in 2 1/3 cups reduced broth. Cook until sauce thickens and boils, whisking occasionally, about 6 minutes.
  • 4. Whisk in white wine vinegar, sugar and 1/4 cup chopped fresh dill. Simmer 3 minutes to blend flavors. Stir in cream and lamb and simmer until heated through, about 2 minutes. Season to taste with salt and pepper. Transfer to serving bowl.

1/2 md Celery root, diced
2 lb Lamb, cubed
1/2 oz Fresh dill
2 ts Sugar
3 tb Dill, finely chopped
1 tb White vinegar
1 ts Salt
1 md Leek, thinly sliced
2 md Carrots, diced
2 c Lamb stock
1/2 c Heavy cream
2 lg Egg yolks
8 White peppercorns
2 tb Butter

Steps:

  • Place meat, 1 teaspoon salt, and peppercorns into a casserole dish. Add enough water to cover and bring to a boil. Skim off. Add vegetables and 1/2 ounce dill. Simmer for 30 minutes or until tender. Strain and boil stock down. Melt butter in a sauce pan. Stir in flour until smooth. Gradually add stock and bring to a boil. Boil three to five minutes. Add lemon juice, vinegar and sugar. In a separate pan, cook cream and egg yolks over low heat until thickened (do not boil). Remove from heat. Add salt, pepper and 3 tablespoons dill.
